Sour Cream Cheesecake Cupcakes

I was cooking with a friend one day when we had a hankering for cheesecake. The only problem was that my favorite cheesecake recipe took all night to set. To fix the time problem, we came up with the genius idea of baking them in cupcake form so that they would cool faster. It turned out fabulously and the cupcakes make perfect individual servings to serve at parties or after dinner. -- posted by sofie #2

Recipe from St. Amant Cookbook. Submitted by the then Premier of Manitoba, Gary Filmon.
This is a delicious dessert, and very pretty with a layer of red. I'm not sure on the size of the box of frozen raspberries I use, so I just put down frozen raspberries. The jello is the small box. -- posted by cookalot #2

Mmmm Smooth & Creamy Coconut Cheesecake

Ok, fine, I am a cheesecake snob. The rich, dense, smooth & unctuous cheesecakes (no flour please) with shortbread crusts are my favorites (no greasy graham cracker). This cake developed for Easter dinner - I yearned for coconut but did not want to disrupt the smoooth texture of cheesecake - it's "sine qua non". Family insisted I post ASAP to keep recipe intact (even though cake is gone - before it could fully develop its flavor!). Recipe is truly easy - I believe this is much easier than flour-based cakes. Hardest thing is making the crust (which isn't that tough)!
Please plan to make the day before serving to allow the cake to firm up & develop its flavor (best after 2 days but it won't last that long!) -- posted by Buster's friend

Kahlua White Russian Cheesecake

This recipe is courtesy of my boyfriend searching the internet for new desserts. The desserts he always wants me to fix for him. What he doesn't know is that I substituted Splenda for sugar & also used fat free sour cream & fat free cream cheese. He couldn't tell the difference. He needs to lose a few pounds around the middle, so what he doesn't know won't hurt him. The ingredients below are for the Cheesecake, the Caramel Nut Crust & the Kahlua Cherry Sauce. I hope you enjoy this cheesecake, my boyfriend Marvin says it is a keeper. There are alot of steps in this recipe but the end result is definitely worth every step. -- posted by litldarlin

Cinnamon and Coffee Cheesecake

From *A Gourmet Book of Tea and Coffee* by Lesley Mackley, this dessert is so easy-to-fix & so good that it almost has to be made & tasted to be believed. Cheesecakes are rich & I love them, but I find it annoying that they are usually too sweet, too heavy & too large. This cheesecake is less sweet, lighter in texture & more appropriately sized as it is baked in an 8-in rd spring-form cake tin. I modified the butter & sugar amts slightly & gave both US & metric measurements as the recipe did. (Time does not include cooling or chilling under refrigeration time) *Enjoy* ! -- posted by twissis

Grand Marnier Blueberry Cheesecake Bars

This is a wonderful dessert or afternoon treat for a hot summer day. It is light and reasonably healthy! The original recipe was published in Better Homes and Garden and I adapted it for my family by substituting several ingredients and adding more blueberries and Grand Marnier. The crust is really yummy with the coconut and pecans. This dessert presents very pretty on the plate especially with a sprig of mint! -- posted by luv2cooklouisiana

Mini Margarita Cheesecakes

These are the perfect appetizer for any Cinco de Mayo celebration. They're not difficult to make, but can be a bit time-consuming (about 45 minutes) to fill all the little scoop-style tortilla chips. But I think they're worth it. FOR A NON-ALCOHOL VERSION -- You can easily omit the alcohol, and these mini margarita cheesecake appetizers will still taste scrumptuous. ABOUT TOSTITO SCOOPS - These are Tostito's brand Scoops, which are "cup" shaped corn tortilla chips. A 10-ounce bag should be plenty for one batch of these mini cheesecakes (you won't use all of the scoops, but you need the whole bag so you can be assured of getting enough that are not broken). You shouldn't have any problem finding Tostito's Scoops in the chips/snacks aisle of most grocery stores. -- posted by NorthwestGal

Eti's Cheesecake (Practically No-Bake)

I got this recipe from Eti, who works in the HR department in my office, hence the name, Eti's Cheesecake. When she brought the recipe in for me to copy, it said Ayelet's Cheesecake on the paper, so she probably got it from Ayelet. I wonder what it says on Ayelet's copy. Eti brought this cake in for her birthday, and I fell in love with it. The cheese filling itself is no-bake, you just have to bake the crust, and also the reserved part of the crust to get the crumbs that you sprinkle on top. The cake is divine. I wish I had made it up..... -- posted by Mirj

There's no baking or complicated stuff so you can literally put this on the table within a few minutes. I top mine with strawberry topping but you can use any flavor you like. It can be made with sugar, splenda or even stevia. You can used regular or reduced fat cream cheese. I use reduced and splenda. It will actually serve up to 4 adults if you really want to share it. -- posted by Realtor by day, Chef by night

Lemon-Blueberry Cheesecake Parfaits

Pastry Chef Maggie Leung's reimagined cheesecake is super-versatile: It's three components-the creamy, tangy cheesecake custard, the crunchy cornmeal shortbread and the fresh blueberry compote - are all fantastic together, but each can be used in a lots of other ways. My best-friend Judy decided she wanted to entertain outside this summer and she gave me the tedious (NOT!!) task of looking for a WOW dessert but understated and we both agree that this is the one. This is not the only dessert she is serving so we want to choose with much thought to her other desserts, as well. Food&Wine Magazine, August 2009 edition.Just between chilling and cooling time it takes about 6 hrs, that is if it is all done in one day - the shortbread can be made up to two days ahead of time & the assembled parfaits can be refrigerated for up to 1 day. ;) -- posted by Manami

I would encourage you to even make your own cheesecake with my flavorings and then use that as your cheesecake base.
Strawberry Cheesecake Bites

Not your normal cheesecake bites with cream cheese and graham cracker crust. This is simple, sweet, and delicious! I use fresh strawberries and stuff them with a cream cheese and marshmallow puff mixture and top it off with crushed graham crackers. You will not disappoint! -- posted by Phammy
