Shaelese's Mock Hollandaise Sauce

This is one of my sister Shaelese's favorite foods. :-) We all love it over fresh steamed broccoli. It's different from most mock hollandaise sauces because it is made from cream cheese. It makes plain steamed veggies extra special. This has become a regular favorite at all holidays and special occasions in our family. Creamy goodness at its best! -- posted by akgrown

Fantastic Taco Dip

I always loved my mom's taco dip salad, you know, with the base "dip", and then all the toppings on it, that is a mess to eat and a pain in the butt to make. So I made up this taco dip that's quick and easy and tastes AWESOME. There are endless add-ins that you could do, black olives, hamburger (though this is a cold dip, so I don't know), lettuce (tends to get soggy), etc, etc. Let me know what you think... my friends LOVE this dip and ask for it when we have potlucks and stuff. Most of the prep time is chilling it. -- posted by SmileyMT19

Cheesy Tomato and Cheese Sauce

This sauce is so good! A definite break from the ordinary. I like to experiment in the kitchen and this is one experiment that definitely went right! Plus, it's a very versatil kind of base-sauce, so you can add different things to your liking. My next time making this, I'm definitely going to try adding in mushrooms.
Cheesy Garlic Sauce for Vegetables

After looking for a cheese sauce and coming up short, I created this fantastic recipe that the whole family LOVED! You can use any kind of cheese you like, but I prefer an old/sharp cheddar. The cayenne pepper only adds flavour, not heat, so if you want it hot you'll have to increase it. -- posted by half_a_penny

Everything " Sauce " for Baked Potatoes

I got so tired of crowding the table with toppings for baked potatoes that I decided to premix them, using our favorites. The "fat-ness" of the sour cream, butter/margarine & cheese can vary according to my whim. Use herbed sour cream dips to suit your fancy. This is my one-handed response to "please pass me the sour cream, butter, cheese, chives and bacon bits" while I continue eating with the other hand. ;-) -- posted by SusieQusie

Cilantro-Lemon Pesto

Cherry Cheese Sauce

This recipe: I try to combine things to make new recipes, this was a mix of a cherry coke BBQ glaze and a riccotta mousse or something... at first i thought it was odd, and the color is a bit offputting but i must say a little on a cold cut sandwitch or whatever else you can think of gives it an interesting sweet & zesty flavor -- posted by AxMan

Queso

My cousin and I created this recipe by accident when we wanted queso but did not have any of the "traditional" Velveeta. We went rummaging and this ended up being my favorite queso ever, and I have not made Velveeta based queso since. It is important to use American cheese to get the right flavor.
Notes:
1. Although I assume black pepper can be used instead of white, white pepper does taste different.
2. You should be able to find Goya products in the Mexican section of your grocery store.
3. If you do not like it very hot, use the mild salsa and use less pepper. -- posted by MistyCat82

Creamy Walnut Pesto Sauce

This is a creamy Italian-style sauce that I regularly serve warm, over hot noodles or cold, spread on crackers. The combination of the sour yogurt, tangy garlic and bitter walnuts makes for a nice, balanced sauce.

This recipe works best with a yogurt that contains 5% milk fat or higher. Add enough so that the sauce is a bit wetter than you'd like because the dry ingredients will absorb a fair amount of liquid.

You don't need to use your best extra virgin olive oil because the food processor will ruin its flavour, pure grade olive oil is fine. -- posted by Chef #465252

Neapolitan Meat Sauce - Ragu Napoletano Alla Anna Galasso

From: Ciao Italia Pronto by Mary Ann Esposito ---------- "A typical Neapolitan ragu is a meat sauce made with beef or pork or a combination of both that is cooked slowly with tomatoes. This was the sauce that simmered for hours on the back burner in a large pot on Sunday morning while the family went to mass. Upon returning home, the smell of it permeated the house, and we could hardly wait to have that plate of macaroni mixed with a sauce that was so flavorful and sweet tasting that we wiped our plates clean with a slice of bread to mop up an left behind driblets.

This is a great do-ahead sauce. It can be made 4-5 days ahead, and it can also be frozen for months. This is my grandmother Anna Galasso's recipe, the one she carried with her in her head all the way from Avellino, Italy to her new home in America".

Saving Time, use a food processor to mince and chop the vegetables. To save time, make this sauce on the weekend, and freeze some for future use. Use a food processor to mince and chop the vegetables. NOTE: The sauce (with the meat) can be frozen in batches for future use for lasagne, pasta dishes, with vegetables such as green beans, zucchini, and eggplant, and over pizza.----------For those of you that don't know Maryanne Esposito, let me introduce you to a marvelous cook, who cooks only "Authentic" Italian food, and it is incredible! I had the priviledge of meeting Maryanne at a woman's luncheon many years ago, and she has her own cooking show on Channel 11 in NH. She and her husband, who is a local doctor, live in the next town from where I used to live and work. -- posted by Linda's Busy Kitchen

Pesto Alfredo Sauce

Pesto or Alfredo? The summery perfection of basil in olive oil or creamy, cheesy, richness? How about both?

This simple recipe came about when I didn't have enough of either sauce to coat a big pan of pasta for a potluck dinner. Its a great change from the usual pasta in marinara and, while simple enough for a family meal, is special enough for guests. Its particularly good for potlucks because you KNOW that there are going to be 3-4 pans of pasta in assorted tomato sauces already. ;) -- posted by 3KillerBs

Deliciously Rich Mayo and Blue Cheese Sauce

This is a very quick, very versatile sauce or dressing, and it's absolutely great! If you don't mind a small taste of something really rich and really useful, this is for you. It can be a sauce for steamed veggies, a dressing for the hollows of pear halves as a starter, or cold as an over-the-top salad dressing! Also great to use as a pasta sauce. Because mayonnaises differ, and blue cheeses are not created the same, your sauce might taste slightly different from mine. For the photo's I used Hellmann's mayo, which is all I have at hand, but a slightly more tangy mayonnaise might be better. I used a local artisanal blue cheese, and a thick sour cream. Or use creme fraiche and add a squeeze of lemon. I used a teaspoon of smoked garlic paste which I need to use up, instead of fresh garlic. The sauce, covered, will last for days in the fridge. -- posted by Zurie

Alfredo Sauce

This is a simple to make Alfredo sauce, but it gets rave reviews. It pairs well with about anything you can imagine, and you'll be dissatisfied with restaurant or out of the can Alfredo sauces after you've learned to make this one. Feel free to substitute the butter or Parmesan for lower fat alternatives, but if you substitute the cream for a variety of milk, it will significantly alter the taste, and you will have to use a thickener such as cornstarch or flour. -- posted by SaffronMeSilly

Creamy Sherry and Cheese Sauce

Delicious with everything but usually we eat it stirred through pasta as a pasta sauce. Can also be drizzled over chicken or pork. It is really creamy and thick and the addition of the chopped onion, mushroom and pancetta makes it quite substantial and filling.
The amount of sherry is an estimation as we never really measure it out but it is approx 50g. You can add more or less as you like.

The cooking time is really quick but spend a little extra time on preparation to make sure the onion and mushrooms are really really finely chopped and sliced.

This will serve 2 as a pasta sauce but many more as just a sauce to drizzle over meat, up to 5-6 people. The serving sizes here are based on two portions only. -- posted by .x. Lauren .x.
