			<description>I love, love, love cheese!  Who doesn't?  I would imagine only someone allergic!  This is packed full of sharp cheddar cheese and has a rich flavor.  Not your creamy style mac &amp;amp; cheese found in the frozen food isle or dried pasta meals.  This is a baked mac &amp;amp; cheese that is very hearty.  I usually serve with ketchup on the side (I think that is a Pennsylvania thing....I have found that is up to your own taste preference).  I also serve with a vegetable on the side. 			<description>Here's a classic mac &amp;amp; cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

On his way, one of the wheels to the wagon hit a large rock in the road. Well, the wheel went a flyin! Just then, the McDaniel gang rode up, and in their traditional 'Robin Hood' ways, set out to fix the wheel, while Johnny fixed up a down-home campfire lunch. After this delicious meal, Yankee Doodle was so elated by Johnny's wonderful dish, he gave Johnny the wagon so he could travel with his recipes and cookware in a more formidable fashion. The only gift Johnny could reciprocate with was a beautiful injun feather he had found along his many trails. 			<description>Mac n&amp;quot; Cheese made different in that it uses Fontina and Marscarpone cheese. I have adapted this recipe which was loosley based on a recipe from Cooking Light.  Since I always have Marscarpone floating around, it was a given that I would try this recipe. The soft fontina problem can be solved easily by placing the fontina in the freezer for a half hour.  Fontina definately comes from the smelly cheese family .  Some options:  You can add more nutmeg and tabasco for more of a  kick...add some parmesan cheese for part of the other cheese....adding some ham.  I always seem to have whipping cream or half and half around...I would finish this up and top it with the 1% milk. (definately takes the recipe out of the &amp;quot;light&amp;quot; catagory!!) Marscarpone cheese too expensive?  Try Recipe #66077. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. I also didn't put the breadcrumbs and melted butter on top, and it was still heavenly.  I cooked my noodles only until slightly underdone so they wouldn't be overcooked but you decide how you like them.  If you use processed cheese (like Velveeta), the recipe says to omit the bread crumbs.
