Mexican Tortas De Milanesa

It is a Mexican steak sandwich which is nothing like you've had before. Don't let the long recipe scare you off, it's really easy--it just takes a lot of words to explain each step. This is an authentic meal my husband grew up on in Mexico. You won't find anything like it at Taco Bell, I promise. -- posted by ROBIN PENA

Vegetarian Torta Mexicana

These additively delicious, very popular, overstuffed, little sandwiches must be Central Mexico's best kept secret. I haven't found a torta stand north of the border.
Traditionally, tortas are made with teleras (flat bread rolls), or sometimes, bolillos (bobbin-shaped bread rolls) both made from the same French bread type dough. The only difference is the shape of the roll. French bread rolls are a good substitute, as are sourdough rolls. The idea is to use a crusty roll with a soft interior. In making the torta, one starts by cutting the roll horizontally, then removing some of the crumb to create a hollow for the filling. These sandwiches hold up well for several hours, without getting soggy, which makes them good for parties and picnics.
The inspiration for this recipe comes from the delicious tortas I've eaten in Mexico City, combined with some useful information in Diana Kennedy's book: "The Art of Mexican Cooking, Traditional Mexican Cooking for Aficionados". -- posted by lynnski / LA

Jicama Y Ensalada Anaranjada Picante (Spicy Oranges & Jicama

I love sweet and spicy combinations and this fruit salad is one of those great pairings. Salad should chill for about 2 hours before serving so plan ahead. -- posted by NcMysteryShopper

Classic Mole Poblano Sauce With Chicken

Found this on line (from The Whole Chile Pepper Book) for the World Tour 2006 "tweeked" Serving suggestion: This sauce is excellent with poultry; serve it over a turkey or chicken breast. It is also excellent as a sauce over shredded chicken or over turkey enchiladas. -- posted by ~Rita~
