A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Homer's Traditional Pico De Gallo

This is a tradional Pico de Gallo recipe that has been in my family for several generations. Many current recipes are variations of this simple one, and their taste is cluttered by garlic or other spices not usually included in the traditional recipe. This makes a great dip for tortilla chips, or in a layered bean dip. One can make great guacamole by smoothing out ripe avocadoes and adding this pico with a little more lime juice and salt to taste. I use a minimum of salt, so you may need to add more to suit your taste. -- posted by Homer and Sandi

Fat Free Watermelon-cranberry Agua Fresca

Aguas frescas are popular fresh-fruit drinks in Mexico.
Although water is a standard ingredient, this undiluted version is a thirst-quenching refresher whether accompanying spicy foods or sipped in the sun.

Chipotle Copycat Lime Rice Recipe

This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that I use for making burritos. But it really is good enough to have on it's own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice. -- posted by Allan Lee

Salpicon

The radishes add both flavor and an interesting texture to this salsa. Bitter orange juice is dificult to find outside of Yucatan. So, you can approximate the flavor profile by mixing 1 part orange juice with 2 parts grapefruit juice. As a variation to this recipe, you can add 1/4 cup diced tomato or avocado. Serve this salsa as an accompaniment to seafood, chicken, or pork dishes. -- posted by Chef Sean #2

Uchepos

These are simple tamale-like creations that require fresh, new summer corn with a starch content higher than most of the corn available in the U.S. The following recipe comes from the state of Michoacan where the local corn is high in starch and therefore, holds the simple corn mixture together in the corn husk just like a tamale, but without any other binding agents. I like these because there is no lard or fat added kind of like diet tamales.
This is a recipe I found online by Dianna Kennedy. It is exactly how I learned how to make them from my husband's aunt--90+ years old from Michoacan. -- posted by CunSwim

Sopaipillas

While I was visiting my friend in Arizona, she had me help her make Sopaipillas. I loved them! They're mexican, but sold in Arizona, New Mexico, Texas, and other states near Mexico. You can literally point to the mountains at the back of her house and say "There's Mexico!"

Golden fried puffs, usually served with butter or honey for dessert. You can also try them with cinnamon and sugar. -- posted by Giniaa

Fresh Salsa, Arizona Style

This is a recipe from my Aunt Janice who lived in Arizona during the winters years ago. It's fresh and zappy and my family eats jars of it when we make huge batches during the summer and even the winters!

NOTE: If you can't find fresh peppers or tomatoes, you can substitute canned. Just use as many canned peppers as you want. We use about 3-4 cans of diced canned tomatoes. In the summertime we freeze cilantro that we grow in our garden wrapped in a paper towel and use that in the winter instead of buying it pricey fresh.

Also if it's too spicy, you can always add more tomatoes or even throw in a can of kidney beans! -- posted by Chef #771374
