			<description>I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. 			<description>Love this recipe...helped me land my hubby! My new family requests this often. I found it in a cookbook published by the Hispanic Ministry of my Presbyterian church. I have added some touches to it and listed them as optional. This freezes exceptionally well and can be made as mild or spicy as suits your palate. The original called for corn tortillas but I found them to &amp;quot;wilt&amp;quot; and much prefer flour tortillas. Top with leftover cheese and some chives. The only thing that takes it 45 min. to make is allowing 30 for the boiling and de-boning of chicken. 			<description>This is a tradional Pico de Gallo recipe that has been in my family for several generations. Many current recipes are variations of this simple one, and their taste is cluttered by garlic or other spices not usually included in the traditional recipe. This makes a great dip for tortilla chips, or in a layered bean dip. One can make great guacamole by smoothing out ripe avocadoes and adding this pico with a little more lime juice and salt to taste. 			<description>Apples are grown in parts of Cohuila and there harvest is celebrated in an annual festival in Artega.  This is one of the popular dishes served at the festival.  Cajeta is a traditional thick caramel syrup or candy popular throughout Latin America by that name or as the related dulce de leche. Usually it is made with goat's milk, it can also made with cow's milk (and presented her that way). I have not tried this yet, but this comes from one of my favorite cookbooks and I just love baked apples and cajeta.  The cooking time listed is a bit of an exageration as you can prepare the apples and cajeta simultaneously. 			<description>These are simple tamale-like creations that require fresh, new summer corn with a starch content higher than most of the corn available in the U.S. The following recipe comes from the state of Michoacan where the local corn is high in starch and therefore, holds the simple corn mixture together in the corn husk just like a tamale, but without any other binding agents. I like these because there is no lard or fat added kind of like diet tamales.
