This is a sweet-hot, spicy salad but the dressing is cooling to the tongue while still being perky from the lime. An adventure for your palate!

Orange-Ginger Broiled Pork Tenderloin

Broiling the tenderloin makes the most tender, juicy meat; and you'll love the subtle orange-ginger flavor. If you want more flavor, you can increase the amounts of orange juice and ginger. I served this with a green salad, corn on the cob, and applesauce. This makes a great sandwich the next day with some honey-mustard dressing spread on it. Tip: My parents made this on the grill and it was outstanding!!! -- posted by KissKiss

Quinoa Beef Picadillo

From: "Whole Grains Every Day, Every Way" by Lorna Sass. "Picadillo, a zesty ground beef stew of Spanish orgin, was welcomed enthusiastically into the kitchens of many Caribbean and Latin American cooks during the Colonial period. Variations abound, but I favor the ones that achieve a balance of sweet and salty by including raisins and pimento-stuffed olives. Though picadillo is traditionally served over rice, by mixing high-protein quinoa right into the stew, you can go easy on the meat and still have a very satisfying meal." -- posted by Engrossed

Puerto Rican Cabbage Salad

Cooking Light magazine, Aug. 2007. This from Olga Fuste who wrote "Diabetic Cooking for Latinos" published by the ADA. This recipe goes well with rice and beans and fish tacos according to the blurb in the magazine. A serving size is 3/4 of a cup according to the recipe notes. If you use pre-shredded carrots and cabbage, this comes together in a snap. -- posted by Oolala

If you don't keep simple syrup on hand just use a 2 tsp. of sugar to muddle with your mint.If you don't have access to fresh berries, frozen will work as well.

Christmas Shrub -A Rum Spice Liqueur

I've had this recipe for years and it comes from "The Caribbean Pantry Cookbook" by Steven Raichlen.
Broccoli Potato Cheese Soup - Weight Watchers

This is a low-fat recipe I got out of one of my moms weight watchers cookbook and I've been making it for years. The DH loves it and it's great to make on cold days and fine for big portions. SPECIAL NOTE: This soup can easily be modified. Add more ham and cheese if you’d like, or add cubed chicken or Turkey instead of ham. If you add more veggies and need more water to boil them, use 2 bouillon cubes to every cup of water you add and 2 Tablespoons of Flour to every cup of milk to thicken it up. I serve the soup with Cheddar Cheese Popovers. -- posted by Miss Ambrosia

Absolute Best Chicken Soup

This is a family recipe I stumbled upon through marriage. It is a Latin-style chicken soup and it is the best I have tasted. Basically, my mother-in-law makes this soup with a few founding ingredients and then throws in whatevers available. Its always good, but I've narrowed it down for myself and you to the best ingredients to use.

This recipe is great for serving to a large amount of people.

*Note: You use a whole (8-piece cut) chicken if you want to serve 6-8, but if you are serving more than 6, for the purposes of the stock, use only split leg quarters.

The recipe is best when fresh ingredients are used, especially cilantro. Don't even bother with the recipe if you don't have fresh cilantro.

After the chicken is fully cooked, you can try to fish it out and separate the meat from the bones, but I don't usually bother with it. -- posted by Tabasco Saucy

Anasazi Bean Veggie Burgers

Chef Brad Fosseen serves these delicious, hearty burgers at his Spokane restaurants and they are one of the most popular dishes on the menu! The burger is great as is or you can add additional seasonings (such as chili powder or curry) in the 4th step.
When sauteing the burgers, start with a cold pan; it gives them a nice crust.
At the restaurant, the chef sautees the burger for 2-3 minutes, flips it, adds a cheese slice, and then finishes it in a 400-degree oven for a couple more minutes. These can also be baked. This recipe makes 4 very large burgers or 6 medium size burgers. -- posted by blucoat

Slow-Cooker Black Bean Soup

Cumin and fiery serrano chile infuse this simple soup as it cooks, and a dollop of sour cream provides a refreshing foil for the spicy flavors. For less heat, seed the chile first or use a milder pepper, such as jalapeno. You can also omit the chile altogether, if your prefer. You can soak the beans before you go to bed, then wake up and put everything together in the crockpot. You will have a hearty, satisfying soup that is low in calories and fat waiting for you when you come home from work. -- posted by JackieOhNo!

Doctor's Cave Bathing Club in Montego Bay is renowned both for a beach considered one of the best on Jamaica's North Coast and for waters fed by a network of underground rivers that reputedly have healing powers. Since 2001, the club's claims to fame have been bolstered by the Groovy Grouper, a spirited bar and restaurant located smack on its sands.
Grilled Caribbean Coconut Shrimp With Rum Marinade

Taken from chilicheesefries.net; posted for ZWT 5.
"This recipe is fantastic for any time you want to cook out with Caribbean inspired flavors such as rum, allspice, citrus, cinnamon, Scotch bonnet peppers and cilantro. While not quite jerk, the influence is definitely there. I love to serve these freakishly good tasting grilled shrimp over a bed of mashed sweet potatoes topped with fresh grilled pineapple slices that have been marinated in dark brown sugar.
Serve all this up with a few pitchers of mojitos and you may think you are on vacation or at least just wished you were. Pass the rum please." -- posted by alligirl

New World Spaghetti Squash

I concocted this on getting acquainted with the taste and texture of a roasted spaghetti squash (also known as a calabash squash). It's an alternative to the idea of treating the squash as a substitute for spaghetti noodles. The roasted squash really has slaw-like texture--soft yet crunchy. Spaghetti squash is an ancient New World food source in Central and South America, so I decided to try making something that combined an ancient native trio of ingredients: corn, beans, and squash. On sampling the roasted squash by itself, my first thought was "black beans," and my second was "spicy." Here's what I did, based on what I had in my kitchen this evening. I'm sure others can improve on it! -- posted by Epyllion

Caribbean Baked Pineapple

Grown only in the New World tropics, pineapples belong to the bromeliad family. Bromeliads are epiphytes, or air plants, which means they absorb water and nutrients from their environment through microscopic hairs at the base of their leaves.Their roots function only as an anchoring support. It takes 13 to 18 months for a pineapple to mature.
This is a great summer drink from Dale Degroff (The Essential Cocktail) that will go by the pitcher! This recipe is by the glass, though, for sipping on the patio. If you don't have all four rums, you can improvise by doubling up (I would recommend making sure to use dark rum and coconut rum, however). Angostura bitters really make the drink, but could be left out if you don't have them (usually found in the tropical drink section at a supermarket or liquor store). -- posted by Ames Shaps

My dad made these when I was a kid and now it is a staple at every family barbecue. My DH has turned it into his 'pet recipe' and I must say, it is DElicious! The times are approximate because we always cook it on the grill although it can be done in the oven and they vary depending on the size of cabbage you use. Also you may not need all of the butter and probably only half of the cheese, but we always make at least two heads. -- posted by 2SpiceItUp

Ensalada Taracita

Spicy and sassy, this Tex-Mex influenced salad tastes alive and looks alluring. The idea begins with a common go-to salsa salad, but my improvisations make it one of a kind. Have fun with flavors as you add and subtract your own favorite fruits, veggies, and dressings. I don't use a dressing as the fruit juice and pico de gallo usually add plenty of flavorful moisture. A mango vinaigrette would be nice though. -- posted by taradelyce85

Spicy Orange Shrimp Ceviche

Makes a great appetizer, party snack, side dish or main course! Also try using assorted seafood such a tilapia, crab, scallops, etc.

I included the ketchup, but you can use sweet Ecuadorian tomato sauce as traditional or skip it altogether as I prefer! Some also like it on the side and let the guests choose. You can also place a dollop on the side of the martini glass as some restaurants do.

You can flash cook the shrimp if preferred by placing in boiling water for 2 minutes before peeling and deveining them. You can make this with only an hour or so of "cooking" in the citrus juices, as you prefer.

Also...I use 2-3 jalapenos and occasionally habenero for extra pep!

My Mom's Jamaican Style Carrot Juice

I've looked up several carrot juice recipes and none were quite the same as the one my mother used to make for us growing up. It's most popular in the Caribbean around the holidays and can double as an adult beverage with the addition of your favorite alcohol (namely rum or guinness). It has a milk base with spices like vanilla and nutmeg, so it's definitely not a carrot juice for those looking for health, but hey, there are carrots involved!

Obviously you may need to double, triple or quadruple your recipe to make enough for several people, but I chose to explain it in relation to the blender's capacity, since a regular blender can't hold a 5 pound bag of carrots. -- posted by PunzeePuss

Corn Chowder With Chicken & Bacon

This is another custom twist on a recipe from my favorite cookbook. The original recipe is for Sopa de Elote, a sweet corn soup from Central America. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395
