Spicy Garlic Grilled Shrimp

This is a recipe from Bobby Flay that I absolutely love. If you don't have the fresh herbs on hand you can easily use dried, as I have many times. Just cut back the amount of oregano and parsley to one teaspoon each. -- posted by Grooved Pavement

Pretzel Crusted Chicken Breast With Cheddar Cheesy Mustard Sauce

This is NOT a Jessica Simpson recipe (she merely put it togehter... thanks houseblend for the advice...), but I love Jessica Simpson and trust her taste! It's gotta be easy if she can do it! She showed Rachael Ray (who owns the copyright to the recipe) how to put this dish together on Rachael's new show. Haven't tried it yet, but I'm sure I will in the next couple of weeks or so, then I will revise this description.
Double Chicken Dumpling Soup

Another yummy recipe from Rachel Ray Show. This one is for dinner tonight. Picture to follow. ;) Looks Yummy though. I would use a 3 cheese blend - parm, asagio and romano myself as that is my fav. I will also use 1-2 8oz packages of Rising Moon Garlic and Basil frozen Gnocchi (depending on your preference)in place of the fresh since I could not locate fresh in the refrigerated grocery aisle here locally. May be only seasonally in my area. ;) -- posted by Mommy Diva

Baked Chimichangas

Ok, ok. I know. These aren't really chimichangas. But I'm from Ohio, where if you use a tortilla it is Mexican food. ;-) I made these as written, but I am also looking forward to trying them with some ground beef or some carnitas. This was originally written to use a toaster oven but I don't have one of those so I used the regular conventional oven. You can definitely use a toaster oven if you have one though. Use the "high" setting if your toaster oven does not have a temperature control dial.
White House Chicken (Oregano Chicken)

From a community cookbook that I removed and had in a pile. It says it's from The White House. Not sure what year but here it is. Note: 3-4 hrs. marination. Can bake or grill this easy recipe.* I have another version of this recipe called Chicken Oregano where you just rub the spices and lemon juice on a whole chicken, about 2 1/2 lbs.,inside and out, and then place in a 7 X 10 inch baking dish with 1 cup of water and 1/2 stick of butter. Bake at 400 degrees F. until golden brown and then lower oven to 350 degrees F. and bake for about 30-40 minutes longer, basting frequently. That recipe was from Katherine Beeson of the Azalia Garden Club, Marion, SC. I found the recipe again as a favorite of Mrs. Richard Nixon from Favorite Recipes of our First Ladies, 1971. It is called Barbacued Chicken in that book. -- posted by Oolala

William Holden's "be Right Back Shrimp"

Celebrity recipe from Another Taste of Palm Springs. This uses pre-cooked shrimp. Figure 5-6 shrimp per person. This recipe doesn't say how many people this serves nor does it state the amount of shrimp (one bag of the pre-cooked frozen?) so I am guessing. Soak the defrosted shrimp in lemon juice in the refrigerator. Take out so they are not too cold, before starting herb sauce, and drain the lemon juice. Goes well with rice so start the rice when you begin the sauce. -- posted by Oolala

Italian Baked Chicken and Pasta

Courtesy of Giada DeLaurentiis! I made this today after sitting on the recipe for quite some time. I am sorry I held on to it. It will be in my regular rotation from now on, it was easy, quick and very tasty. I will change a few things though...I will use tomatoes with Italian seasoning and maybe a little more cheese next time! I even think it would be good if you added some ricotta to the mix. There are a lot of possibilities, but it was good as it is written. I doubled the recipe and it was fine. Enjoy! -- posted by Peyton&KaylansMama

Cooked Chicken for Recipes - Barefoot Contessa Style

I always poached chicken when I needed cooked for a recipe -- and I never liked the way it came out. I was watching Ina's show on the Food Network last weekend and this is how she cooks her chicken for recipes. I tried it and it was the most moist chicken I have ever had. I used it in chicken noodle soup -- YUM!!! The recipe can be increased or decreased depending on how much cooked chicken you need. UPDATE 7/31/07 -- I tried this method on boneless, skinless chicken breasts and it worked great -- I baked for about 35 minutes and it was cooked perfectly! -- posted by Lvs2Cook

This is from the Wall Street Journal from July 15, 2006 and it is Michael Schlow's recipe. He owns 3 Boston area restaurants: Radius, Via Matta and Great Bay. The chef is from Brooklyn originally.
Yes, I admit it, I watch “Survivor.” *wry smile* The season that had chef Keith Famie in the Outback was one of my favorites. Now he has his own cooking show on FoodTV, and this is one of his recipes that I’ve tried and adapted a little. It’s easy and quick to make, and he served it with sautéed mustard greens on the “Memphis” episode.
Giada's Tuscan White Bean and Garlic Soup

Love, love, love this recipe! It's done in less than 20 minutes and is so flavorful and creamy. Perfect with a salad and garlic bread or a grilled cheese! I have made my own alterations/additions to this recipe. Here's a tip on the sage: sometimes I'll use dried sage instead of the fresh sage leaf and in that case I start with about a teaspoon and add more to taste if need be. Also, I use my immersion blender and puree the soup right in the pot rather than using a regular blender...Giada just uses a regular blender, either way works fine! Enjoy! -- posted by KPD

Kmart Sub's - a Blast from the Past!

I had an awful craving hit me for one of these wonderful K-mart Sub's and HAD to have one! I searched high and low and finally found a woman on a message board that used to work the deli counter in the late 80's at a K-mart in Dayton, Ohio. This was one of the same stores that my Mom would take me as a kid to get one of these wonderful sub's and a frozen Coke! I used to stand in front of the counter and watch them make these sub's and remembered all but one of the ingredients. Make sure that you wrap your sub's and allow them to sit for 30 minutes before serving or they are not the same. This allows the bread, meat and veggies to show some love to one another. -- posted by Humble Bee

This is my rendition of the Al Fonda Boriqua version, who was the winner of the Throwdown. I jotted down all the info from the TV program. I have compiled techniques and recipes from authentic sources and this is what I have come up with. The prep time does not include the 24 hour chicken marination time. NOTES: Ingredients list includes links to Adobo Seasoning, Adobo Marinade, Sofrito and Olive and Pepper Mix.
Fettucini Diablo by Tyler Florence

Entered for safe-keeping, I love "diablo" pasta sauces for a change of pace. Note that creamy ricotta may not be substituted for the hard cheese sold as ricotta salata; if you can't find it, use shavings of the best hard Parmesan or Romano cheese available to you. San Marzano tomatoes are a variety of plum tomatoes considered by many chefs to be the best sauce tomatoes in the world; brands available in supermarkets include Cento, La Bella, Solinia and Vanita. As for the olives: does your supermarket have an "olive bar" that allows you to get a little of this and a little of that? -- posted by KateL

Emeril Lagasse's Crawfish Etouffee

This is a great recipe based on one from Emeril Lagasse's book, Louisiana Real & Rustic. He says, "Believe it or not, this now-familiar crawfish dish was not known beyond Louisiana until the late 1940s or early 1950s when the oil boom brought an influx of outsiders to Acadiana, and in particular to Breaux Bridge, in St. Martin Parish, now home of the world-famous crawfish festival. It was in this small town on Bayou Teche, or so some food historians tell us, that crawfish etouffee originated. At the time it was unfashionable, except for Acadians, to eat mudbugs. Now just about the whole world flocks to Breaux Bridge for the rich, full flavors of etouffee. Serve it with steamed rice." Since crawfish can be difficult to find in our parts, I've occassionally substituted lobster, in which case, I cook the shells in water and use this water in place of the plain water called for in the recipe. -- posted by mersaydees

Wendy Richard's Chili Recipe - the Best Chili Ever!!!!!!!!!!!!!!

Are you ready for the BEST CHILI you've ever had? Only made this because I am a HUGE fan of Wendy Richard (MBE) who played "Miss Brahms" on "Are You Being Served" and she also played Pauline Fowler on "EastEnders". She recently passed away and printed her famous chili recipe on the back of her funeral program. (You can see a photo of that in here! Check out the photos for this recipe) I've had chili all over Texas and the South - I even made both recipes from "Throwdown with Bobby Flay" (both were VERY good) but I will tell you - hands down - THIS WOMAN'S RECIPE IS THE BEST CHILI I HAVE EVER HAD IN MY WHOLE LIFE! And when I say "THE BEST" I mean: "I am SO STUFFED I might explode - but I can't STOP eating this chili because it tastes so AMAZING". Ok? I tried to put it in the freezer - and ended up taking it out 10 minutes later and eating it again. Today I had it for breakfast on eggs, and lunch and dinner! Can't wait to have more tomorrow! I'm NOT sharing this batch with ANYONE! But I will share the recipe!

VERY URGENT/IMPORTANT: THE WHOLE SECRET OF THE RECIPE IS IN THE SCHWARTZ BRAND CHILI MIX!!!!!!!!!!!!!!! Use any other brand and it will only be a 2-3 star recipe! If you are in the USA the "Schwartz" brand chili mix in this recipe can be ordered online from www.Distantbrits.co.uk or any other British food sites. PLEASE ONLY use "Schwartz" brand if you want this to come out a 5 STAR recipe- if you use any other brand, like "El Paso", "Chichi's" "Ortega" or "McCormicks" it will be disappointing because those 4 brands I just named are nothing but salt and chemicals with very little spices. I HAVE MADE THIS RECIPE WITH THOSE 4 OTHER BRANDS, JUST TO COMPARE -WHICH IS HOW I KNOW, IF YOU USE ANYTHING BUT SCHWARTZ - IT'S GOING TO BE A DISAPPOINTMENT. PLEASE TRUST ME - IT'S SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO WORTH IT TO SEND AWAY FOR THE SCHWARTZ BRAND, YOU CAN GET THE SCHWARTZ CHILI MIX IN 2 DIFFERENT HEATS: MEDIUM/MILD AND HOT. I PROMISE YOU - IF YOU ORDER THE SCHWARTZ AND DON'T THINK THIS WAS A 5 STAR CHILI - SEND ME AN EMAIL AND I'LL PAY YOU BACK FOR THE COST OF BUYING THE SCHWARTZ. OK?

If you can't find the British "Schwartz" brand, send the lady at distantbrits.co.uk an email requesting it. Tell her which kind of heat you want., "McCormicks" brand in the USA is very disappointing - even the "hot", it's not spicy and the taste really is missing something important. I even tried adding more cumin, and fresh Jalepeno's but McCormicks - it's just NOT AS GOOD as Schwartz, so - if using McCormick's- please know - you've been forwarned: it's not going to be a 5 star chili. If you're in the UK - you should have no problem finding this product.

ALSO - careful when ordered because the recipe calls for 4 Schwartz chili. That means chili MIX - NOT 4 bottles of chili powder!!!! (I say be careful because Schwartz also makes chili powder, and you don't need 4 bottles of chili POWDER for this LOL!)

I used the HOT Chili Mix, but Wendy specifed "Mild". Get whatever heat you are comfortable with. Be FOREWARNED: If ordering the "Hot" - just because it's from England doesn't mean it's not as hot as you think. While it is the most delish chili mix, It is 5 ALARM Texas hot!!!!! And this is coming from a gal who drinks "Franks Red Hot" straight out of the bottle whenever I have a craving! The mild is "mild" and also extremely delish.

Menier's Chocolate is VERY hard to find if you live in the USA. I could only find 1 place online that sells it (Distantbrits.co.uk) Otherwise, use a VERY DARK (Swiss is preffered). When you open the Menier - the actual chocolate says "Nestle", so I guess you could get bittersweet or semi-sweet Nestle. Just don't use Hershey (ugh!)

When it smells ready - eat it. You don't HAVE to simmer for 3 hours, as directed by Wendy. (Personally, I couldn't wait that long, it smelled too good) It even tastes amazing room temp hours later!

I promise you - if you make this recipe EXACTLY as is - with NO SUBSTITUTIONS ON THE CHILI MIX (you CAN make substitutions on the chocolate)- Your tastebuds will think you've died and gone to heaven. I can see why Wendy would leave such a fantastic Chili recipe on the back of her funeral program - people were probably begging her for years for this recipe.

When I make this for the next Texas chili cook-off - this WILL win 1st place - and I will give Wendy Richard all the credit since it is her recipe.

Huh! Who'd have thunk the best recipe for Chili would come from ENGLAND!?????!!!!!!

R.I.P. Wendy - and I thank YOU for all the years you've made me laugh and cry and for the gift of this AMAZING Chili recipe! I will be entering it into contests in your memory! I also hope all the people here will make this and enjoy it and it becomes a family favorite! -- posted by BBCFan

Jill Zarin’s Guilt-Free Pasta With Mushrooms - Bethenny Frankel

Craving carbs? Try this whole-grain dish that Bethenny Frankel created for Jill Zarin, one of her fellow cast members on Bravo’s The Real Housewives of New York City. Because whole-grain varieties have more fiber than regular pasta, you’ll feel fuller faster and you’ll eat less now and later. Plus, the mushrooms provide a delicious flavor and meaty texture (not to mention health-boosting antioxidants) without all the saturated fat. Jill was skeptical about the hearty ingredients, Bethenny says, but this earthy recipe turned her into a fiber convert. -- posted by Nif

Olives, Tomatoes, and Zucchini Red Sauce over Fettuccini

A wonderful way to use zucchini and tomatoes! It's great to sit around the table and eat good food, made with love! Feel free to use yellow squash instead or with the zucchini! Adapted fromKatie Brown Entertains cookbook. Always stir in fresh herbs at the end because they will brown if cooked for too long. -- posted by Sharon123

Mini Shepherd's Pie-So Good!

A great recipe from Aaron McCargo on Big Daddys' House. On Food Network, this recipe has 52 outstanding reviews! You can sub turkey or even veggie crumbles for the ground beef! Kids can help make this dish and have fun doing it! This can also be made in a 9x13" pan. This is good frozen and microwaved. Great to take in your lunch bag, to a picnic, or to a tailgate party! Enjoy! A little history:
The key to dating Shepherd's pie is the introduction (and acceptance) of potatoes in England. Potatoes are a new world food. They were first introduced to Europe in 1520 by the Spanish. Potatoes did not appeal to the British palate until the 18th Century. (Foods America Gave the World, A. Hyatt Verrill, page 28). Shepherd's Pie, a dish of minced meat (usually lamb, when made with beef it is called "Cottage Pie") topped with mashed potatoes was probably invented sometime in the 18th Century by frugal peasant housewives looking for creative ways to serve leftover meat to their families. It is generally agreed that it originated in the north of England and Scotland where there are large numbers of sheep--hence the name. The actual phrase "Shepherd's Pie" dates back to the 1870s, when mincing machines made the shredding of meat easy and popular." -- posted by Sharon123
