Galley Salad

The is a hearty, restaurant-sized salad with lots of meats. The original recipe came from "Mickey's Gourmet Cookbook" and a version of This salad is on the menu at Disney's Yacht Club Resort. Posted by request. Please note that this is a restaurant-sized lunch entrée portion, hence the very high number of calories, fat etc. You certainly may use reduced fats meat & cheese to reduce the calories, or simply serve it to more people. This same amount could serve 2 people easily, and perhaps even 3. -- posted by HeatherFeather

Vortex World Famous Potato Salad

The name says it all, a fantastic potato salad from a top Atlanta restaurant, The Vortex Bar and Grill on Peachtree Avenue. I agree with the reviewer that the cooking time does seem like a long time however, this recipe is from the Vortex Restaurant, and this was the way it appeared in the San Antonio Express News.
New Yorker Onion Sandwich

This is from Graham Kerr, the man who said, "If you are out of salted nuts, the best appetiser is champagne!" This is from Volume 1 of his CBC Television Cookbooks. I also have Volume 3 and it was published in 1969, so this recipe is some kind of late 1960s cocktail party creation. Graham's recipe notes include: "At heart this is a dish that everyone enjoys except those with ulcers and those who have a romantic meeting with someone who isn't at the party." and, "Vodka based creations blend well." I use party rye-sized pumpernickel bread for the "brown bread rounds" he writes of; also, this recipe is for 2 people only so increase if you're serving a crowd (makes a great summer party treat) but don't make them too far ahead. -- posted by EdsGirlAngie

Italian Baked Chicken and Pasta

Courtesy of Giada DeLaurentiis! I made this today after sitting on the recipe for quite some time. I am sorry I held on to it. It will be in my regular rotation from now on, it was easy, quick and very tasty. I will change a few things though...I will use tomatoes with Italian seasoning and maybe a little more cheese next time! I even think it would be good if you added some ricotta to the mix. There are a lot of possibilities, but it was good as it is written. I doubled the recipe and it was fine.
Kmart Sub's - a Blast from the Past!

I had an awful craving hit me for one of these wonderful K-mart Sub's and HAD to have one! I searched high and low and finally found a woman on a message board that used to work the deli counter in the late 80's at a K-mart in Dayton, Ohio. This was one of the same stores that my Mom would take me as a kid to get one of these wonderful sub's and a frozen Coke! I used to stand in front of the counter and watch them make these sub's and remembered all but one of the ingredients. Make sure that you wrap your sub's and allow them to sit for 30 minutes before serving or they are not the same. This allows the bread, meat and veggies to show some love to one another. -- posted by Humble Bee

Lunch Box Fun-Due

From Rachel Ray's Yum-O cookbook. This is a recipe that DD7 picked out to make for us for lunch. :) It fits my requirement that our lunches be healthy and well-balanced. She washed and trimmed the strawberries, peeled the carrots, cut up the cheese, mixed the salsa/dressing, and helped assemble the lunches. A 12 year old could probably make this with just some supervision. The amounts listed are RR's original amounts, but I think unless you are feeding a grown man, this is too much food. Adjust amounts to fit the appetite. -- posted by CraftScout

Ultimate Cheese Dip

My friend Cheryl gave me this recipe - the saying is around our town if Cheryl makes it, it's got to be good. She first made it for a superbowl party. My team wasn't playing, I was just there for the food:) .... and boy was it worth it!

And to top it off it's SUPER easy, but tastes like you labored. If you don't like watching sports on TV, my suggestion is to make this, set it out for the guys mezmerized by your tv, and hit the mall. Chances are you'll be back before they even know you are gone.

This recipe is simple, make it once, then next time, change it up, add different cheeses, or whatever strikes your fancy. But made as written..............yummmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm -- posted by velvet_sj
