			<description>The Colonel also had a Roasted chicken that was mighty tasty. The chicken was marinated also and then baked with his famous seasonings. The baking process was long it takes 4 hours to bake it. It is baked at 225 for 2 hours till the internal temp was at 175. 			<description>From a community cookbook that I removed and had in a pile.  It says it's from The White House.  Not sure what year but here it is. Note: 3-4 hrs. marination. Can bake or grill this easy recipe.* I have another version of this recipe called Chicken Oregano where you just rub the spices and lemon juice on a whole chicken, about 2 1/2 lbs.,inside and out, and then place in a 7 X 10 inch baking dish with 1 cup of water and 1/2 stick of butter.  Bake at 400 degrees F. until golden brown and then lower oven to 350 degrees F. and bake for about 30-40 minutes longer, basting frequently. That recipe was from Katherine Beeson of the Azalia Garden Club, Marion, SC. I found the recipe again as a favorite of Mrs. Richard Nixon from Favorite Recipes of our First Ladies, 1971. Feel free to add more spices at the end such as oregano, garlic powder, dried basil, etc.  This is the recipe that Giada De Laurentiis uses on her show (over and over).  She says you can freeze it for up to 6 months!  NOTE:  I have made this with fresh roma tomatoes in place of canned. . .I simply rough chopped 10 roma tomatoes and pureed them in the blender prior to cooking. Very rich and fruit filled. I served it over a scoop of vanilla ice cream.
I also used brandy instead of cognac ( much cheaper)
Next time I make this I will take the seeds out of the kumquats Taste similar to a Fig Newton cookie.
