The Ice Cream icing still has me puzzled.  While the author included may frostings and icings, she did not include any ice cream frosting recipe. 			<description>Just the other day--while laying on the couch being sick--I watched Martha Stewart's TV program.  Caroline Kennedy is writing a book featuring recipes from our country's past.   Martha brought out her old catering service HUGE Hobart mixer, and it was fun (being sick &amp;amp; all &amp;quot;fun&amp;quot; is relative!) to watch her put this together---WOW!  Today I was paging through a &amp;quot;Christmas traditions&amp;quot; book my SIL gave me a few years ago and wow--here's the recipe Martha S. &amp;amp; Caroline Kennedy were re-creating on the TV program. She says that this was her most popular cake with the royal family, and that she sent it by request to Windsor, Balmoral, and Sandringham, as well as making it for the Queen Mother for her birthday at her request. I made it for my MIL for her birthday one year--it was delicious. The marmalade adds a nice touch to the cake, and the coffee icing is perfect with the rich cake. From Melissa Winner, Gulfport, MS, as entered in Cuisinart Stand Mixer competition, and later entered on Food Network's Ultimate Recipe Showdown as Ruby Red Grapefruit Cake. I prefer a glaze such as this on my Bundt cakes, so no refrigeration is needed, although Paula Deen likes a cream cheese frosting on hers (see Recipe #324804).  This can also be made as two 9-inch layers, which would work better with the cream cheese frosting. Slow-churned European style butters have smaller butterfat crystals, which leads to smaller, finer bubbles and a finer texture in the finished cake, so splurge on the expensive butter for this! Be sure to use cake flour, not all-purpose; the finer particle size, the lower protein and the bleaching all lead to a better, more tender texture in the final cake. Substituting buttermilk for some of the eggs and butter lightens the cake, lowers the fat and calories, and adds a tangy note; Alton recommends whole buttermilk, not low-fat or non-fat.
