			<description>Way back when, in the depths of college days history when overindulgent weekend drinking was just a 20-something No Big Deal, my then-husband husband Gene and I watched a movie called &amp;quot;Moon Over Parador&amp;quot; and thought it was one of the funniest things we'd ever seen. Of course, I believe we'd been imbibing quite a bit o' beer so our judgment might've been a little off. (I still think the movie is pretty funny, though.) In the movie, the dictator of a tiny little country called Parador indulges in a drink called a &amp;quot;puna,&amp;quot; which is never really described. &amp;quot;Too many damn punas,&amp;quot; and the dictator kicks the bucket, and Richard Dreyfus' character, an actor who does too good an impression of the departed, has to take his place while the corrupt political cronies figure out what to do next. Anyhow, we thought it'd be fun to create the puna. What we came up with was pretty darn tasty, and was a hit on those binge weekends of old. I don't remember the exact recipe, and we made it in volume, but here's an approximate single serving. 			<description>If you've got an espresso/cappuccino machine you're well on your way to recreating a top-choice Starbucks coffee drink. For the caramel part, you can use any caramel sauce that you find in the grocery store near the ice cream toppings. Pick your favorite. Just note that to make this recipe work best you'll only need 3 tablespoons of a richer caramel sauce (like the stuff Starbucks uses), but more like 4 tablespoons of a lighter sauce (such as fat-free Smuckers). For the vanilla syrup you can use the bottled syrups, such as those made by Torani, or just whip up a your own clone from scratch. This is my easy version of the Pineapple Dole Whip at a fraction of the cost. Word of advice from a Disney fan for your next trip: wait at least one hour after drinking this to ride the Indiana Jones' attraction. (The Enchanted Tiki Room is a better option. She also says that this is the recipe she was given to use at Clarence House. I've tried it and like it quite well myself. Posting here as it's an older cookbook and I don't want to lose the recipe. Since the rinds are used, it's best if you can find organic fruits without oils or waxes or chemicals on the rinds. Failing that, be sure to clean them very well--I soak them in vinegar water, then rinse them under very hot water. I can't recall the amount you get at the end, so I am estimating.
