Roasted Cauliflower With Vegies

This is something I came up with when I wasn't in a meat mood. I love vegies and could very well be a vegetarian, if I didn't like everything so much. This is very easy; just vegies, olive oil and spices. You could have this as a main meal, by itself, with crusty bread/rolls or a side-dish to grilled meat or fish.

This could also be done on the grill, see Note. -- posted by VickyJ

Be sure to monitor the butter carefully: You'll want it to brown, but not burnt.
Vegetable Christmas Tree Appetizer

This is a great recipe for a great presentation for the Christmas. It makes it easy to serve vegetables and dip in a festive way. I use pretzel sticks to make the tree trunk for its authentic bark-like color. Serve as stated or if you choose fill all around the tree with cauliflower and put the ranch dip in a separate dish if you need to refill or keep cold. Definitely a great addition to a Christmas buffet or dinner. Originally from Flo Burtnett in OK, the recipe has a big wow factor. (see my photo) Enjoy!
Vegetable Biryani

Vegetarian recipe from about.com. This is one of my husband's fav vegetarian recipes we have tried. He requests it all the time and even takes the leftovers for lunch. I really wouldn't leave out any ingredients, because the flavors all work so nicely together. The raisins really help to cut the spicy curry. Also, I end up using less of the curry paste, but it depends on your taste and what kind you purchase. If you don't like things too spicy, start off with less and build your way up to suit your taste. Note: Curry paste and powder are not the same and I do not recommend using powder for this recipe. ;) -- posted by FrVanilla

Cauliflower With Roasted Tomato Sauce and Chorizo

It is worth the effort of roasting the tomatoes to make the sauce for this dish as it produces a wonderfully robust flavour. The addition of chorizo makes a tasty dish and is a delicious alternative to the well-known cauliflower cheese, which should appeal to all the family. If you are short of time, you can use a readymade tomato sauce. For a vegetarian alternative, replace the chorizo with 9oz cup mushrooms, sliced and fried. -- posted by English_Rose

Marinated Avocado Cauliflower Delight

Being a person who tends to make do with what I have on hand, I came up with a new twist on a cauliflower salad the other night. My inspiration? Coop day is coming around again in a few days, and I had a head of cauliflower and several avocadoes I needed to use. Though I enjoyed the tartness of the salad, I also thought it would be good with a bit of sweetener to make it a sweet/sour dish. I used onions and tomatoes from my organic coop which I had dehydrated myself, which was fun.

As my husband and I are experimenting with vegetarian and vegan meals, we simply had this salad by itself for supper. -- posted by Chef #962323

This is my FAVORITE recipe!!!! It's healthy, ridiculously tasty, and takes less than 15 minutes to cook. It has the added bonus of being vegetarian, but it's just so good that I'll feed it to anyone and everyone! I got the recipe from Vegetarian Times, the original may be found at http://www.vegetariantimes.com/recipes/7747. We've eaten this with rice, wheat tortillas, or by itself. Basically we just can't stop eating it! Just a warning to all those gringos out there, it's a little bit spicy. ;) In case zaar can't find all the ingredients, the basic nutritional info per serving is: 34 cal/14g protein/13g total fat/11g fiber/46g carbs -- posted by EmJoMay

Parmesan Cauliflower

I tried this once when my parents were getting home late and hadn't eaten anything yet. We had more cauliflower than we knew what to do with, so I made my own recipe. Keep in mind, when I tried this, I played everything by eye, no physical "tbsp, tsp," that kind of thing. So I'm estimating how much I used.
Mark Bittman's Pasta With Cauliflower

A quick and simple recipe printed in "The New York Times" (Feb. 6, 2009).
"There are many possible variations. For the cauliflower, you can substitute broccoli, rape or even kale or collards. When you're simmering the garlic, you can add anchovies, capers, pine nuts or dried red pepper flakes -- some or all of them. You can toss crumbled cooked sausage meat or chopped shrimp into the garlic mixture along with the bread crumbs. Or you can garnish with chopped parsley, basil or grated Parmesan." -- posted by blucoat

Low Carb Basil and Garlic Cauliflower Mash

When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper. -- posted by cckarl

Thai Vegetable Curry

This is an easy beginner's curry. It is a very flexible recipe- you can use whatever vegetables you prefer or have to hand. The flavours are not spicy but more fresh and slightly fruity (from the mango chutney). You could of course add more spice to tailor it to your preferences.
I have organised this recipe to be quick, but you do have two pans on the go at once- the vegetables in the saucepan and the skillet. If you prefer an easier pace, boil the potatoes, add the broccoli and cauliflower then drain and set aside when cooked. Then when you are ready, prepare the spice paste and cook the red bell pepper in the skillet. -- posted by Shuzbud

Vegetarian Delight (Stir-Fry)

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Cauliflower Steaks With Cauliflower Purée

Originally found on Epicurious, great easy recipe. Few ingredients, big payoff: Large "steaks" are cut from a head of cauliflower, sautéed until golden, then baked until tender. They're served over a simple puree made from the cauliflower florets. An impressive first course, this can also be a lovely side. Just sear two mahi-mahi fillets in butter and place them alongside the cauliflower. -- posted by jwith12

Swedish Style, Vegan Kofta Balls

(They look like meat balls, and have a similar texture as well)
This recipe is from "The Higher Taste", a Hare Krishna cookbook, with modifications to suit the westerner's palate. These Kofta balls contain seasonings which are reminiscent of Swedish meat balls, instead of the Indian spices found in the original recipe. The great thing about these Kofta balls is that my 3-year-old son eats them, and normally, he won't touch veggies. Everything tastes good when it's fried! Although these kofta balls are fried, they are not greasy at all. To start, You will need about 1 liter canola oil (expeller pressed, or other oil for deep frying). -- posted by Lance Kimber

Kadhi Pakora / Pakoras

At the local Indian market, they have a small, vegetarian "cafeteria-style" lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it. Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper. Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows. You can vary the veggies you use here. Try onion strips, spinach and even paneer, Indian cheese. Adapted from a recipe at http://www.indianfoodsite.com/.
My 11 year old stepdaughter requests this recipe regularly. Cream of potato soup is one of her favorite things to eat. I wanted to make something that had less fat and calories and more vitamins and fiber. This is what I came up with. My stepdaughter often tops it with croûtons and Bacos (surprisingly vegetarian!). -- posted by Chef #1140251

Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.

North Croatian Creamy Vegetable Soup

This is traditional vegetable soup you can get almost in any better Croatian restaurant. There are some basic vegetables you put in it, but your imagination can work here. -- posted by nitko
