Cauliflower With Roasted Tomato Sauce and Chorizo

It is worth the effort of roasting the tomatoes to make the sauce for this dish as it produces a wonderfully robust flavour. The addition of chorizo makes a tasty dish and is a delicious alternative to the well-known cauliflower cheese, which should appeal to all the family. If you are short of time, you can use a readymade tomato sauce. For a vegetarian alternative, replace the chorizo with 9oz cup mushrooms, sliced and fried. -- posted by English_Rose

Aloo Gobi Mattar

This is an adaptation of Aloo Gobi Mattar Recipe #187408 - a very tasty recipe. All I have done is rewrite it with the ingredients in the order they are used. At this time, I have only prepared it once. I used a combination of olive oil and butter for cooking, ginger paste in lieu of all of the fresh ginger, vegetable stock, and went without the hot green chili pepper, fenugreek seeds and fresh cilantro as I did not have them on hand. This dish is an excellent addition to any Indian meal and equally good reheated the next day. -- posted by MA Blossom

Parmesan Cauliflower

I tried this once when my parents were getting home late and hadn't eaten anything yet. We had more cauliflower than we knew what to do with, so I made my own recipe. Keep in mind, when I tried this, I played everything by eye, no physical "tbsp, tsp," that kind of thing. So I'm estimating how much I used. I remember it was good though! lol -- posted by drive_my_soul

Low Carb Basil and Garlic Cauliflower Mash

When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper. -- posted by cckarl

Here is another vegetable side dish that I make once or twice a week.
Vegetarian Delight (Stir-Fry)

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Cauliflower Steaks With Cauliflower Purée

Originally found on Epicurious, great easy recipe. Few ingredients, big payoff: Large "steaks" are cut from a head of cauliflower, sautéed until golden, then baked until tender. They're served over a simple puree made from the cauliflower florets. An impressive first course, this can also be a lovely side. Just sear two mahi-mahi fillets in butter and place them alongside the cauliflower. -- posted by jwith12
