Cranberry Broccoli Salad

Christmas Vegetable Salad

This is another Country Cooking Prize Winning Salad. Not only is it delicious, but the best part is it can be made a day ahead, and allowed to marinate overnight. I like to use this one for dinner parties for that very reason, not just for Christmas. -- posted by Chabear01

Crunchy Marinated Vegetables for Two

Another goodie from Taste of Home magazine.
I couldn't find kohlrabi so I just added a couple more radishes. Preparation time is approximate.I poured the cooled portion of the dressing into a measuring cup to make it easier to pour over the veggies.A great make-ahead recipe too. -- posted by foodtvfan

Cauliflower Quinoa Salad

This also works well with broccoli which turns out slightly firmer. quinoa is high in protein so this meal makes a balaned meal for vegetarians. For a tasty variation add some crumbled feta before serving. -- posted by PinkCherryBlossom

Cauliflower Salad

I have yet to make this, but I insisted on getting the recipe from the woman at my former work who brought it on one of our many pot luck days. This dish was devoured fast....before the candy, before the krispy kremes even. (I'm guessing on measurements. She served it in a large rectangular cake dish. Her instructions say "layer of lettuce, layer of chopped onion, layer of cauliflower".) -- posted by Tina A

Sunny Vegetable Salad

This is hands-down my favorite recipe to make for any family dinner. Sunny vegetable salad is too good for words, you'll see when you make it. It does take a bit of work doing everything from scratch (particularly the broccoli and cauliflower), but I guarantee you'll run out every time because everyone goes for seconds.

I posted this recipe as it originally was, but my family always makes it with 1/3 cup instead of a 1/2 cup sugar and it's just as good. -- posted by Jeff Hammer

Colorful Vegetable Salad

Slightly adapted from Taste of Home. I made this on Christmas Eve and it was still crunchy and good four days later. It is best eaten the same day or the next though. The original recipe called for an entire red onion, but I thought that looked like way too much onion. It also called for 6 oz olives, but I put in a bit less. Cooking time is actually chilling time. -- posted by wife2abadge

Marinated Avocado Cauliflower Delight

Being a person who tends to make do with what I have on hand, I came up with a new twist on a cauliflower salad the other night. My inspiration? Coop day is coming around again in a few days, and I had a head of cauliflower and several avocadoes I needed to use. Though I enjoyed the tartness of the salad, I also thought it would be good with a bit of sweetener to make it a sweet/sour dish. I used onions and tomatoes from my organic coop which I had dehydrated myself, which was fun.

As my husband and I are experimenting with vegetarian and vegan meals, we simply had this salad by itself for supper. -- posted by Chef #962323

Cauliflower Salad

This recipe has been passed around most of my town; everyone who tries it LOVES it and asks for the recipe. If you don't have fresh lemons, only juice (eg in a bottle), you can leave the rind out. Delicious side dish to barbecued or grilled meat. Tastes even better the next day. Avocado may not be an authentic addition, but we like it - change the vegetables to suit what you have and what you like. You may have to adjust the salt, depending on whether you use olives and feta cheese or not. -- posted by dianegrapegrower
