Vegetable Saute With Blue Cheese

This is one of those recipes that was born of the need to use up a bit of this and a bit of that, but suprisingly, it was a great combination! The measurements are flexible, so feel free to adjust as you wish. If you don't have shallot in your fridge, use red onion. -- posted by IngridH

Macaroni Cauliflower Cheese Bake

This is one of Jamie Oliver's quick pasta meals, from his Ministry Of Food cookbook. You can either serve the dish unbaked so it is silky and gooey, or you can grill it so it has a crispy, golden topping. You can add a grated hard-boiled egg, flaked smoked haddock, or cooked prawns if you want. -- posted by Sara 76

Low Carb Chicken Casserole

My SO is doing low carb, and even those not doing low carb know that pasta is a big no - no. But sometimes even " low carbers " crave a casserole that's full of cheesy goodness. ;) So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness. For the chicken seasoning, I used Weber's Grill Creations " Kick' N Chicken " seasoning. But you can use whatever chicken seasoning you have on hand. And as always with my recipes, you can adjust the amount of seasoning as you like. Submitted to " ZAAR " on May 21st, 2009. -- posted by shapeweaver ©

Spiced Indian Cauliflower Soup

Taken from the Ultimate Vegetarian Cookbook, Roz Denny, 1994, Anness Publishing Ltd., page 18. This soup has a GREAT flavor and creamy texture, but doesn't have the fat that cream or half and half has. Makes a great first course or light meal. I am going through boxes and boxes of old cook books and RecipeZaar-ing my fave recipes... then I will take the cookbooks themselves to Goodwill. Back 15 years ago when I first used this recipe, vegetable stock was unheard of in the area I was living. Now I can find vegetable stock easily. I'm going to be making a lot more of this soup. -- posted by lolsuz

Easy Express Broccoli Soup

A thick hearty soup you can make in less than 30 minutes. If you can steam vegetables you can make this soup. Tasty and great for winter. Good for using up those vegetables in your crisper before the next shop. Can be frozen and reheated. Low in carbs & gluten free (if you ommit the bread), high in fibre. Very cost effective. -- posted by Chef #721261

Thai Vegetable Curry

This is an easy beginner's curry. It is a very flexible recipe- you can use whatever vegetables you prefer or have to hand. The flavours are not spicy but more fresh and slightly fruity (from the mango chutney). You could of course add more spice to tailor it to your preferences.
I have organised this recipe to be quick, but you do have two pans on the go at once- the vegetables in the saucepan and the skillet. If you prefer an easier pace, boil the potatoes, add the broccoli and cauliflower then drain and set aside when cooked. Then when you are ready, prepare the spice paste and cook the red bell pepper in the skillet. -- posted by Shuzbud

Lazy Pickled Cauliflower

We LOVE our pickled jalapenos, sooooo... I tainted some cauliflower with the same juice and am in love. its zippy, spicy, vinagary, very yummy.
I imagine the longer it set the more flavorful. Having not been blanched or processed i dont' know How long you could leave... safely.
as with any pickle I'm sure the salt content is horrid, but darn near calorie free. i set the sitting in fridge time as cooking time. You pay ZERO attention after prep. but do have to plan and or wait for the yummy product.
I'm sure you could throw other veggies in with good results too. i was thinking celery, carrot, and who knows. -- posted by Halliy

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

Waitrose recipie from http://www.waitrose.com/recipe/Piccalilli.aspx

Posted here so I do not loose it. Not made it yet but hope to soon.
The vegetables are not brined prior to making the piccalilli.

Waitrose says "Traditionally, all the vegetables in a piccalilli are salted, but I find the flavours are punchy enough, so I skip this stage. Substitute courgette for the cucumber and runner beans for French beans if you wish. It’s delicious with ham, cold chicken, Cheddar or the game terrine." -- posted by Tinyclanger

This is a very simple tasty recipe. I started out looking at a Kraft recipe but changed everthing including the veggies so there is no longer even a slight resemblance to it.
Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Cauliflower Steaks With Cauliflower Purée

Originally found on Epicurious, great easy recipe. Few ingredients, big payoff: Large "steaks" are cut from a head of cauliflower, sautéed until golden, then baked until tender. They're served over a simple puree made from the cauliflower florets. An impressive first course, this can also be a lovely side.
