Baja Fish Tacos

This recipe is dedicated to my niece Ruth who lives in San Diego. When I visit we always drive down to Ensenada for fish tacos. The fish are fried in batter there. I've taken a few liberties and added beer and taco seasoning to the batter. I prefer the catfish nuggets because they are nice and firm, have a great taste and are usually the cheapest fish at the local market. -- posted by Mary Leverington

Cornmeal-Crusted Trout/Catfish

I love fish this way. Next to good ole' deep fried batter dipped, it is my fave way to eat fish. This is very simple to make and tastes delicious. Also, it is very versatile, you can serve with almost anything: salad, rice, potatoes, beans, whatever suits you! -- posted by SlipC

The tartar sauce can be made 2 days a head and chilled. recipe comes from another site. -- posted by Barb Gertz

Fried Catfish With a Creamy Thai Sauce

This dish is Asian influenced. Thai being the main influence adjusting to make sure the RSC ingredients are added. This spicy sauce goes nicely with the crispy fish which has a hint of curry (Indian influence). You will not be disappointed! If Fresh Lemongrass is not available use dried or fresh lemon juice. -- posted by ~Rita~

Denise's Louisiana Hush Puppies & Fried Catfish

These hush puppies have a cake like consistency (not your little ball of dry cornmeal). This is my base recipe, but it can be altered to your own taste, such as less sugar and more jalapeño. The catfish recipe is my husband's, and is more of an ingredient than a recipe, but this is our most requested meal when we're having friends over, so I thought I'd add it. I usually also serve with french fries, onion rings and fried mushrooms. Not the most healthy meal in the world...but oh, so good. -- posted by Deely

Bb King's Catfish Nuggets & Sauce

I'm not real sure how I came about this recipe, but I think I was watching the Food Network and someone there was visiting BB King's place in Memphis, TN. I had to listen really hard and this is what I came up with. This sauce is to die for! We make it everytime I fry catfish and there is never any left over. We even use this recipe for our fish tacos. Serve with a nice cole slaw. YUM! -- posted by By The Lake
