Chili Turkey Casserole

Have made with onion if I haven't got any leeks works just as well. And I don't usually add the creme fraiche because I don't tend to keep it in, but is lovely without. -- posted by starrlite77

Turkey Barley Goulash Casserole (Rice Cooker)

Healthy and easy rice cooker dish that you don't have to babysit, inspired by a Moosewood creation. This will be more like a casserole consistency than a stew, because the barley soaks up the cooking liquid. You can sub a can of diced tomatoes for the tomato paste and water. You may top with shredded cheddar cheese if you wish. This reheats wonderfully. -- posted by Panthur

Turkey/Chicken Chilaquiles Casserole

This is my daughters favorite recipe for leftover turkey. I love it too! Don't let the long list of ingredients scare you. It seems time consuming but it does go together quickly once you have everything ready. I got it out of an old cookbook magazine called Fresh Turkey Ideas.
Kittencal's Turkey-Potato Casserole With Almond Crescent Crust

I developed this recipe, it is really good, and can be made using cooked turkey or cooked chicken, it is better with turkey! The bouillon powder is optional, I like to add in in for extra flavor. In place of the crescent rolls you can use puff pastry or prepared pie pastry. The mixture must be hot before topping with the crescent crust. Add in some fresh sauteed or canned mushrooms also if desired, to save some time cook your potatoes a day ahead. -- posted by KITTENCAL

Grandma's Chicken Enchilada Casserole (Lighter Version)

My mom got this recipe from her mom, and passed it on to me. I've since lightened it up a bit (you can further lighten it by replacing the cheese with lowfat cheese--I just don't like lowfat cheese). I loved this recipe growing up, and my family loves my lighter version. I usually make it after roasting a turkey with some of the leftover turkey meat--it's just as good with turkey as with chicken! Leftovers reheat fine for a day or two, but it doesn't freeze well. You can adjust the heat by using hotter or milder salsa, and replacing the mild chilies with spicy chilies if desired. -- posted by Halcyon Eve

Homemade Giblet Stuffing for Turkey or Chicken

In my photo you will notice a darker portion of the stuffing; this was the bit that was stuffed into the turkey itself and after roasting it has a crispy outside coating. This is a delicious savoury stuffing that I make every year for Thanksgiving. During the year I love to make it with a whole chicken minus the giblets as I can't find chickens that come with giblets in the UK. It's fantastic and whatever doesn't fit in the bird you can bake on the side. Note: I sometimes like to use a mixture of white and brown bread in this recipe. NOTE: Since the giblets will take a while you can do everything else while they are cooking. -- posted by Summerwine

Wild Rice and Turkey (Or Chicken) Casserole

Great casserole to use up that left over turkey or chicken. We usually end up with lots of left over dark meat of the turkey, and this is a yummy way to use it up and not waste it once you get sick of those turkey sandwiches.
Low-Fat Meaty Lasagna

No ricotta or cottage cheese here! A creamy béchamel and plenty of Parmesan cheese round out this hefty, meaty lasagna that doesn't taste, look or feel _light_ or diet-ish. From the 2008 edition of The Best of America's Test Kitchen cookbook - they did all the tweaking and testing for me! Note - no precooking of the lasagna noodles needed! -- posted by SusieQusie

Lasagna Squisito (Exquisite Lasagna!)

This is the culmination of my lasagna experimentation... I didn't see another recipe here that was quite like mine, so I decided to share! I usually make my meat sauce with ground turkey, but it is good with ground beef, too, or "meatball mix," which consists of ground beef, pork and veal. You can also cut the amount of meat in the sauce by one half and supplement spinach, if you like. It's best to experiment with the seasoning levels as you cook, based upon your preferences... I add lots of garlic to mine, and if I am using beef or a beef mixture, I toss a splash of red wine in the sauce. I also make my layers very thin. Oh, and this freezes and reheats well, if you are the make-ahead type! -- posted by Foxgirl
