Zucchini and Sausage Milano

Always looking for new zucchini ideas and my kids like Italian sweet (mild) sausages. I add 1 box of cooked penne and split the portions into 2 aluminum containers and froze them. I will defrost it and reheat it in the oven. When it is warmed through, add cheese on top then until melted. This recipe as described makes 2 "dinners" for about 5. You can serve it all at once for about 10. -- posted by Oolala

English Sausage and Bean Casserole

This is a recipe that my mum gave me and it makes a very comforting meal on a cold day. I am not certain if you can buy Cumberland sausages in other countries (doubtful!) but if not then go for a thick, heavily seasoned / peppery sausage. What I call Butter Beans I think are called White Lima Beans in the US. I think Worcestershire sauce is widely available but if not use a brown spicy sauce. Lastly, I think cider is referred to as "hard cider" in the US so just to clarify it's the version with alcohol for this recipe! I normally serve with baked potatoes. -- posted by Karen Pea

Roman Soldier Casserole

I created this dish with ingredients on hand in my kitchen. I thought the title fitting because this is a hearty, "comfort food" meal that would have satisfied a Roman soldier. It is mostly an Italian meal except for the Greek seasoning, an item a Roman soldier could have discovered while he was out and about conquering the world. You may use any vegetable in this dish, but I like to use stir fry veggies with sugar snap peas. -- posted by Scrivener1

Bacon-Wrapped Sausage Casserole With Apple & Tomato Sauce

From a popular collection of Recipes originally published in an Afrikaans magazine, Huisgenoot. The recipe calls for a coarse South African sausage, Boerewors, which is generally made up of 2/3 beef, 1/3 pork, plus spices, etc., but I use normal pork sausages for this. A lovely casserole, I serve it with Dauphinoise potatoes. -- posted by Karen Elizabeth

Baked Cavatelli

OMG! My kids complain about most food and eating dinner (they're snack-a-holics) but this casserole is not one of those dinners.
When I used to cook this when it was just me and my husband (B.C.), we used to have a ton of leftovers!! However, now there are none, and it's the dog who's most upset....
The sausage you can either get in mild or Spicy and I like to mix both in this dinner. I cook both packs at once, one skillet for each type. Once they are done I take half from the mild and half from the spicy and combine them in one zippy-bag and freeze them (add them to your future Spag&Mtball dinner and WOW!).

I got this from a BHG Mag at least 17 years ago (when we first moved in together - May of '89) and just saw this again on BHG.com (my original calls for half of a bag/box of spinach and 1/2 cup of red peppers and onion (I buy frozen in bags to save time or pre-prep your veggies and freeze), each in addition to what is here as well as draining the pasta water over the spinach in a mesh colander to wilt/separate it..I add the spinach to the sauce mix before stirring)... I tell ya, all.. this is a great recipe! -- posted by BratGyrl

Easy Jambalaya

I went to the Rainforest Cafe in Chicago a few years ago, and happened to order the Jambalaya. I had never had Jambalaya, and from the menu it looked a good choice, but I can honestly say, It was the best meal I have ever eaten. I have tried to make this dish many times, and have now (I think) simplified and perfected it. As an Englishman, no-one over here has even heard of Jambalaya, but I have made this dish for lots of friends, who all absolutely love it, and I swear it is the closest I have come to that fabled recipe. It is a cheat in that I use some store-bought items, but if you know how to substitute with fresh produce then let me know. I hope you all enjoy this meal as much as I do! -- posted by Chef #785168

Baked Sausage Penne

I love baked pasta, but wanted to make something a little different from most of the recipes that I saw. I use homemade marinara and homemade pesto, but feel free to use jarred if that's what you have on hand. You can also use chicken or turkey sausage instead of pork if you wish. This was intended to make dinner for two plus leftovers, as there are only two of us in the house, and I wanted it to be easy enough to pull together on a weeknight. Serve with a green salad, garlic bread, and a nice glass of red wine. Cooking time includes prep and resting time. -- posted by IngridH

Pork Sausage and Egg Casserole

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Perfect for a brunch, we also love it for supper too! -- posted by Chef Learnee

Deluxe Cornbread Dressing Casserole (Big Batch)

An old family recipe that's been tweaked little by little over the last 100 years. This makes 2 large pans about 1/2-3/4 filled. To relieve holiday stress make the pre-cooked dressing the week before Thanksgiving and freeze. Use one pan for Thanksgiving and one for Christmas. Begin defrosting 2 days before in the refrigerator. I split the prep process between 2 days. On the first day make the cornbread, boil the fryer, pick the meat and save the broth. The second day assemble and freeze. For OAMC split dressing into even smaller portions; may need to reduce bake time.

My picture is of a smaller baked portion. -- posted by gailanng
