			<description>This is a delicious, decadent and luscious French &amp;quot;bread casserole&amp;quot; from &amp;quot;The Zuni Caf&amp;eacute; Cookbook&amp;quot; that you will want to make again and again.  It's a great use for stale bread and a very forgiving recipe, you can improvise with other greens and cheeses. 
As with all panades, you may need a little more bread, or have some left over; same with the liquid, depending on the size and shape of your baking container.  If you have more time, you can cook this at 250&amp;deg;F, for about 2 hours 45 minutes; the slower the bake, the more unctuous and mellow the results.
If you have leftovers, the Zuni Cafe's Chef Judy Rodgers instructs: Warm about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. Slide in a scoop cold panade and press gently to make an 2-inch-thick patty. Fry gently to make a golden crust, about 3 minutes, then fry the other side. It's also great rewarmed in the microwave.  It is actually not difficult to make; the instructions are just very detailed.  You can skip the stovetop step and still get great results. 			<title>Mexican Chicken Lasagna</title>

			<description>I first had this at a pot luck at work.  Got the recipe from a friend but decided it needed some tweaking.
You may add as much heat as you like or keep it toned down.
Add taco toppings too if you like when serving.
It does take a little work but in the end it pays off.
Note:  You won't use all the reserved broth.  There is a large amount saved just to make sure you have enough.
The chicken soup in this recipe is the creamy color one not the yellow.
In place of the chips you can use taco shells broken in halves.
Or you can use the Corn tortillas, omit softening them.
Using the chips give more corn flavor.

Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.
