Texas Tuna Casserole

A tasty variation on the tuna casserole we're all familiar with. It's very tasty and spicy. Feel free to reduce the amount of jalapeno peppers to suit our taste. This recipe makes a lot of food, but iit can be halved easily. This recipe was published in a community cookbook entitled "Green Thumbs in the Kitchen." -- posted by Happy Hippie

From the accolades I got, I really should have spent hours in the kitchen, but this little recipe was embarrassingly easy.
Chicken Chilli Smothered Baked Potatoes

A terrific recipe to use leftovers from week-end bbq or to make up during the winter months as a wonderful southwestern comfort food meal.

We've been re-arranging our kitchen and trying to use up all the extras each week to keep the refrigerator and cabinet neat. This recipe was made up on the spot using leftover grilled chicken, leftover grilled corn on the cob, leftover baked potatoes, a can of Rotel tomatoes, a can of beans (I used black beans, but white, kidney, and pinto beans would work equally well).

I was able to make it in one cast iron skillet also so clean up was a snap -- posted by RookieRetiree

Hamburger Meal in One

A great meat and potatoes dish. Filling and tasty, the whole family loves it! My mom insists that I make this every time we visit. I got the base of the recipe from an old Taste of Home or Quick Cooking magazine, it's been awhile so I don't remember which one. I did tweak it a bit to suit my family's tastes. The frozen veggie amounts are approx, it changes every time I make it based on what I have in the freezer and my mood. -- posted by Tinkmommy

Broccoli Casserole With a Kick

Creamy Spinach Pasta Casserole

I had a bag of frozen spinach thawed and wanted to make regular greek spinach rice, but then my brain got toggled with cream and cheese and mushrooms and pasta for some reason, one thing led to another and the creation of this recipe happened. It was enjoyed, so if it sounds like something you would like, go along and play around with my recipe and tell me about it.
Verdict: Not bad. It was a tad undersalted for my taste but i think in general its better than over salted. And you cant tell how salty the cheeses would be. So i would stick to the amounts of salt and just add salt while you are eating if needed.
Optional in section B: you could add some chopped whole canned tomatoes - 1 cup. Also for those who prefer some meat in this dish, in section B you could add some cooked ham or turkey.
Serve with a nice vinegrette salad of cucumbers, olives, tomatoes, lettuce.. -- posted by Alfrancis

This Tex-Mex casserole is jam-packed with tasty, fiber-rich ingredients. We used Swiss Chard but spinach, kale or turnip greens are all great options. -- posted by IAteMyGluestick

This is a versatile and easy dish that can be served over rice, with taco shells or tortilla chips for a family or potluck dinner. You can use a crockpot and even start with a frozen roast.
For a special occasion, serve with all the garnishes that accompany tacos, such as diced green or white onions, guacamole, pico de gallo, salsa and sour cream,
You can spice this up by using a can of tomatoes and green chilis or add 2 tablespoons of diced green chilis. You can use chili, kidney or red beans. -- posted by Mamaya

Lloyd's Squirrel or Chicken Pot Pie

DH started from fluffernutter's Recipe #137552 #137552 (which came from the South Carolina Outdoor Press Association), but made so many changes that I am posting DH's version. I'm not a fan of pot pie, nor squirrel, so I told him he had to take total responsibility for any squirrel dish he fancied. To my surprise, his creation was delicious and had no strange taste at all; the meat tasted similar to dark meat chicken. He had 4 squirrels, which yielded a little over 1 pound of meat. He ended up with 2 pot pies because he wanted a lot of potato, and used full 15 ounce cans of lima beans and green peas. Our pot pies were packed with vegetables with squirrel accents. I appreciated that no cream soups nor heavy cream were used. -- posted by KateL

Flavorful Potatoes Ham Scallops

This potatoe dish is made with simple ingredients but full of flavors. A type of dish good on it's own or main dish with a salad. Potatoes, ham, cheese, and oh...lots of cheese...after a long day of working and taking care of my boys...this is the dish to feed hungry mouths. The results won't be disappointing!

I came up with the recipe because I wanted something simple but full with flavors and feed a lot of people.

NOTE: You will notice I did not add salt because the ham and cheese already have salt. If salt is added – the dish may be too salty at the end. -- posted by Chef #393272

Southwest Tortilla Casserole

This is a twist on a taco casserole. I love to create in the kitchen. I made this last night, and the family loved it, so I thought I would jot it down while it is still fresh in my mind. This does have a kick to it and I would suggest that if you don't like spicy you can modify to your taste. I hope you enjoy as much as we did. -- posted by singn8

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Note: You could certainly use fresh broccoli if you have it, but I usually have a frozen bag on hand and it works great.
Holubsti--Ukranian Cabbage Rolls

I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints. While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked. This recipe comes from me combining elements of two or three different recipes that I found. The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well. If I want to do a homemade sauce, I usually do it a day or so in advance.,

By omitting the meat, this can be a vegetarian dish. By also omitting the sour cream and using margarine instead of butter, it can be vegan. -- posted by CorianneW

I modified a recipe in The Joy of Cooking to make this, which suited our tastes better (and used things I actually had in the house!). I think this would even be a hit with people who don't usually like cabbage.

For the "milk or light cream" I used 1/2 cup skim milk and 1/2 cup fat-free half-and-half. I actually used a bag of cole slaw mix (shredded cabbage and carrots) for the cabbage, so this was REALLY quick to make! -- posted by mayness
