Delicious Mexican Casserole

Two of my hubby's friends were visiting and I was unprepared for dinner. I didn't have much in the fridge and had no time to run to the store. So I decided to whip up a tasty casserole, considering you can put almost anything into one. It was a big hit. Everybody LOVED it & there wasn't a bite to spare! It was manly enough for them, yet enjoyable for kids too. -- posted by Laura & Shawn

Last Minute Casserole

I was at a loss as to what to make for supper so just thought about what I had on hand and this is what I came up with.
I used canned peas but I can't see any reason frozen peas wouldn't work just as well or better. I used Club House Roasted Garlic & Pepper One Step Seasonings as well as the pepper but you can use whatever seasoning you choose. (I would think Tex-Mex or Italian seasoning would also work well.) -- posted by Chef #291568

Johnny Marzetti Updated

Satisfying comfort food. I feel like an authority on Johnny Marzetti casserole by now; for each household's preferences I have a unique casserole. This is the basic recipe, updated to 2008 from Jean Anderson's "The American Century Cookbook". Why follow a recipe from the 1950s and 1960s exactly how it was, when so many choices are available to us now? I call this an updated version of Johnny Marzetti, using sweet (Vidalia type) onions, minced garlic, baby portabello mushrooms, low-sodium tomato sauce, and bow tie pasta (farfalle). When all is said and done, this is a tasty casserole I am requested to make again and again (in all its incarnations). This fills one large 14 x 11 1/2 x 2-inch aluminum foil pan for a buffet serving setup, or two 11 x 7 x 2-inch baking dishes. My preparation times are usually longer than average; I am the slowest chopper in the Western Hemisphere. -- posted by KateL

Hearty Beef and Potato Casserole

This recipe came from a church cookbook, so I have no way of knowing whether it came from another source, or if this was someone's own creation. Regardless, it has been a family favorite ever since.

Make sure you thaw the broccoli first, so it gets cooked enough. Otherwise, you will end up with cold, half-frozen broccoli in your casserole. (Ask me how I know . . . ) -- posted by Bridget Leigh

Lasagne

Friends beg to be invited to dinner when they hear I'm cooking lasagne. Over the years I have changed my recipe to make it as healthy as possible. My mom gave the recipe to me years ago and since then has asked me to make lasagne because my turns out better than hers! The "secret" ingredients of sugar and baking soda cut the acid flavor out of the tomatoes. You may want to add them gradually & taste test as some tomatoes are more acidic (is that a word?) than others. To save time, garlic and onion powder may be substituted for the minced garic & chopped onion. If time allows, refrigerate lasagne for a day before cooking. This allows the sauce to seep through the noodles. If lasagne is refrigerated, bake an additional 10-20 minutes. I have heard you don't have to boil the noodles if lasagne is prepared a day or more ahead of time. I've never been daring enough to do this. Please let me know if you try it. -- posted by QueenBee49444

This recipe was given to me years ago in a recipe swap by my Aunt Shirley. It won 2nd place in the 1995 Mississippi Beef Cook-Off.
Easy Veggi-Licious Meatloaf

This is not a vegetarian meal. This just has a lot of vegetables in it. It is something that I threw together in hopes of getting my nieces and nephew to incorporate vegetables in their meal. I made it about 10 years ago for the most stubborn eaters, and now it's their dinner request every time they visit! I usually make (2) dishes, freezing one for another night. Easy enough to make that my 9 and 13 year old do this by themselves!
Kittencal's Easy Lasagna

This lasagna is easier than most as there is no pre-cooking the noodles, do not use the no-boil noodles for this just regular lasagna noodles, the no-boil with become too soft with the addition of the water --- this was tested using Classico Tomato and Basil Pasta Sauce, any meatless Classico pasta sauce will do fine or you could use your own favorite brand --- I suggest to prepare the meat sauce up to 2 days ahead this will not only save you time but the flavors will ripen and intensify for a better tasting sauce --- cooking time does not include the meat sauce. -- posted by KITTENCAL

I got the base of the recipe from an old Taste of Home or Quick Cooking magazine, it's been awhile so I don't remember which one. I did tweak it a bit to suit my family's tastes.
Lasagna Squisito (Exquisite Lasagna!)

This is the culmination of my lasagna experimentation... I didn't see another recipe here that was quite like mine, so I decided to share! I usually make my meat sauce with ground turkey, but it is good with ground beef, too, or "meatball mix," which consists of ground beef, pork and veal. You can also cut the amount of meat in the sauce by one half and supplement spinach, if you like. It's best to experiment with the seasoning levels as you cook, based upon your preferences... I add lots of garlic to mine, and if I am using beef or a beef mixture, I toss a splash of red wine in the sauce. I also make my layers very thin. Oh, and this freezes and reheats well, if you are the make-ahead type! -- posted by Foxgirl

Then your friends or family can top it off with the delicious gravy from this dish. This is a Polish recipe called {Galomki] and is great to serve anytime of the year. Just make plenty.
