Macaroni Tuna Casserole

My aunt Ginny used to make this delicious casserole for her kids and nieces and nephews. It's easy to make, the ingredients are inexpensive, and it's popular with both kids and adults. The use of a box of marcaroni and cheese, and extra shredded cheese on top, sets it apart from other Tuna Noodle dishes. Try it once, and you'll keep it in your Cookbook, too. -- posted by AB_Fan

My "other mother", Elouise Stone, gave me this recipe when I was a starving college student. Now after 30+ years, my kids and grandkids are keeping the tradition alive! Simple, satisfying, and inexpensive.
Tuna or Chicken Enchilada Casserole

I made this up the other night using what I had on hand. It turned out pretty good! If you don't enjoy pasty flour tortillas I think this would work great with cooked rice. Also the onion will remain slightly crunchy so if you don't like that then you can omit it or sauté it first. -- posted by Engrossed

Rhiannon's Casserole

This recipe is a mish-mash of a few different casserole recipes I found on zaar. I couldn't find one to fit what I had on hand so I created this little number! It's an easy recipe that is open to interpretation: take or leave or add what vegetables you like :) I found this is great with some ricotta cheese thrown in on step 5 too.
Here in Australia we have 95g cans of tuna with different flavours, such as chili, satay & in this case tomato & onion. They really come in handy when throwing recipe ideas around, but to make it vegan, all you have to do is leave out the tuna. Easy! -- posted by Rhiannon&Matt.gauci

Tuna Casserole With Bow Ties, Mushrooms and Parmesan

This is a great from scratch Tuna Casserole. No canned soup here, an easy Parmesan cream sauce with just a touch of cayenne to give it a nice kick. Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook "Kitchen Life" which I am enjoying very much! When I make this again, I will probably substitute Ritz cracker crumbs for the dried bread crumbs to add a little more pizzaz to the top. -- posted by Ridgely

Overnite Tuna (Or Chicken) Casserole - Lite

When I was a young working mother some 30 years ago now, this was a fairly regular option for dinner. It was easy for me to put together before bed and whoever arrived home first would pop it into the oven. That gave me an uninterruped hour to take care of after work chores and start the kids on their homework. I tried due diligence on this one to see if it was posted in 'Zaar, but none just like this that I could find. The original recipe called for fresh onion, but today we prefer the dehydrated version. I've also added the optional seasonings in recent years and it's still one of our favorites. -- posted by Lady Dancer

Cheesastronie Soup or Leftover Tuna Macaroni Casserole Soup

As anyone who cooks for one or two knows, it’s hard not to get stuck with leftovers. Since many of the meals I cook consist of portions too large for one sitting, I normally separate the remaining recipe into one and two person serving containers, and then freeze. Sometimes, such as when we are having a hectic day or perhaps just don’t feel like
cooking from scratch, we combine two of the individual recipe portions to create a new recipe or take one of those retro cans of soup and combine it with one of the leftover portions of my own recipes.

Crock Pot Tuna Noodle Casserole

Bravo for a tuna noodle casserole that forgoes crackers in favor of healthier ingredients like peas! This one is easy to prepare and relatively inexpensive. The flavor can be zipped up, if you desire, by sprinkling with Cheddar or Parmesan cheese the last 1/2 hour of cooking time, or after it is cooked. White albacore tuna tastes the best; however, other tuna works well too and is freer of Mercury. This recipe fits a 2.5 qt. crock pot. -- posted by WV Mermaid

Gf Tuna Casserole

Here's a fairly traditional, creamy tuna casserole. I adapted this recipe from Tara's Recipezaar recipe #13630 to make it gluten free and mild. You can try more onion and pepper if you're not a spice wimp like (pregnant) me. I included notes to help people new to gluten-free cooking and shopping. -- posted by Jamie B

This fabulous Tuna-Noodle Casserole certainly isn't the one Mom used to make, but is just as comforting.

This is based on a recipe found in the Weight Watchers New Complete Cookbook, but altered to fit what was in my pantry at the time. While not as low in points and calories, this one is still a healthy alternative to classic Tuna Noodle Casserole. -- posted by Maggie_the_spy

Maritime (Canada) Seafood Casserole

This is a seafood casserole recipe that we often make at Christmas or New Year's. We live in on the east coast of Canada so we have good access to seafood. You can change the quantities or types of seafood used. I usually don't use the crab meat, but increase the amount of lobster and shrimp I use. You can use haddock or salmon in it also. I usually use whatever I have on hand. The important thing is to use approximately the same volume of fish as stated in the recipe. I usually serve it over the flaky pastry shells, but you can also serve it in crepes or just by itself on the plate. -- posted by Chef burnt toast

You can substitute canned chicken for the tuna. I also use the bagged Homestyle wide noodles We love it served with garlic bread. You can make this ahead, keep refrigerated and cook later.
Salmon Bread Pudding

Savory bread pudding is made with croissants, salmon, capers, cheese, and dill. This makes a fabulous brunch dish that may be served hot or at room temperature, but I like it for a light dinner or lunch. You may use your own baked salmon or smoked salmon in place of the canned salmon or add a dash (not too much!) of liquid smoke to the eggs when you whisk them. Plan ahead because the pudding will need to be refrigerated overnight before baking.
Christmas Eve Baccala (Salt Cod With Potatoes & Tomatoes)

Traditionally, Italians dine on seven different fish and seafood dishes (symbolizing the seven sacraments) on Christmas Eve. (By the way, you don't have to wait for Christmas to make this wonderful dish.) This recipe is typical of the Calabrian region of Italy. Have plenty of crusty Italian bread available to scoop up the sauce. And, remember to buy your dried, salted cod (baccala) three days before cooking, so you can prepare it.
