			<title>Western Ham and Egg Casserole</title>

			<description>This recipe is a hybrid.  I found two recipes with almost identical ingredients.  I liked the one recipe better because I could just put everything in the baking dish without layering.  However, it called for it to be refrigerated overnight so that the egg mixture could sink in.  I have a full-sized fridge plus two bar fridges but I do so much cooking at Christmas, there simply isn't room to store one more dish.  The technique for the second recipe didn't need for the dish to sit overnight, but rather cook it in a hot water bath for a longer period.  The end product was a big hit and turned out perfectly cooked and moist.  A big time saver for this recipe is using the cut up day old bread that many bakeries sell over the holidays for making stuffing. It was so easy to make and i loved that i made it last night and just poped it in the oven in the morning while i was making the pancakes. The only thing I would do different is to add some hot pepper sauce to the mix(it was a little bland for our taste. It's a great use for stale bread and a very forgiving recipe, you can improvise with other greens and cheeses. 
As with all panades, you may need a little more bread, or have some left over; same with the liquid, depending on the size and shape of your baking container.  If you have more time, you can cook this at 250&amp;deg;F, for about 2 hours 45 minutes; the slower the bake, the more unctuous and mellow the results.
If you have leftovers, the Zuni Cafe's Chef Judy Rodgers instructs: Warm about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. Slide in a scoop cold panade and press gently to make an 2-inch-thick patty. Fry gently to make a golden crust, about 3 minutes, then fry the other side. It's also great rewarmed in the microwave.  It is actually not difficult to make; the instructions are just very detailed.  You can skip the stovetop step and still get great results. Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up. While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc.  This is an excellent use for bread that is too hard and stale to eat.  I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard.  The original recipe, Debbie Tate's &amp;quot;Make Ahead French Toast&amp;quot; at allrecipes, suggests 8 slices of French bread.  I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully.  This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix.  I would be happy to serve this for company, or Christmas morning. 			<description>Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife!
