Dairy Blintzes Casserole

The recipe was posted by Ruth Heiges at http://www.cyber-kitchen.com.

She writes: "I got this
from a Temple member (Alyse Kirschen) a few years ago. It's fantastic,
only dirties 2 bowls, a measuring cup, and measuring spoon. Is much
cheaper than blintzes, but tastes just like them. Easy, quick, cheap,
delicious..." It can also be adapted for Passover by substituting the flour and baking powder.

She´s right. The whole family loves it and it is a keeper... specially for Shavuot and Sukkot. -- posted by kerstin klein

Sausage-Mushroom Breakfast Casserole

Parmesan Gruyere Bread Pudding

This is a delicious, savory breakfast casserole. Got it from "Metropolitan Home" magazine back in 1990. It is a little different from most make-ahead strata dishes, being made from English muffins, instead of bread, and Gruyere, instead of cheddar.
Christmas Egg Casserole

My mom gave me her recipe and I changed it up a bit to make it healthier (and it tasted even more awesome!). She uses a dozen whole eggs, a loaf of white bread, pork sausage or bacon, and regular cheddar cheese. See below for my changes...
Farmer's Brunch Casserole

I have been making this recipe for about 12 years. I used to make it for brunch but now I serve it for dinner as well. It is loved by all we have served it too. It's great to serve with fresh fruits and "Recipe#126982".
You can grate your own potatoes or purchase shredded from the store. If using frozen, defrost first. I have used other cheeses but I find this Monterey Pepper Jack (w/ jalapenos) to work best. UPDATE 8/08: I grated red potatoes and the casserole turned out too wet and slimy. UGH. I would suggest purchasing the "Simply Potatoes" or using a potato that bakes up drier. Hope this makes sense. -- posted by Chicagoland Chef du Jour

Bisquick Sausage Egg Casserole

This recipe uses Bisqick instead of bread. I like that egg substitute is used for most of the eggs. You can totally change it up with different cheeses, meats & spices. Oh, & I love fresh Roma tomatoes on top! Adapted from a TOH recipe. -- posted by RN@the120

These are Parisian-style gnocchi, very different than the traditional Italian potato version and actually easier to prepare. The dough is quickly boiled then baked with cheese, producing airy mouthfuls with a slight crust.
To blend in the eggs, use a standing mixer with paddle attachment. Gnocchi dough can be refrigerated overnight before boiling and baking. Recipe is from Food & Wine Magazine.
For a more savoury version, add chopped fresh herbs – chervil, chives, parsley and tarragon... -- posted by blucoat

Buffet-Style Fluffy Oven Scrambled Eggs for a Crowd

This is the method that restaurants use to serve eggs for a buffet brunch --- for cheesy eggs mix in 1-1/2 cups shredded old cheddar cheese or you may sprinkle the cheese on top after removing from the oven --- 2-1/2 cups half and half cream and milk will produce ultra fluffy eggs, for a firmer texture reduce to 2 cups--- NOTE this recipe was tested using large eggs I cannot promise the same results using small or extra large eggs --- if you are serving these eggs at a buffet some side ideas would be salsa, green onions, cheddar cheese and soft buns :) -- posted by KITTENCAL

Western Ham and Egg Casserole

This recipe is a hybrid. I found two recipes with almost identical ingredients. I liked the one recipe better because I could just put everything in the baking dish without layering. However, it called for it to be refrigerated overnight so that the egg mixture could sink in. I have a full-sized fridge plus two bar fridges but I do so much cooking at Christmas, there simply isn't room to store one more dish. The technique for the second recipe didn't need for the dish to sit overnight, but rather cook it in a hot water bath for a longer period. The end product was a big hit and turned out perfectly cooked and moist. A big time saver for this recipe is using the cut up day old bread that many bakeries sell over the holidays for making stuffing. I was also lucky in that I stumbled across pre-chopped pancetta at Costco, also a big time saver. -- posted by Irmgard

I got this from cooks.com. I didn't see one like this on here. I made this for our new years eve breakfast and hubby and i both loved it! It was so easy to make and i loved that i made it last night and just poped it in the oven in the morning while i was making the pancakes. The only thing I would do different is to add some hot pepper sauce to the mix(it was a little bland for our taste. I would also maybe add some mushrooms. enjoy! -- posted by punkyluv

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix.
Maple-Pecan Praline Topped French Toast Bread Pudding

Whenever I make a loaf of gluten free bread, I can't seem to eat all of it before it goes stale or moldy. While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc. This is an excellent use for bread that is too hard and stale to eat. I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard. The original recipe, Debbie Tate's "Make Ahead French Toast" at allrecipes, suggests 8 slices of French bread. I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully. This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix. I would be happy to serve this for company, or Christmas morning. It is *extremely* rich - most people will be too full to finish off two helpings. -- posted by Lelandra

Green Chili and Egg Breakfast Casserole

This is easy to make and has a lot of flavor. It goes well with fresh salsa or pico de gallo. This was recently served at an office breakfast and everyone loved it. You should bake this dish only as long as it takes for the casserole to become firm, but remove it from the oven before the top of the casserole turns brown. -- posted by BzyBee
