My mom always bought a 1 lb block of Velveeta and cubed 1/2 pound of it, and sliced up the other 1/4 pound, but if you can find the shredded velveeta - that's a great time saver!

			<description>The broccoli keeps growing and growing. It's a darn hardy vegetable plant that gives and gives. Once you take the first crown, then the darling plant proceeds to take on many different baby crowns, that are tender, and perfection plus! I really like that a simple, yet, flourishing plant can bring that much enjoyment to our day. I particularly like this recipe, as it can be a whole dinner for us some evenings. Although Dennis does require &amp;quot;meat&amp;quot; at most meals, he could just as happily toddle off with a large scoop of this casserole and a fork, and he proclaims he is in heaven. Just a simple, farming, boastful dish of warmness and total soul comforting veggies. I agree, this is not a skinny dish, but you can make it that way just by changing the fat to low fat and increase the spices. One thing to note about this recipe is that the primary flavor is of fresh, delicious vegetables. I highly recommend not skimping on: salt, pepper, or garlic unless you are going to doctor it with your own spices.  I sometimes throw in some dried oregano or some red pepper flakes.

There are many, many different ways to make this more healthy, let me know how you do it! I usually get the low sodium soups, use smart balance mayo, 2% cheddar cheese, whole wheat bread on top, and smart balance butter. Every little bit helps! I haven't ever measured this, so don't be afraid to add more or less of anything at your discretion! Especially with the curry, some nights I get sassy and decide to put tons of curry in it.

Don't let the bechamel intimidate you. This French Mother Sauce is an alchemy of very simple ingredients that become a tremendous sauce through the proper application of heat. Just don't blast either the flour mixture, or the milk, with heat higher than medium, and you should be good. TAKE YOUR TIME, and don't pump up the heat to speed it up.
