An all-purpose vegetable broth for soups, rice, etc. They state that you can make it into a light sauce for ravioli by reducing it over medium heat, uncovered, for about 15 minutes until it is almost syrupy. Broth can be made ahead of time; it can be kept covered in the refrigerator for up to 2 days or frozen for up to 3 months.
Vinegret. Russian Vegetarian Salad

Vinegret [vee-nee-grate] is one of the traditional vegetarian Russian dish, usually Russians cook in on a New Year’s eve. The word Vinegret means mishmash. This salad is very simple but contains a less of calories, healthy, and has a rich taste. To tell you the truth, I hate boiled beet and carrot.. eek.. but their taste is absolutely different in this salad, you can hardly feel them here.

The best way to spend as less time as possible is to boil all ingredients the day before you need them. -- posted by TasteRussian

Braised Carrots With Parmesan Cheese

This is one of those simple yet impossibly delicious recipes. Slowly cooking the carrots brings out a wonderful caramelized flavour. The recipe is from Marcella Hazan's Essentials of Classic Italian Cooking, where she prefaces the recipe with, "I know of no other preparation in the Italian repertory, or in other cuisines for that matter, more successful than this one in freeing the rich flavor that is locked inside the carrot".
You can do the first 2 steps ahead of time, and then just rewarm in a pan with the Parmesan before serving. The recipe is supposed to serve 6, but they are so yummy, you may only get 3 servings. Enjoy! -- posted by blucoat

Carrot Pasta Sauce

The fresh ingredients and the short cooking time, make this a perfect light summer pasta dish. I found this recipe online claiming to be a fake tomato sauce. It doesn't taste like tomato, but then again it doesn't really taste like carrot either. The way all of the flavors mesh, it's really an indescribable flavor. Everyone seems pretty skeptical until they try it. -- posted by OwlMonkey

Carrot-Potato-Tarte (Flourless)

I got this recipe out of a cookbook on quiches and was amazed by the fact that the crust is made entirely without flour. As I made it the first time, I was a bit worried that it would not set properly because the potatoes were so wet (I had about a centimetre or so of water standing in the pie dish) but it turned out great. I hope you'll like this tarte as much as I do.
Note: Instead of the dried herbs or as an addition to them you could also use fresh herbs of your choice. -- posted by Lalaloula

Lentil Vegetable Pottage

From "Complete Candida Yeast Guidebook" by Jeanne Marie Martin. I changed the recipe a little: less celery, more carrots, a little more salt. I don't use the onion, garlic or bell peppers, personal preference. The Homemade Boullion Cubes and Vegetable Broth Powder are recipes in the same book. They look time and labor intensive and I haven't made them yet - I skip them and put in the tamari. She suggests simmering the tamari to kill any yeast or mold in it, but I don't know why you would have to in this recipe, since the tamari is cooked for at least 15 minutes. -- posted by Jetta

Spicy Peanut Thai Vegetable Salad

This is a very easy, amazingly tasty vegetable salad that takes minutes to make. The combination of all the greens, reds, orange and yellows in the vegetables make a wonderful presentation. It's the vinaigrette that brings all the veggies together. You can use any veggies you happen to have on hand; I think it would be great with tomatoes and lightly cooked asparagus. I made it at the last minute for a picnic with the veggies I had in my vegetable bin - everyone raved. I made it the next day for a work luncheon and had the same reviews. -- posted by Eight West

Vegetarian Delight (Stir-Fry)

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

A healthy snack with less fat than a traditional muffin or bar, and lots of bran goodness! Lower the fat further by using Fat Free or Low Fat Yogurt. Found this on the Robin Hood Baking Site. Sprinkle with icing sugar to "pretty them up" or ice them with some cream cheese icing for a more decadent treat!
No-Chicken Soup

This is my "trademark" recipe--I make it every single week! It is so rich and flavorful I like it more than "traditional" chicken soup. Although the secret ingredient--sassafras--isn't essential, it deepens the flavor. Powdered sassafras leaves can be found in supermarkets in the spice section. It's also called "fil'e" or "gumbo fil'e." If your market has a "Cajun" or "Creole" section, you might be able to find it there too. It's a classic Cajun seasoning, but it's also good in just about everything. -- posted by Theodwyn

I hope you like this very simple and tasty side dish. If you wish, you can use fresh peeled carrot circles rather than baby carrots. In place of dried parsley flakes, I substitute with fresh parsley when I have it on hand. (Note: We like the full amount of horseradish. However, if you haven't cooked with horseradish often, you can start with 1/2 T horseradish then taste, then add the other half to regulate the flavor to your liking.) -- posted by Mareesme

Easy Glazed Carrots and Raisins

I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o) -- posted by Chef #1082457

Carrot Wedges Glazed in Cider

Cooking carrots this way, with apple cider, makes them glossy and shiny, without using lots of butter. Cutting carrots into wedges gives them more angles to cook. Try cooking until the carrots are browned in the glaze. This recipe resulted from experimenting. Usually glazed carrots end up either too mushy or too buttery for me. My idea here is to brown the carrots. -- posted by maize

My Take on Sneaky Orange Puree

This is from the Sneaky Chef's recipe but I have added a little more to it. It's still orange! and so nutritious you will want to put it in almost everything! Try it in macaroni and cheese, grilled cheese sandwiches, meatloaf, spaghetti sauce, pizza sauce, throw it in with spaghettios! The options are endless. And have fun putting extra nutrition in your kids(and adults) food! :) In the summer you could sub yellow summer squash(1 med. or 2 small), use it raw and put in the food processor with the other veggies. -- posted by Sharon123

Habanero Mango Hot Sauce

I blend fresh organic carrots, mango, onions, garlic, and a hint of lime juice with the Habanero. The result is a pepper sauce that harmonizes heat and flavor without the overpowering pungency found in traditional vinegar-based hot sauces. Creating a spicy but not overpowering sauce that allows you to spice your food without drowning out the original flavor.
The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers. When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean. capsaicin has a way of staying on your hands even after washing. Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
The steam from boiling vinegar is very strong. Avoid breathing it.
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce. It is an important step which should only be skipped if the sauce will be used up completely within 1 week.
Skillet Roasted Carrots!

This recipe is from Tom Colicchio, the head judge of Top Chef. I got this recipe from Today's Kitchen cookbook(recipes made on the Today news show). It's simple and delicious! Baby carrots were used for this dish, but feel free to use large carrots, cut to size. -- posted by Sharon123

Date and Chickpea Cous Cous

This was a throw together I made one night that turned out brilliantly. You can adjust the seasonings to your taste... just remember the stock and cous cous should be equal quantities. Great blend of sweet, sour and spicy. It's quick, filling, nutritious and will keep for a few days in the fridge - nice cold as well.
Carrot Cake for Careful People

This is my highly modified version of Carrot Cake by Making Stuff.
I loved it the day after it was cooked, I don't recommend eating it without waiting 6-12 hours. In fact, If you can wait a couple days, it would be just perfect. The texture and the flavors really benefit from waiting. This cake has a Queen Elizabeth Cake-like texture, because of the dates and coconut. It is quite dense and creamy on the inside, with a nice crunch on the edges. For the spice measures in this recipe : I went by eye, knowing the strenght of the spices I am used to use. These measures are approximate, and feel free to experiment to suit your own preferences. I don't recommend putting raisins or pineapple in this cake, because the acidity of those fruits prevents from digesting the starches well. This cake keeps well in an airtight container in the fridge. The preparation time includes the hand-grating of the carrots and the hand-chopping of the dates. -- posted by Blueberries and Mortar

Easy Roasted Carrot Ginger Soup With Greek Yogurt and Croutons

I make variations of this soup whenever I don't feel like doing a whole lot of work. It's warm and satisfying on a cold day, and is pretty good for you, too! It's one of those recipes that's very easy to play around with - roast whatever extra veggies you have around the house, make up new garnishes... Another version I enjoy is using shrimp stock and putting a few sauteed shrimp in each bowl.
The recipe could easily be doubled for a larger group of people, but I find that these measurements work very well for a dinner for 2. For a vegan version, simply substitute tofu sour cream for the greek yogurt. -- posted by CptShane

Simple Carrot Soup With Lentils

This is hardly a recipe, but a very simple way turning a lot of carrots into supper. I found this recipe at http://glutenfreegoddess.blogspot.com/ when looking for something simple to use up my tons of carrots. I added lentils to make it a main course. The lentils don't affect the taste and add protein, fiber, iron and other goodies, but you can leave them out for an even simpler recipe. You can also use any unsweetened, unflavored nondairy milk in place of the soy milk. The seasonings are a little different, and this is from the Down Home with the Neely's cookbook, so you know it's gotta be good! -- posted by Sharon123

Spicy Tomato Soup With Avocado Relish

The Neely's say this is their kind of soup-it has plenty of atitude! A little heat gives it a smoky undertone and a garnish of avocado relish balances the flavors! Serve with cornbread or a grilled cheese sandwich. From Down Home with the Neely's cookbook. -- posted by Sharon123
