German Pancake Soup

This is my MIL's recipe that she has made for years. My whole family loves it. DH even loves putting jam and a sprinkle of sugar on the pancakes. He rolls them up and will eat them for breakfast. They are like a crepe. Some people like to just put the broth over the cut pancakes others like it with the veggies. -- posted by TeresaS

Granny's Beef Stew

The recipe is based on the stew my granny used to make, over the years I’ve made a few changes. You can make it without wine, just increase the amount of broth, but the wine really brings out the flavor of the beef. If you happen to have Trader Joes in your area, their two buck Shiraz or Merlot work fine for this recipe. -- posted by velvet_sj

Picky Eater's Carrot Cake

I loved this carrot cake recipe that I got out of an old magazine that I found in the attic and I tried it and I figured out that my family (mostly picky eaters) didn't like raisins or nuts so I tried leaving them out and well it turned out perfect and you can definitely top it off with some cream cheese frosting :)
This Carrot Cake is so moist and yummy and you can add your own special ingredients to it :) I made them into cupcakes for a bakesale and they turned out great! -- posted by Nouf_H

Grandma's Carrot Casserole

This comes from my mother's mother -- born in England in 1906 to Polish-Jewish parents, emigrated to the U.S. in 1909, died 1991. It can be made in a casserole or, more festivly, in a ring mold (then you can put cooked peas in the center). Grandma would have used shortening, but canola or corn oil is fine. -- posted by L'ecole

Easy Glazed Carrots and Raisins

I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o) -- posted by Chef #1082457

Autumn Pot Roast

When the brisk autumn arrives, I tend to cook with fresh apple cider quite a bit. There is nothing like the crisp, tangy taste! Over the years, I began to add it to my pot roast recipe, and it became a family favorite. It just adds a hint of sweetness that really lifts the gravy from average to wonderful. Even "non-Pot Roast Lovers" (which there happen to be quite a few) enjoy this twist. I also know most people like potatoes in their pot roast, but I always serve my pot roast with either Recipe #290398 or Recipe #343221. I would love to try this in the slow cooker sometime, too! -- posted by JackieOhNo!

Tomato Carrot Basil Bisque

I found this recipe on allrecipes.com and added some additional ingredients. I tried to keep in mind the fat content. It's easy and I usually cook it in a crock pot. I have also used dried basil in place of fresh basil. I puree this soup using a hand held blender. Using this appliance, it maintains a chunky consistency. I would be interested in other ways to improve this recipe, as I have difficulty getting the basil flavor to stand out. -- posted by telcherj

Family Favorite Vegetable Soup

This soup is chock full of veggies! It is wonderful with a loaf of crusty French Bread on a cold winter day. It is a family favorite.
Carrot Wedges Glazed in Cider

Cooking carrots this way, with apple cider, makes them glossy and shiny, without using lots of butter. Cutting carrots into wedges gives them more angles to cook. Try cooking until the carrots are browned in the glaze. This recipe resulted from experimenting. Usually glazed carrots end up either too mushy or too buttery for me. My idea here is to brown the carrots. -- posted by maize

Fall Harvest Smoothie

Top with a little fat free whip cream for an extra-special desert. My teen-age daughter begs for this and sometimes we even heat it up for a thick soup. The key to this recipe is to make sure you use a blender/smoothie maker that has enough power to completely puree alll the ingredients; otherwise the squash will stay stringy. -- posted by RackeSRN

Habanero Mango Hot Sauce

I blend fresh organic carrots, mango, onions, garlic, and a hint of lime juice with the Habanero. The result is a pepper sauce that harmonizes heat and flavor without the overpowering pungency found in traditional vinegar-based hot sauces. Creating a spicy but not overpowering sauce that allows you to spice your food without drowning out the original flavor.
The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers. When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean. capsaicin has a way of staying on your hands even after washing. Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
The steam from boiling vinegar is very strong. Avoid breathing it.
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce. It is an important step which should only be skipped if the sauce will be used up completely within 1 week.
Roasted Winter Squash Soup

Pumpkin and winter squash are so nutritious & versatile. I just love them. Rich taste, full of beta carotene, filling but not fattening & inexpensive - gotta love these vegies! Used a Golden Butternut to make this soup last night. It was the first use of our version of Sherry Peppers (habaneros, cinnamon sticks, allspice berries, black peppercorns in dry sherry) - turned out mighty well. I subbed hot pepper & dry sherry into this recipe as Bermuda Sherry Pepper is hard to come by. The squash cooked down to a beautiful thick orange base that did not need pureeing - the carrot bits were soft too but added a bit of texture which was appealing. Keeps well for reheating in microwave without separating too. Posting at request of DN who wants the recipe after tasting. We served with hot fresh Recipe#118283 made with rosemary & sultanas. -- posted by Buster's friend

I don't like carrots, but the squash really steals the show, so no worries on a "carroty" taste (it alwasys falls just a little so I recommend saving a little topping to fill the little dip :-) -- posted by JojoBean #2
