			<description>A lightly spiced butter, laced with dark rum - this traditional old recipe originates from the county of Cumberland in the Lake District of Northern England. In Cumberland, rum butter served with oatcakes or buttermilk scones were given to friends who called at the house to see a new baby. In turn they would leave a silver coin, and on the day of the christening, when the butter bowl was empty, the coins were placed in it. A sticky bowl, with plenty of coins sticking to it, meant that the child would never be wanting. 			<description>This is a wonderful way to serve garbanzo beans, AKA chickpeas.  This dish has a rich tomato-cream sauce with a Caribbean flare.  Serve with mildly flavored veggies.  Fry very ripe plantains and add to you meal for a wonderful sweet and salty combo.  Store leftovers in the refrigerator.  Reheat on the stove by mixing the rice and curried chickpeas, or reheat in toaster oven or microwave.

Special Notes:
Use soymilk or coconut milk if you are unable to find coconut cream.

			<description>I saw a similar recipe years ago and tweaked it so much that it has become a household staple when I'm in a hurry. You can tone down the heat a bit by using diced tomatoes with green chilis instead of with jalapeno. Also please note that you can heat this on medium heat and then simmer 25-30 minutes if your in a hurry.  I tend to let it simmer for a few hours or place in my crockpot. 			<description>Similar to Puerto Rican and Cuban, rice and beans. This is the version from the Dominican Republic where it is a staple dish for Christmas. We also make the same with red kidney beans. Try to boil your own beans instead of using the canned type. I find it makes a great difference. Just put about 2-3 cups of raw beans in 4-5 cups of water, hard boil for 10 minutes, then boil over very low heat for 4-6 hours until the bean can be easily be squeezed between your fingers. Then you can freeze or refrigerate them in its own water. Me? I use coconut or peanut oil for high temps or more neutral flavors &amp;amp; olive oil otherwise. I was drawn to the cabbage in the recipe as we are in the process of harvesting our cabbage patch.
