			<title>Delicious, Easy Cuban-Style Flan</title>

			<description>I love a good flan, and have experimented with many during the years of my flan-fixation. :) This one is quite lovely- both for ease of preparation, and for taste. It is denser then some I've tasted, not too heavy like some that use heavy cream, but texture-wise, very creamy and smooth. I got this recipe from a dear friend who gave me her mother's recipe from Cuba. 
Don't hesitate to make this recipe becuause you don't know what to do with the leftover egg-whites. There are lots of things to do with egg-whites! Use them in egg-flower soup, fried rice, egg-white omelettes, meringues, as the egg-binder in meatloaf, meatballs and spinach-artichoke dip, just to name a few. Enjoy. :)

			<description>A Caribbean take on a classic. Super quick with less fat and calories than a traditional Quiche Lorraine. The flour mimics the 'body' of the traditional Quiche. The mild, flavourful, Trinidad Capsicum chinense peppers breathe new life into an old favourite. These peppers are a uniquely flavoured habenero with an almost undetectable heat. Locally they go by the name pimento or seasoning peppers. To Trinidadians they are as invaluable as salt. We put them in practically everything we cook. We use them to 'season' meats, and a host of other dishes. Serve with a salad and for those indulgent moments a glass of white wine for dinner, or have a slice for breakfast. I usually make two pies and freeze one for later on in the month.You can use any kind of mild pepper that appeals to your taste and is available to you locally for this recipe. I have also made this using red and green sweet peppers and it's just as delicious. 			<title>Sorrel Drink (Trinidad)</title>

			<description>Not to be confused with the vegetable of the same name from temperate countries, sorrel is a favourite West Indian drink for Christmas and New Year. Actually its more of a spiced, iced tea, as the juice is drawn from the red sepals of the Roselle plant (Hibiscus sabdariffa) which is commonly called sorrel in the Caribbean.  
This drink is a favourite with children to whom the task of picking sorrel (removing the red sepals from the prickly seed) is often given. The drink is usually prepared in two batches with one batch being spiked with rum for the adults. The drink needs a lot of sugar to temper the tartness of the fruit but to my mind it should not be made thick and sweet, for then it becomes sickly and cloying although some like it this way, so feel free to vary the ingredient amounts to suit your taste. This is a trademark of Trinidad where crab and callaloo is the national dish. Served with rice, or macaroni pie, coo-coo or a selection of local root vegetables. Trinis have this iron rich soup at least once a week, usually on a Sunday. Good!&amp;quot; by Beverly Mills and Alicia Ross.  What a wonderful book!  This recipe is now one of my favourites.  The chicken is perfectly spiced, in my opinion.  I love the ease of preparation! You may need to increase the spice mixture though (if you like it thick like I do!).  I made up a batch of the spices and when it was gone, I simply made up another half recipe of it. It is Sooo Good,it's warm,creamy and a bit sweet.I Use Harina de maiz mas fina(A very fine cornmeal, Goya makes it)) so its  smooth not grainy.I have been searching for quite sometime but in wrong places, not thinking it was like mush but sweet :o(. I found a similar version of this on elboriqua.com.I hope you enjoy it as much as I have.
