Grilled Chicken Salad Tostada With Citrus Vinaigrette

Got the recipe from a relative that is a frequent caribbean host. ;) Enjoy! -- posted by Vseward (Chef~V)

Mojito Marinade

"The mojito, a Cuban cocktail, is made with rum, lime juice and fresh mint muddled with sugar at the bottom of a tall glass. We turned this refreshing idea into a brightly flavored marinade that works well with any light meat or seafood. Use on: Extra-firm tofu, shrimp, scallops, mahi-mahi, chicken, pork." EatingWell, May/June issoue 07. Below I have listed some marinating times for some of the meats, chicken & fish I thought you could use it on -- of course, with help from the magazine. Yield: 1-1/4 cups (computer won't accept any number that's not a whole one). -- posted by Manami

Puerto Rican Cabbage Salad

Cooking Light magazine, Aug. 2007. This from Olga Fuste who wrote "Diabetic Cooking for Latinos" published by the ADA. This recipe goes well with rice and beans and fish tacos according to the blurb in the magazine. A serving size is 3/4 of a cup according to the recipe notes.
Pat's Cuba Libre Highball

This is a fast, tasty highball that I love. I've been making these for years. In the 1930s, John O'Hara used to mention these in his novels. I'm sure that Ernest Hemingway drank a million of them! RC Cola works much better than Coke for this one. This is listed under "cocktails" but it's really a highball, only using one liquor.
Jerk Chicken - Fast, Easy and Delicious

We love spicy foods and tender juicy chicken. This recipe is great combination of both. If you have children, simply omit the Jerk Sauce from their portion. Keep in mind that you can make this recipe as spicy or as mild as you wish by simply adjusting the marination time or adding dry Jerk Seasoning to the marinade to kick it up. I love to serve my Garlic Fry recipe with this dish and a nice salad. Note that this recipe works great for boneless, skinless chicken breast and I have also used it on pork cuts. Prep time does not include overnight marination. -- posted by Humble Bee

Creamy Mango Sorbet

Wonderful dish that bakes in the oven. Doubles nicely & cooks unattended - good enough to serve guests. I like it spicier & greener - dried habanero (few seeds) & handfuls of parsley from the garden makes an especially nice dish.
Slow-Cooker Black Bean Soup

Cumin and fiery serrano chile infuse this simple soup as it cooks, and a dollop of sour cream provides a refreshing foil for the spicy flavors. For less heat, seed the chile first or use a milder pepper, such as jalapeno. You can also omit the chile altogether, if your prefer. You can soak the beans before you go to bed, then wake up and put everything together in the crockpot. You will have a hearty, satisfying soup that is low in calories and fat waiting for you when you come home from work. -- posted by JackieOhNo!

From the Caribbean island of St. John. It is best to choose plantains (not bananas) that are yellow with black spots (as shown in the picture), as these will be sweet and tender and will fry even more delicious!
