The Healthy Version of Going Bananas Bread

This is simple, fragrant and scrumptious. The crumb is dense and moist. It is really satisfying any time of day. Yummy!
One added note ladies and gents, you can up the bananas to 2 1/2 c and cut the sugar by half or use some splenda if that's your thing. I play with the recipe each time I make it! -- posted by AnnieCan

Raspberry Dressing (Vinaigrette), No Added Sugar

This dressing is so tasty that I could eat it with a spoon, but amazingly it is suitable for serving to the two in my family who are diabetics. You would never guess that it has no sugar added. I adapted this recipe from one I believe I originally found in Homemakers magazine. Serving size is calculated as 2 Tablespoons per serving, but that will depend on personal preference. -- posted by Sweet Baboo

Truly Low Carb Hot Cereal

This recipe was in a free booklet that I picked up at my local health food store. Credit is given to Karen Rysavy, and it apparently beats Keto's version hands down. I have never tried that brand, but I have to say I like this. Because it contains flaxmeal, I keep the mixture in the fridge, and just add some dried cranberries to the portion I am cooking. I make mine in a tall sided bowl in the microwave for about 2 1/2 minutes, but microwaves vary, so watch closely to prevent boil overs. The nutritional analysis with the recipe indicates 7g carbs, 4g fiber, 9g protein, 10g fat, 150 calories per serving -- posted by Sweet Baboo

Frozen Berry Meringue, Adapted for Diabetic Diet

I found this recipe in Fare for Friends, a cookbook published in 1983 to raise money for Interim Place, a hostel for abused women and their children.
Of necessity, I have made changes to accommodate a diabetic diet, but will give the original ingredients in parentheses. To further cut down on carbs and calories I usually just line a square serving dish with graham crackers (mine takes nine 2-1/2 inch squares) and eliminate the crust base, but if you don't have restrictions, by all means make the graham/nut base. The original recipe calls for strawberries, but I think any soft berry or fruit would work. -- posted by Sweet Baboo

Hazelnut Torte for Diabetic Diet

This is a quick and delicious recipe that I have changed to suit my family's needs, but feel free to use sugar in the cake, and the optional Mocha Filling and optional Topping which I shall include at the bottom if you want the standard recipe. I have also substituted 7/8 cup of almonds and 1/2 teaspoon almond extract successfully for the hazelnuts. If you prefer, you can use 3/4 cup of Splenda, and eliminate the fructose, but I think it helps with the structure of the cake. I guessed at the weight of the sugar-free instant pudding mix, and the Dream Whip envelope, but I think they are all a standard size...this filling can be used to frost a cake too...just refrigerate after you apply it. -- posted by Sweet Baboo

Banana Nutmeg Bread Pudding

This is my way to make a bread pudding. I started doing this years ago to use up the ends of the loaves that were ageing. Since it's (almost) fat free a lot of the goodness comes from the bread it's self so use good quality bread. This works with most other fruits as well (I don't suggest apples or berries). -- posted by Annacia

Margaret Atwood's Baked Lemon Custard Cake

This is a really neat recipe because, as the batter bakes, it separates into two distinctive layers — cake on top and custard on the bottom. It looks very impressive, guests will have no idea how simple it is to prepare! This custard/cake has a very bold lemony flavour. (It also works well with Splenda so can be modified for diabetics.) If you don't have individual ramekins, this can be made in a deep pie pan or an 8x8 baking pan. Margaret Atwood is an iconic Canadian author and the recipe was published in Bon Appétit (Jan. 2006). -- posted by blucoat

Buckwheat-Yogurt Banana Bread (Guilt-Free)

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain. -- posted by Génial Génie

Creamy Quinoa Mousse

VERY healthy dessert or breakfast. This is the kind of recipe where you like it or you don't... if you do, you're in for a treat (there'd no guilt, it'ts even good for you!!!). The texture is slightly fibrous, due to the quinoa. Can be served warm or cold, l prefer mine partially frozen (I place them in individual cups, then freeze for an hour). Adjust spices to your taste. You can sub the milk for soymilk (if using vanilla flavoured, omit sugar and vanilla from ingredients). -- posted by Génial Génie
