Pumpkin Muffins - Ibs Friendly

Living with Irritable Bowel Syndrome can really put a damper on your meals so I try to find interesting things to do as much as possible. These muffins have been adapted for the IBS diet, so think low fat! Original recipe was from www.helpforibs.com, I tweaked it just a bit. I used Demerera Sugar, but any brown sugar will do. Keep these muffins in the fridge or the freezer, the low fat content means they will go stale quite quickly. -- posted by TheMorningStar

( Though I enjoy starting soup in the morning on my days off, you can soak your peas overnight in cold water, but I don't recommend it for this recipe).
Country Butter from America's Dairyland

Received this from a friend who always brought a pot of this with her home-made bread whenever we had soup and bread suppers at church back in Spokane, Washington. Being a Wisconsin farmer's daughter, I was a bit put off by it NOT being totally a "real" dairy product, but the flavor IS delish, plus the calories and cholestrol saved are worth the "fake-ness" !! -- posted by Debber

Simple & Succulent Canned Whole Chicken

This is basically the recipe I use for all my canned meat. I grew up with no electricity so all our meat had to be canned or fresh. When any one shot a moose or elk it would be shared around the comminity (about 7 families) and the rest would be canned. Mom would go back to her family on the prairies and can all the old laying hens and bring them home. When my kids were growing up I canned chicken just for a treat.
PLEASE BE SAFE AND USE A PRESSURE CANNER FOR ALL MEAT! -- posted by Gran D

Although I live in Florida now, this is still a favorite on a chilly night. After shoveling snow on those cold New England winter days, this is the way Mama made it and had waiting for my brothers and me. We would line up our boots outside the door and run to the kitchen table in our stocking feet. Sometimes, instead of whipped cream, we would put a spoonful of "Marshmallow Fluff" on top.
Microwave Scalloped Potatoes

This came from a recipe book given to me by my grandmother-in-law. I like it because it cooks in about 1/2 the time of regular (oven) scalloped potatoes, and tastes basically the same. Great for weeknights when time is at a premium, or if you have no room in the oven. (Note, I noticed other recipes for scalloped potatoes call for cheese or other ingredients - this is scalloped potatoes like my mom used to make, basically just white sauce and potatoes. We always eat ours with lots of ketchup on top!) -- posted by Recipe Book Worm

Smoky BBQ Sauce

A great bbq sauce for chicken, ribs, steaks, etc. For when you need something in a pinch that's quick, delicious and simple. If you want to keep for a couple weeks, bring to boil, then simmer for 10 minutes on stovetop. Refrigerate in a sterilized glass jar. Otherwise, no cooking necessary. My dh also likes me to add a Tbsp of montreal steak spice or other seasoning, but its really not essential. -- posted by Chef #1028126

Hearty Hamburger Soup

Please bear with me as this is my first posting :-).

Monday night is always soup night in our home and I'm often looking for recipes that are not too complicated AND my kids will eat. As usual no one recipe quite did what I wanted, so combining ideas from others I came up with this recipe and my kids loved it. Great comfort food for rainy days or cold prairie winters. I add extra ground cayenne to my bowl, for an extra kick and it's health properties. :D

Serve with fresh, homemade bread or crusty buns.

This recipe is very adaptable, as Chef Gusteau says... “anyone can cook !” =D. Please be creative to suit your own individual tastes as well as what you have on hand and feel free to share with me your changes. -- posted by Shannon & boys

Neiman Marcus Oven-Fried Potatoes

Some dishes, such as fish and chips, call for fried potatoes; but deep frying is not the healthiest way to cook the humble tuber; and not my favorite task to do. With oven baking, much less oil is used and the potatoes are crispy--- just be sure to serve them immediately. This very simple, basic recipe from "Neiman Marcus Taste", is the best of the ones that I've tried. -- posted by lynnski / LA

Baked Sausage-Stuffed Jumbo Pasta Shells

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry. To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living.. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling.
Authentic Cafe' Con Leche (Coffee With Milk)

Posting for ZWT 5 as we zip through Spain so might as well make this educational AND entertaining: Coffee was once believed to cure consumption, dropsy, gout, and smallpox; AND--get this!--when mixed with milk--as in this recipe--coffee was believed to be a CAUSE of leprosy! Oh, no! I think we've proved through many years of not-so-scientific daily coffee-drinking that this is not true. Enjoy a cup and rest assured, you will not be leaving any body parts behind when you've sipped the last drop!
Parsnip and Celery Root Mash

These are two vegetables that are usually dead cheap at the market, but not enough people know what to do with them. The parsnips can be peeled and cut just like carrots, but the tough skin and larger size of the celery root (aka celeraic) requires a big knife. This is a favourite in my home, where we serve it as a substitute for mashed potatoes. I like a coarse mash and use a regular potato masher, but you can use a stick blender for a smoother purée. -- posted by Ginsugirl

Mennonite Cucumbers

I'm marrying into a Mennonite family, so I want to learn as many of the 'traditional' recipes as I can. We don't eat a lot of Mennonite dishes, but knowing about them is a great way to get immersed in the culture (and it gives me something to talk about with my fiance's grandma and her Church Ladies when I join them for coffee).

This is one of the first recipes that my MIL taught me, and it's by far the easiest to remember. Creamy with a bit of zing, this is a quick and easy side dish or condiment, best enjoyed using garden-fresh cukes. Amounts are estimated as this is pretty much a taste-as-you-go recipe, so make it to suit your own palate. -- posted by Stylin'Dog

Ultimate Garlic & Cheese Bread!

This is a super easy, always delicious recipe for garlic bread with a twist.

I got the idea for this recipe when eating out one evening, but developed it on my own.

The nice thing about this recipe is that I often use it when I have some bread or buns which tastes a little too stale for sandwiches - so it's a great way to use those extras. If you're going out to buy the ingredients, check the "day-old" rack at your grocery store!
The bottled minced garlic can be found in grocery store's condiment aisle. Fresh minced would also work, but I don't recommend dried since the cream cheese overpowers the taste.)

It's a great appetizer, snack or side dish for a meal (especially anything with tomato) and even the pickiest eaters in my family love it. It's always the first thing gone at family functions! -- posted by Travelling Journal

This was inspired after I made carrot pudding for the second time ever, my DH's favorite holiday dessert, and his need for rum sauce to pair with it, the classic pairing of rum and raisins. It's so popular that i have to make a double batch everytime . -- posted by Katrilla

Bacon Cheddar Potato Tart (Michael Smith)

This recipe is by a Canadian chef who I really like - Michael Smith. It contains only 3 ingredients (plus S & P!) and it's gorgeous to look at! Easy to make and would be great for breakfast, brunch, lunch or dinner. It's not the healthiest thing to eat - it's just good ol' comfort food. It takes a long time to cook, so plan ahead. Enjoy! -- posted by Nif

Three-Ingredient Sticky Baked Chicken

From the Canadian Family Website: Sticky, sweet with a little savory soy sauce, this chicken is pure yummy. Destined to become a family favorite because kids love it and parents love the simplicity of this oven-to-table meal. I had a great result making this with bone in chicken leg thigh quarters. I had one piece that was skinless, and we discovered that using skinless does allow the flavor of the glaze to permeate the chicken better. This was a hit with my whole family - including my hard to please 3 year old.
I used ketchup, reduced sodium soy, and lite maple syrup. Ingredients I happened to have on hand. This could NOT be easier. Adjust cooking times as needed for bone in cuts. Great with white rice and steamed broccoli.
This recipe is so simple that you will probably have this assembled before your oven is preheated. -- posted by Linda Sue
