Cheap and Easy Sausage Casserole

This is a really economical meal that's quick to prepare. You can experiment with different types of sausages but I have found that the plainest, cheapest ones work the best as they absorb the flavour and don't overpower the other ingredients. -- posted by Newiegirl

Owens Sausage and Ground Beef Backyard Burgers

This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef. -- posted by Texas Aggie Mom

Carne Asada With Black Beans

At Frontera Grill in Chicago Chef Rick Bayless serves this classic dish that combines grilled marinated steak, fried plantains, homemade black beans & fresh guacamole. The easy way - trim back the ingredients in the marinade and use canned black beans served with avocado slices. Food & Wine Magazine, July 2008 edition. The ancho-chile marinade can be made up to a week ahead. The cooked black beans can be refrigerated up to 2 days ahead or on the spur of the moment - open up cans of cooked black beans & rinse them real well! The marinade needs to season the rib-eye steaks overnight. When we made it we served the guacamole; a dollops of sour cream and fried ripe plantains. Delicioso :) -- posted by Manami

Tin Foil Stew

From my Girl Scout camping days. Our girls, especially when younger, loved to make this dinner because they could each make their own little foil packet and "customize it" to their own taste. At first, we had to encourage them to put in the onion, even if they didn't eat it, so it would flavor the rest. They usually agreed. Along with some Hawaiian rolls and butter, this was a satisfying meal. -- posted by Donna Matthews

Cranberry Chicken Rice

This recipe was the one that started my trail cooking website - and convinced me to write my first trail cookbook a couple years ago. Taken from my book 'Freezer Bag Cooking: Trail Food Made Simple'.
You can prepare it two ways - either in a hikers cooking pot or in a quart sized freezer bag. I listed the one pot method here. For the FBC way, put your dry ingredients in the bag and add the hot water/chicken. Stir, seal tightly and insulate for 15 minutes, then fluff and eat. -- posted by Trail Girl

Chicken Gyros

The quintessential Mediterranean street food--I lived off these as a student in Malta, and I've been tweaking my recipe to match the flavors I remember. I think I finally nailed it down!

Note, please: It is important to use GOOD lemons, because if your lemon juice isn't top notch quality, this just won't be as good. Also try to use fresh pitas (either from a deli or make your own!)--old pitas aren't as flexible and won't be as easy to work with. Prep time does not include overnight marination/sauce making time. -- posted by damienducks

Curried "chicken" Salad

My girlfriend modified this vegan chicken salad recipe from Robin Robertson's "Vegan Planet" by using tofu instead of tempeh. Can easily be made more accessible to non-vegans by using ordinary mayonnaise. I imagine this would be great with actual chicken in it as well in place of the tofu.
Lasagna Style Pasta Dish

Like those boxed kits they sell "ready to go." Throw together in 5 minutes and toss in the oven. Not nearly as good as real homemade lasagna, but a decent meal in its own right. You could easily toss some precooked ground beef into it, or use a hearty leftover homemade pasta sauce.

I think it would be good to keep the ingredients on hand 'just in case.' Add a canned vegetable as the side, and you have a complete meal with the only perishable item being the cheese. -- posted by Japan bound

Pumpkin Sloppy Joes (Low Fat)

What a great fall harvest meal! Recipe from Taste of Home, so you know its good. States that this is a low fat meal for two and they recommend topping them off with pickles and eating with a side of carrot sticks and celery sticks to stay with the low fat theme. At our house, we usually serve sloppy joes open faced on just one piece of bread to decrease the carb content. . .just an idea :) -- posted by JanuaryBride

Chipotle Fish Tostadas

From: The Spice is Right. Text and recipes by Kathryn Jessup| From the November 2008 Issue of Coastal Living Magazine. Chipotle Fish Tostadas call for mucho garlic in addition to chipotle chiles. Along Mexico's Gulf coast, brave cooks fry spicy dried chipotle chiles in oil. Here, we used milder canned chipotles en adobo, a chile-vinegar sauce, but they still pack a punch. This is not to be confused with my recipe #333562!:) -- posted by Manami

Pizza Pocket and Calzone Dough

This dough is simple to make and has a slightly sweet taste. The kids love making their own pizza pockets, and I love using leftovers to make calzone type sandwiches. Make some up for dinner, or choose fillings that freeze well and you can make a bunch to have on hand for lunches and picnics. *Note: this is a sticky dough to aid in pinching the pockets closed. Adjust flour as needed to work with it.

Isis’ Grand Canyon Veggie Spaghetti

Every year I do a group backpacking trip to the Grand Canyon.
This is my preparatory recipe for one nights dinner for 10 happy campers.
I'll update this after our trip in March with group notes or any changes made to the recipe. I would like to thank William (Uncle Bill) Anatooskin recipe #21960 and my mom for giving me a launching pad to create this. NOTE: All of the vegetables used are in there DRIED diced form, and the prep time does not include soaking time. P.S. THE POSTED NUTRITIONAL INFO IS WRONG. I estimate that this comes out to just over 450 calories per person of food and for those backpackers out there I think that this is about 3 1/2 lbs for 10 serving dinner. This is a back packing meal, so don't attempt this recipe with fresh ingredients in these quantities, it will not taste good. -- posted by isispleiades

Chili Dogs

Just cover the franks with any extras you like, such as mustard and onions, then ladle on this super sauce. I found this recipe in Taste Of Home Quick Cooking 2005. I posted this for safe keeping before my family tried it. I have to agree with reviewer there is not a whole lot of flavor for all the seasonings. I even doubled the onion powder, garlic salt, and ground mustard. I added 1/2 tablespoon brown sugar and 1/2 teaspoon salt. This just still didn't due anything for the flavor. Overall this is a thick sauce. -- posted by internetnut

Spiced Lamb Kebabs

Adapted from a recipe in Michelle Trute's 'cooking with conscience'. All the recipes in this book are low fat, low-moderate GI and easily prepared. This recipe is moderate GI and low in fat. She includes no salt in this recipe but I have included sea salt below as optional as I know for many this is an essential ingredient. If rosemary branches are unavailable, use wooden skewers soaked in water and add rosemary to the lamb just before threading it onto the skewers. I have also included sage as I love rosemary and sage together. Michelle Trute recommends marjoram, mint, rosemary and sage with lamb and recommends using herbs rather than salt. I have also posted Michelle Trute's Recipe #349024. 800g = just under 26 ounces. -- posted by bluemoon downunder

Teriyaki Marinade

Years ago I was given a recipe for homemade teriyaki marinade by a friend from Hawaii. The recipe was rich, flavorful, and surprisingly easy to make. I regretfully somehow misplaced the recipe over the years. Now that I'm married and back in the kitchen, I'm cooking more and a lot more from scratch. I've tried to recreate the recipe I had years ago and think I've done a pretty good job. Preparation time does not include two hours in refrigerator to marinate meat. Hope you like it. -- posted by I <3 Cookbooks

Make-Ahead Burritos

I needed to use up some leftover chicken, and I didn't want to feel like I was "eating chicken again". It was the fastest burrito I've ever made, and I'm going to freeze the leftovers individually. Who needs to purchase frozen burritos when you can make your own with ingredients you have on hand. The only thing I did differently is I used around 7 ounces of green chilies and instead of the burrito seasoning mix I added my own seasoning (fresh cilantro, garlic, cumin, and chili powder).
Croatian “cobanac” Stew

“Cobanac” is kind of goulash sheep and cow-boy’s used to eat while watching their herds. You eat it with a spoon, so the pieces inside has to be bite-size. It is traditional meal from Slavonia (eastern part of Croatia)and people from there are very proud of it. They have annual “Cobanac festival” where there is competition in making cobanac. They cook cobanac in large bronze pots on tripod over open fire. Of course, everyone will tell you that their stew is the best one. This is how I do it. (I know someone here on Zaar would be against horse meat, but, if you really want to enjoy the taste, use horse meat.) -- posted by nitko

It is fabulous w/Luvs2Cook Recipe# 116185 Sweet Cornbread. -- posted by Tallie in Pacific NW
