Crunchy Spice Granola

The best source that I know of for most of the ingredients in this recipe is Whole Foods Market, but you should be able to find them in other health food stores or better supermarkets. You can be fairly flexible about the amount of nuts and dried fruits, but remember, they provide most of the good flavor; the more fruits and nuts you include, the better it tastes, the more rolled oat, the cheaper it is to make. This recipe makes a real big batch, but it can be halved if desired. It keeps well. This can be a very expensive recipe, but I still think it is worth it !!! A little goes a long way! -- posted by Toby Jermain

Fruit, Honey and Coconut Energy Bars

Why pay almost $3 or $4 for an overpriced box of trail mix-style bars when you can make your own easily? A 6 ounce bag of puffed brown rice cereal goes for 80 cents at our local supermarket, and 6 ounces is a lot of puffed rice! You can use natural, low-sugar or low-fat peanut butters, use raisins instead of dried cherries or substitute chocolate or carob chips for the coconut (or include everything you can!). In addition to the sunflower seeds, I like to add sesame seeds for extra crunch as well. -- posted by EdsGirlAngie

A little bit sweet, a little bit fresh and invigorating. Adapted from a higher-fat recipe (this cuts the fat in half with no loss in flavor). It is a somewhat "dry" granola, due to the low amount of oil.
Good-For-You Granola Bars

These bars are full of nutritious foods, including "good fats" in the flaxseed meal and nuts. I've been experimenting with granola bars after trying Kittencal's delicious recipe #77200--trying to find something that tasted that good but was good for you too. This is as close as I have come so far. :) They are still a little crumbly but have good flavor. You can substitute any nut-butter, nuts, seeds, or dried fruit that you have on hand.
Molasses Maple Granola - Big Batch! (Can Be Reduced!)

Got a craving for blackstrap molasses...high in calcium, iron & potassium. Got to thinking about the molasses horsefeed we used to dig through to find lumps of oat & cracked corn covered molasses to knaw on ...MMMmmmmm...Therefore made this big batch up for self-serve breakfasts while travelling on contract (& to know DH will not be looking for the super saturated sugary cereals in my absence - LOL). After thoroughly cooled, I bag in gallon freezer bags & freeze until wanted - I fill bags about 1/2 full & express as much air as possible before freezing.
Blackstrap is a robust taste & I am sure a lighter grade would work well but not be as nutritious. I would also increase salt to 1 teaspoon if using a lighter grade molasses. The nuts are purchased raw, not preroasted if possible.
I like to use sultanas, raisins, currants, chopped dates & figs, dried blueberries or cherries, depending on what I have onhand. -- posted by Buster's friend

Porridge With Apples

A recipe we made up while bicycle touring but it would be good while camping or at home too. The apples help make the porridge more interesting when you don't have brown sugar to hand. We have tried adding bananas too but they are best just sliced on top of the porridge, not cooked along with the oats. -- posted by Sackville

Apple Cinnamon Granola

I adapted my own version of this from 3 or four other recipes. I wanted a low fat, low cal granola so this is what I came up with. This version isn't real sweet but it has an excellent flavor. I wanted my granola pretty crunchy so I left it in the oven for almost 90 minutes. The only thing is, you have to keep a close eye on it or it could burn. For the first 60 minutes I stirred it every 10-15 minutes. For the last 30 minutes I stirred it about every 5. -- posted by Lacy S.

Skiers Swiss Cereal (Rainy Day Breakfast)

I found this in a Diane Mott Davidson mystery book. It is SO easy and flavorful, put it together the night before then cook it on the stove top in the morning. Never a big fan of porridge or oatmeal, this one changed my mind. I use all sorts of different fruit depending on mood and what is at hand. Apples, blueberries, or banana along with the mentioned dried cherries work perfectly. As do raisins and nuts.

The sitting overnight lets the fruit flavor permeate the oats and milk and you end up with ambrosia. hmm coconut would be good to try it with as well. lemon or lime zest? the combinations to taste are endless. *runs for my pantry* -- posted by MarraMamba

Moldovan Chickpea Pudding

This dish was described to me by a user at RecipeZaar, and after much thorough searching and being unable to find anything resembling it, I decided to go ahead and make it on my own. She said, “My grandmother, from near Kishinev (now Moldova), occasionally made a sweet mashed garbanzo dish when I was very young… It was mildly sweet and could have had a small amount of cinnamon. The texture was like refried beans. There were no eggs, and it wasn't a dessert. It could actually have been for breakfast.” The below is how I made it, and it’s absolutely delicious! I’ve tried it both cold and warm, and it’s excellent both ways. It would make a great breakfast, or a nice snack.
Bill's Favorite Granola

Yummy granola made with whatever I have on hand at the time! Basic recipe from Ina Garten, but I toss in all kinds of fruits and nuts. Our friend Bill cannot keep his hands out of it and I always send him home with a bag to snack on! The first time I made it, it looked like alot so I used 2 sheet pans! Big mistake! Just pile it on one, and do not overbake it...it will seem "soft" when you take it out, but will "crisp up" as it cools! I bag it up in snack size servings,...and larger bags for Bill! Freezes well, and great on yogurt, ice cream, cereal or just out of hand. -- posted by bestbema

Black Raspberry Granola Bars

I like my granola fruity and nutty but not too sweet. A square or two of these is a hearty breakfast on the go with plenty of protein for staying power. Go ahead and try other jams/preserves if you want to vary the flavors. If you prefer not to use the brandy I suggest apple juice. However it will make the recipe sweeter. -- posted by 3KillerBs

Chewy-Ewwy Granola Energy Bar

This is a modified energy bar from Mollie Katzen's Protein Bar recipe, found at {http://www.fabulousfoods.com}. I try to steer clear from dairy as often as possible and it was tough finding a granola/energy bar recipe that didn't use milk or yogurt. So I kinda took what I liked from this recipe and left what I didn't and added a few other things. It's a really great tasting bar that is egg-free and dairy free (except for the chocolate chips, use carob chips instead or just omit them altogether if you want a truly vegan bar) and packed with nutrition. They're pretty sweet so if you like a less sweet bar use less sugar, choose a less sweet nut butter, and/or substitute dried fruit and chocolate chips for nuts and carob chips. Eat one fresh out of the oven then freeze the rest in freezer zip-bags. Just make sure to defrost or warm them before eating. They're great for breakfast, gym snacks, workday pick-me-ups, and even after-school snacks (I'd bake them in a cookie shape for the latter purpose). -- posted by Annie Made

Breakfast On-The-Go

A complete grab & go breakfast or snack. You've got ingredients from all 4 food groups and the recipe is easily customized to your family's preferences. I like to reduce the flour and add wheat germ, ground flax seeds, I often add poppy seeds, the combinations are endless. I usually replace chocolate chips with nuts. Other times, I use dried cranberries & dark chocolate chips. I suppose you could also replace the cream cheese with peanut butter, yoghurt, or jam. You could also add cocoa. You'll probably choose to adjust the ingredients according to the type of cereal you are using (some already have dried fruit and/or nuts)I find they taste best the next day. -- posted by Génial Génie

Make healthy Granola to use in trail mix or over yogurt for a healthy breakfast...in your breadmaker! I use about a 1/3 cup scoop of this over about 1/3 cup - 1/2 cup plain natural yogurt for my breakfast every day.
Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Our Favorite Granola

I started making granola in college, though it was much more plain then. Years intervened when I didn't make granola, then when my daughter started buying a local specialty version I decided to dust out my old recipe and update it. I thought it would take several tries, but my family liked this first one so much, we've stuck with it. I like doing this as a large batch - fills up my jelly roll pan 3 times - keeps well. It is a very adaptable recipe - friends of mine have substituted nut butter for part of the honey, for instance. -- posted by Chef #750419
