Dorsel's Goetta Variation No. 2 (Crock Pot)

Goetta is something like "Scrapple" that's not so greasy. It may be a German dish but in the U.S., it is very popular around Cincinnati, Ohio. Most folks I know eat it as an all-in-one breakfast dish with either syrup, gravy, or melted butter on it. The Dottie Dorsel Pinhead Oatmeal Company sort of set the standard for the recipe and this is a slightly modifide entry of their "alternative version" (non-onion version) of Goetta. -- posted by Bone Man

Ridiculously Easy, Utterly Delicious Egg Sandwich

I like breakfast food. But I HATE cooking before breakfast. This egg sandwich is easy enough for a half-asleep cook on his/her first cup of coffee to make and tasty enough to be worth cooking before breakfast. Note -- Because this is so simple the choice of bread will make a big difference. I suggest a good rye, an Italian, an artisan or homemade white, an artisan or homemade wheat, or other preferred, flavorful variety rather then ordinary, sandwich white. Kids love this. Diabetics love this if you use low-carb bread. -- posted by 3KillerBs

Morning Fiber and Protein Muffins

Nobody EVER believes what these are actually made of. My dad thought they were cinnamon-carrot muffins with cream cheese icing by the smell and my mom gobbled 3 out of the pan before they were cool enough for me to remove! Regardless, these muffins are REALLY high in both fiber and protein and low in fat which makes them the ultimate breakfast-on-the-go food! Made with fruit rooibos tea as I make them, these muffins also pack a powerful morning antioxidant! -- posted by rayedee8

Apricot Pancakes

Another fruity breakfast treat. The nutritional punch of oatmeal, apricots, and walnuts is loaded into a recipe so tasty that no one will notice how healthy it is. Serve with butter and syrup in the traditional way or try spreading them with softened cream cheese instead. Freeze the extras to reheat in the microwave and you’ll have a hot, delicious breakfast a lot faster than waiting in line at the drive-thru. Or hand them to the kids cold for an on-the-go, in-the-car start when time is short. -- posted by 3KillerBs

Loaded Scrambled Eggs for a Crowd

My DH loves this. I hate to cook before breakfast but sometimes I make it for him, and the rest of the crew, because I love him. The ingredients are a little variable so don't hesitate to make substitutions if you'd rather use smoked turkey instead of ham or green peppers instead of spinach. Pre-cooked meat and veggies take some of the drudgery out of cooking before you've had your second cup of coffee. ;) -- posted by 3KillerBs

Moldovan Chickpea Pudding

This dish was described to me by a user at RecipeZaar, and after much thorough searching and being unable to find anything resembling it, I decided to go ahead and make it on my own. She said, “My grandmother, from near Kishinev (now Moldova), occasionally made a sweet mashed garbanzo dish when I was very young… It was mildly sweet and could have had a small amount of cinnamon. The texture was like refried beans. There were no eggs, and it wasn't a dessert. It could actually have been for breakfast.” The below is how I made it, and it’s absolutely delicious! I’ve tried it both cold and warm, and it’s excellent both ways. It would make a great breakfast, or a nice snack. Give it a try! -- posted by Julesong

Wicked Excellent Granola

I arrived at this by trial & error, picking my favorite parts from many existing granola recipes and adding stuff on my own.

This will fill your belly & clear out your arteries.(chant with me: fiber..fiber...fiber...)

Feel free to use different nuts and/or dried fruit. But the crytallized ginger really makes it special. ;)

This recipe makes a LOT - good for a crowd but it also keeps for a long time in an airtight container (or 2). This is wicked tasty. (said in my best Maine accent, lol) Enjoy! -- posted by Elmotoo

Bill's Favorite Granola

Yummy granola made with whatever I have on hand at the time! Basic recipe from Ina Garten, but I toss in all kinds of fruits and nuts. Our friend Bill cannot keep his hands out of it and I always send him home with a bag to snack on! The first time I made it, it looked like alot so I used 2 sheet pans! Big mistake! Just pile it on one, and do not overbake it...it will seem "soft" when you take it out, but will "crisp up" as it cools! I bag it up in snack size servings,...and larger bags for Bill! Freezes well, and great on yogurt, ice cream, cereal or just out of hand. -- posted by bestbema

Linda's Awesome Home Fries

I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were AWESOME!

I splurged and had them with fried eggs and toast for a DELICIOUS weekend breakfast.

GREAT flavor and just a little spiciness from the seasoning. They are REALLY good! I cooked these on med-high, and from the starting of peeling the onion to putting them on my plate was 45 mins., so if you cook them on high it is going to take less time, and if you cook them on med. it's going to take longer. Med-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a lg. cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :) -- posted by Linda's Busy Kitchen

Hearty Homestyle French Toast

Traditionally, French Toast was a way to turn bread that was going stale and an insufficient supply of eggs into a hearty, hot breakfast. My Dad's farm-derived recipe isn't sweet in itself. Sweetness comes from the syrup or jam on top. OR you might serve it with sausage gravy or milk gravy made from fried ham for a savory flavor instead. This recipe makes enough for a crowd or it can easily be cut down for a smaller group. -- posted by 3KillerBs

Korean Pancakes

I was looking for a healthy, MILK FREE pancake recipe that tasted good and was fairly easy when i stumbled across this recipe in the Better Homes and Gardens magazine (January '06)
Best eaten pretty much as soon as they're cooked. You can keep them warm in the oven on a low heat for up to about five minutes though.
Apparently they are commonly served for/with lunch in many Korean households and eateries. You cam make them in large rounds for individual servings, or cook in tablespoon measurements to make delicious snacks passing around with ice-cold drinks at barbecues, camps etc., they do make a great energy providing breakfast though! -- posted by Chef #765277

Black Raspberry Granola Bars

I like my granola fruity and nutty but not too sweet. A square or two of these is a hearty breakfast on the go with plenty of protein for staying power. Go ahead and try other jams/preserves if you want to vary the flavors. If you prefer not to use the brandy I suggest apple juice. However it will make the recipe sweeter. -- posted by 3KillerBs

Healthy Cowboy Cookies

I fell in love with a recipe for Cowboy Cookies that I found on this site, and figured that a couple of cookies with a glass of milk would make a pretty good breakfast except for the high amounts of fat and sugar.
In an effort to reduce the "bad" calories and increase the nutrition, I replaced some of the butter with an equal amount of beans, (I know it sounds weird, but you really cannot taste them), I reduced the sugar some, I switched to whole wheat flour, and increased the nuts so that 2 cookies would have half of a daily serving of nuts. If you want more of a dessert cookie increase both sugars by 1/4 cup.
Note: This recipe is still a work-in-progress. It tastes fine, but there is too much leavening in it for my tastes. As soon as I figure out what the correct amount is, I will update the recipe. -- posted by MistyCat82

Chewy-Ewwy Granola Energy Bar

This is a modified energy bar from Mollie Katzen's Protein Bar recipe, found at {http://www.fabulousfoods.com}. I try to steer clear from dairy as often as possible and it was tough finding a granola/energy bar recipe that didn't use milk or yogurt. So I kinda took what I liked from this recipe and left what I didn't and added a few other things. It's a really great tasting bar that is egg-free and dairy free (except for the chocolate chips, use carob chips instead or just omit them altogether if you want a truly vegan bar) and packed with nutrition. They're pretty sweet so if you like a less sweet bar use less sugar, choose a less sweet nut butter, and/or substitute dried fruit and chocolate chips for nuts and carob chips. Eat one fresh out of the oven then freeze the rest in freezer zip-bags. Just make sure to defrost or warm them before eating. They're great for breakfast, gym snacks, workday pick-me-ups, and even after-school snacks (I'd bake them in a cookie shape for the latter purpose). -- posted by Annie Made

Bean and Egg Breakfast Burrito

Oh my goodness, these burritos turned out so good. I invented this recipe last night wanting to prepare breakfast burritos for my husband and grandson. It was getting late, so I wanted to fix something quick and easy but tasty. These filled the bill perfectly. I'd like to add here that I needed to prepare these without being spicy. If I'd been making them for me and my daughter, I would add some of several possibilites such as chopped green chilis, salsa, onion, garlic; any number of options you can think of. I'll write up this recipe as I prepared them, but add whatever you like - go wild! I believe these burritos would be perfect for OAMC. -- posted by Happy Hippie

Whole Grain Pancakes That Don't Taste Like It!

Chewy Honey Almond Energy Bars

These ingredients are what I normally have on hand, but feel free to substitute or add other nuts, seeds or dried fruit such as dried cranberries, cherries, shredded coconut, toasted oats, etc. These are packed with protein (and calories), and are great for athletes, or anyone who needs a hit of energy! The bars are soft and chewy, but the more ingredients you add, the firmer the bars will be. -- posted by Procrasti-baker

Design Your Own Granola Bars

I have not tried these bars. I'm posting this for safe keeping. I found this recipe in Bake The Best Ever Cookies kids cookbook. Sarah Says: After you have made this recipe a few times, try designing your own granola bars by adding other dried fruits, nuts, and even candies to the basic recipe. Don't like walnuts? Try adding dried cherries or peanuts instead. -- posted by internetnut

Breakfast On-The-Go

A complete grab & go breakfast or snack. You've got ingredients from all 4 food groups and the recipe is easily customized to your family's preferences. I like to reduce the flour and add wheat germ, ground flax seeds, I often add poppy seeds, the combinations are endless. I usually replace chocolate chips with nuts. Other times, I use dried cranberries & dark chocolate chips. I suppose you could also replace the cream cheese with peanut butter, yoghurt, or jam. You could also add cocoa. You'll probably choose to adjust the ingredients according to the type of cereal you are using (some already have dried fruit and/or nuts)I find they taste best the next day. -- posted by Génial Génie

Sausage Breakfast Muffins

I wanted to come up with a filling breakfast with sufficient protein that my fiance could take on the go or my boys could have before school. Going off a breakfast casserole recipe, I completely modified it to make these hearty, energy filled muffins. I am going to work on a healthier version next go around, using ground chicken.
*These freeze well.
*Could be baked as a casserole in a 9 x 9 pan. 350 F for approx 1 hour.
*Use glass, ceramic or best choice, stoneware pans. Metal pans turn the bottoms too dark. -- posted by Shannon & boys

Everyday French Breakfast- Baguette and Jam With Chocolate Milk

I lived in Paris for 4 months and in Valladolid, Spain for 6 months as a student and in both cities, the traditional everyday breakfast was this (although some adults have black coffee rather than chocolate milk!). In Spain I lived with a local family and everyone had a variation of this breakfast each day. It really hits the spot and with some fruit it is a well-balanced breakfast. This is a great way for kids to have fun learning about other parts of the world and works well with a class of schoolchildren. I haven't specified amounts for the toppings as that's all down to personal taste. -- posted by Shuzbud

Yogurt Honey Health Mini Muffins

This recipe comes to us courtesy of the Renegade Lunch Lady Chef Ann Cooper and her book Lunch Lessons: Changing the Way We Feed our Children. The addition of yogurt not only makes these muffins moist, but helps them stay fresh in an airtight container for up to three days and still taste wonderful. If cake flour is not readily available, all-purpose flour can be substituted. The muffins will be slightly denser, but will taste just as good.
Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Dutch Oven Camping Breakfast Love

Not the most descriptive recipe title, perhaps, but this is what my friend calls it and I like the name, so there you go. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. Note that preparation time consists mostly of letting the fire mature. -- posted by Da Huz

Mommy's Instant Oatmeal

After making instant oatmeal from packs and trying to adapt the quick oats for years, I finally created this basic high octane (fiber & protein) recipe to fuel our mornings. To accommodate changing tastes and my desire to experiment I mix and store the basic recipe. The desired add-ins are mixed when I serve the cereal. The recipe can also be increased to accommodate OAMC. -- posted by TeresaD

Our Favorite Granola

I started making granola in college, though it was much more plain then. Years intervened when I didn't make granola, then when my daughter started buying a local specialty version I decided to dust out my old recipe and update it. I thought it would take several tries, but my family liked this first one so much, we've stuck with it. I like doing this as a large batch - fills up my jelly roll pan 3 times - keeps well. It is a very adaptable recipe - friends of mine have substituted nut butter for part of the honey, for instance. -- posted by Chef #750419

Scrambled Egg Wrap

I am saving this one for our next camping trip, but this is also a great recipe for a quick, filling breakfast or light lunch. This recipe is very versatile and you can add any herb or vegetable to the eggs or as a topping. Suggestion -green onions, hot sauce, tomatoes etc -- posted by Deantini
