Trees and Snow

A childhood favorite. Okay, we loved broccoli any way you served it, but this was a lot of fun. You can, of course, serve the "snow" with other veggies, but then it wouldn't be snow, would it? Because snow goes on trees. It's not quite as nummy with raw trees, but still pretty good, so that one's up to you. The broccoli-cooking method works well with most veggies (just adjust acidity and sweetness to taste). You may want to add a pat or two of butter if you're not using snow with it.

Herb-Roasted Turkey With Maple Gravy

This recipe was created by Lee Hefter of Spago Beverly Hills. He explains in his Spago Family Thanksgiving article that adding maple syrup to the gravy makes it go better with all the traditional Thanksgiving side dishes.

Cooking Tips: Roast the bird for 20 minutes per pound for a stuffed turkey and 16 minutes per pound for an unstuffed one. The bird is done when an instant-read thermometer inserted in the thickest part of a thigh registers between 160° and 180° and the juices run clear. Remove the turkey from the oven when its temperature is 10 degrees lower than desired as the temperature will rise as the bird rests.

You’ll need plenty of turkey stock or canned low-sodium chicken broth and roasting pan juices to make enough gravy. To get lots of pan juices, roast your turkey at 350° and baste with some stock; if the bird does not seem to brown adequately, you can always raise the oven temperature during the last half hour for faster browning. If your gravy is too thin, simply make a smooth paste with equal parts flour and unsalted butter, a mixture known in French as beurre manié (BURR mon-YAY). Bring the gravy to a boil and whisk in bits of the paste until you get the thickness you desire. If your gravy seems too thick, gradually whisk in more stock. -- posted by NcMysteryShopper

Jim's Burgers

This was a specialty of my Grandfather's. I've loved them my whole life, and now my husband and son love them, too. For extra kick, use Pepper Jack instead of plain Monterey Jack cheese. Prep and cooking times are estimates, since I don't time myself and cooking time depends on desired doneness. Time doesn't include heating grill. -- posted by Halcyon Eve

Chicken & Noodles

A one pot comfort food meal. Very easy to make with minimal ingredients. If I'm out of ideas for dinner and ask around, chicken and noodles is usually suggested. My Mom made this when we were kids, now my daughter makes it for my grandson. He always says, "More noodles, please." and slurps some more down. P. S. I've even started cooking the chicken frozen in the broth. It eventually thaws out. -- posted by Chef Grandma Fran

Fiesta Black Bean Quesadillas

I found this on a healthy lifestyle website somewhere and adapted it to our taste. They were very good and filling. I made a triple batch of the salsa and a double batch of the quesadillas, as the recipe is more of a snack or lunch size serving. The salsa was good on the quesadillas, but I think it could use some additional seasoning. I'll likely play around with it and update it here if I like the results. -- posted by Halcyon Eve

Pear Banana Bread

A nice change from regular banana bread--it's super moist and the pears really boost the flavor. I developed this by combining the best elements of banana and fruit bread recipes. As one of the reviewers discovered, this recipe doesn't work with hard pears--they have to be soft so they can be mashed in with the bananas to form a puree. Also, this can be cooked more quickly in a muffin tin (about 20 minutes). -- posted by Picholine

Grandma's Chicken Enchilada Casserole (Lighter Version)

My mom got this recipe from her mom, and passed it on to me. I've since lightened it up a bit (you can further lighten it by replacing the cheese with lowfat cheese--I just don't like lowfat cheese). I loved this recipe growing up, and my family loves my lighter version. I usually make it after roasting a turkey with some of the leftover turkey meat--it's just as good with turkey as with chicken! Leftovers reheat fine for a day or two, but it doesn't freeze well. You can adjust the heat by using hotter or milder salsa, and replacing the mild chilies with spicy chilies if desired. -- posted by Halcyon Eve

Chasen's Shirley Temple Cocktail

In it's 59 years as a Hollywood celebrity hangout, Chasen's had ample time to develop recipes for special clients. However, Shirly Temple was one of only two people who had a recipe from Chasen's named for her. The story behind the drink is that Shirley, at the height of her fame as a child star, came to the restaurant with her parents, who were having a before-dinner cocktail. Shirley wanted one of her own, so the bartender concocted this one for her. Non-alcholic cocktails have been named "Shirly Temples" ever since.
This drink is served in a highball glass with ice, and garnished to look like a cocktail; and served with a straw. Other sodas can be substituted, such as a lemon-lime soda. Information from the archives of the Los Angeles Library. -- posted by lynnski / LA

Homemade Apple Crisp or Apple Crumble

This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate. -- posted by Humble Bee

Baked Potato Soup

This soup is satisfying without being heavy and leaving you in carb-coma. It is rich, creamy and filling. Occasionally, I have been known to sprinkle a few fat free croûtons on top for added texture and crunch.
Garlic Fries - the Real Deal

Living in California, I have tried every garlic fry out there and they all have too much garlic, too much/not enough salt or they are dry on the inside and lack the crispy crunch on the outside. Here is a better built Garlic Fry that leaves you satisfied without the all the fat and calories of the traditional version. Please note that fresh garlic should be used, as the jarred versions will overpower this recipe immensely. -- posted by Humble Bee

Tomato Basil Bread - by Hand or Bread Machine

This breads' chewy crust pairs well with a steaming mug of soup. The pretty color and robust flavor are a great pairing with chicken or turkey cold cuts or a summer tomato sandwich. I use this basic recipe in my bread machine using the dough cycle; following my bread machines instructions. I then bake it in the oven. I also omit the red pepper flakes and, at times, omit the Parmesan cheese and replace it with an additional 1/4 cup of flour. Be careful and add additional flour a little at a time depending on the humidity in your kitchen. -- posted by Humble Bee

Grilled Blue Cheese Butter Burgers

For this recipe you will need Recipe #316743. I have been struggling with a way to make blue cheese burgers and not have the blue cheese fall out while I was stuffing the hamburger. I finally thought about making a compound butter and it works fabulously, not to mention the incredible flavor and moisture that is added to the meat. Doing it this way makes it very easy to assemble the burgers, as well as keeping the burgers from having 'blue cheese blow out' while cooking. You can make these on the stove top, broiler or on the BBQ grill. I strongly recommend the BBQ grill because the flavors are just incredible when a charcoal grill is used. -- posted by Humble Bee

Thick and Chewy Chocolate Chip Cookies

Published January 1, 1996 from Cooksillustrated.com: These truly chewy chocolate chip cookies are delicious served warm from the oven or cooled. To ensure a chewy texture, leave the cookies on the cookie sheet to cool. You can substitute white, milk chocolate, or peanut butter chips for the semi- or bittersweet chips called for in the recipe. In addition to chips, you can flavor the dough with one cup of nuts, raisins, or shredded coconut. -- posted by 8elbows

Green Chili-Cheese Compound Butter

This is a fabulous compound butter for fish, corn bread or muffins, corn on the cob or just to slather across a slice of bread. This butter freezes well as long as it is protected from the beastly odors that live in your freezer. Make sure to wrap well in plastic wrap and place in a Ziploc freezer bag. Or place in a container with a tight fitting lid placing plastic wrap on top- in contact with the butter itself. -- posted by Humble Bee

Maple Bacon Biscuits

Breakfast in a biscuit! My husband and I had these during a trip to LA and they were fabulous. I am not a fan of maple, but these biscuits are very good. I just happened across the original recipe while reading food related articles. This recipe makes 2 dozen, however, I freeze 1 1/2 dozen and take them out as needed. Give them a try; I am sure you will love them as well. Adapted from Zoe Nathan of Rustic Canyon -- posted by Humble Bee

Sourdough With Jalapeno Cheese Spread

I made a big pot of my chili and had a loaf of homemade sourdough bread leftover from the day before. I wanted something different from the usual garlic bread or corn bread, one typically serves with chili. I opened the fridge and this cheese spread is what I came forth. A wonderful spread, dip and as you'll find out, perfect for spreading on sourdough or French bread and heating under the broiler. -- posted by Humble Bee

Zucchini Base Aka Z B for Cakes, Cookies, & Pie

This is a versatile, old time favorite recipe of mine, probably from the 1950s, which utilizes your summer bounty of zucchini in several different ways. The "zucchini base" recipe can be used to make other dishes such as: lunch cake, cookies, and pie (see recipe #327672). This recipe makes 3 quarts of base; the cake uses 1 cup of ZB, the cookies use 1 cup, and the pie uses 2 cups. I believe this recipe originally came from the Pasadena Star News. -- posted by Juliesmom

Crispy Coconut Chicken With Mango Salsa

Totally Tropical! I served this for our church at a Girls Night - Tropical Breeze event, which we held at a friend's house. We had the hot tub going and served this plus many other great dishes. Not your typical church lady luncheon! If you want, you can easily make this into a great appetizer. Cut the chicken into bite sized pieces before breading and serve with a bowl of salsa on the side. This works well with chicken thighs too, and those pieces are cheaper. -- posted by Jess4Freedom

BBQ Chicken Sandwich -- Waco Family Favorite

This is a family favorite and in frequent rotation during the summertime in our household (Gotta love it anytime DH grills up dinner). Although normally we use sprouts ( Broccosprouts whenever we can find them), the kiddos are more inclined to sub lettuce and omit the tomatoes. Kids, go figure! Sometimes an avocado can garnish, normally that is on the side as guacamole with chips. Garnish varies depending on what looks good and fresh at the market. **Rudy's BBQ Sauce from Texas is KEY to the flavor of this sandwich! We use all sorts of other sauces, but Rudy's is just the best for these - by the case I tell ya!!** -- posted by Mommy Diva

Thick Apple Pancakes With Raspberry Sauce

This is a fabulous and impressive recipe (both visually and in deliciousness). It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream! I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries. If you really want a decadent meal, top with whipped cream. You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. It's also great if you mix the apple topping right into the pancake batter. Really, it's hard to go wrong with this recipe. :)

This beautiful brunch dish is served at The Ahwahnee Hotel in Yosemite Valley, CA and was printed in "Bon Appétit" (Nov. 2000). If you are just cooking for one or two, leftover batter refrigerates well. -- posted by blucoat

Chard, Onion & Gruyère Panade (Bread Casserole)

This is a delicious, decadent and luscious French "bread casserole" from "The Zuni Café Cookbook" that you will want to make again and again. It's a great use for stale bread and a very forgiving recipe, you can improvise with other greens and cheeses.
As with all panades, you may need a little more bread, or have some left over; same with the liquid, depending on the size and shape of your baking container. If you have more time, you can cook this at 250°F, for about 2 hours 45 minutes; the slower the bake, the more unctuous and mellow the results.
If you have leftovers, the Zuni Cafe's Chef Judy Rodgers instructs: Warm about 1 tablespoon extra-virgin olive oil in a nonstick skillet over medium heat. Slide in a scoop cold panade and press gently to make an 2-inch-thick patty. Fry gently to make a golden crust, about 3 minutes, then fry the other side. It's also great rewarmed in the microwave. It is actually not difficult to make; the instructions are just very detailed. You can skip the stovetop step and still get great results. Enjoy! -- posted by blucoat

Great Grape Pops

What a cool idea. Pop those grapes in a popsicle mold(or small paper cups), pour in grape juice and freeze. Cook time is freezing time. Yum! Adapted from Pops! Icy Treats for Everyone by Krystina Castella. -- posted by Sharon123

There is a vendor at the Hillcrest farmers market on Sundays that sells a dozen cookies for $20. I disregarded them because 1/2 the time I'm too broke too pay attention...except for these...thank you Rowen for opening my eyes! -- posted by StrokedOrchid

Brussels Sprouts Parisienne

Lightly steamed and tossed in butter, a dash of salt & pepper and a pinch of nutmeg--sometimes simple is best! Top sprouts with crisp crumbled bacon, freshly grated lemon zest, and a dollop of creme fraiche to dress them up, if you like! This is my favorite Brussels sprouts recipe, since childhood. -- posted by BecR

Black Olive & Clam Dip

This is a family favorite that we just cannot seem go without during the Holidays – it's a great dip to serve to tide your guests over until your holiday meal is ready. This dip is a kid friendly recipe - I have two younger brothers who absolutely love this dip – for them it is a holiday staple. Enjoy! -- posted by Loving Chef
