Add some white chocolate chips (or regular chocolate or mixed!) to batter before baking!  Or use as topping!  I like to dip whole strawberries or sliced berries in melted white chocolate before I set atop!  I've also used blueberries in the cupcakes, strawberries on top, and a different berry jam for center! I discovered this recipe on a blog (cupcakeproject.com) and made a few adjustments to the directions as the original was a little difficult to follow.
These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!)

			<description>A moist satisfying dense carrot cake that will get you raves. The recipe calls for chopped nuts but I love it with 1/2 cup nuts and 1/2 cup raisins instead. I have had this recipe in my recipe box for nearly 20 years. Strange thing happened when I made this for Thanksgiving after not making it for years. After I baked it the instructed time, it appeared &amp;amp; tested done. It fell a lot on cooling (especially one side) for about 20 minutes which led me to believe it was still not cooked enough inside. I decided to take a chance and put it back in the oven. It rose again as I baked it for another 30-40 minutes and it came out perfect! (Maybe my oven?) Everyone absolutely loved it! With a house full of people, they came to find me to tell me it was the best carrot cake they ever had!

			<description>Okay so this is just an ordinary cheesecake with a little twist. I remember this recipe because my manager and I was trying to figure out how to make a cheesecake unique and great. Some people uses sour cream and some people don't. Some uses evap. milk and some people dont. We werent exactly sure what would taste better and what would make the cake smooth or etc. So we came up with this! HOPE YOU ENJOY IT!

You will need a Springform pan or if you dont have won, just use a 9inch round pan with foil paper. Make sure to wrap the whole pan with foil!

As for toppings, you may use anything you like.
Whipped cream
Strawberries or blueberries or cherry or any fruits
Strawberry or chocolate syrups. Any syrups to your liking.

You can replace some ingredients with better choices and clean up the calories and fat quite a bit (but I don't!). 			<description>This holiday fruitcake is made of a rich pound-cake batter that is mixed with dried and candied fruits. The fruits greatly enhance the cake and make it a festive holiday-season dessert. The cake can also be cut into tiny pieces and served as petits fours.

The homemade candied peels are easy to make, inexpensive, and of a better quality than you can get commercially. Dried and covered with cognac or rum, the peels and dried fruits will keep almost indefinitely in a jar in the refrigerator. They can be added to souffl&amp;eacute;s as well as to cakes or fruit salads.

The cake is baked slowly for a long time, until completely set inside. When cool, it should be wrapped in plastic and stored in an airtight container. It can also be frozen.

Too little flour will produce a callapsed cake and too much will have wet spots with dense layers.  Cake layers freezeable.

If you wish to serve this to children or non-drinkers, substitute the Madeira with fruit juice of your choice. 			<description>A French classic and one that I will me making myself from now on, having just paid a small fortune for a tiny, if delicious loaf from my local boulangerie! This is a cross between sticky ginger parkin and a gingerbread cake or a tea loaf. It is not as moist as parkin or gingerbread, but it is extremely good when spread with butter or even better, when toasted.......divine! It is also surprisingly good when served with cheese. Another idea that I discovered in a local caf&amp;eacute;, is to serve it warm with a dollop of cr&amp;egrave;me fraiche and a little bunch of fresh berries on top, a perfect dessert for an elegant dinner party! This improves with keeping and makes a wonderful gift for a foodie friend or hostess  wrap in cellophane and attach a ribbon with serving suggestions. If you cannot source Quatre &amp;Eacute;pices, I have a recipe on zaar to make it at home!
