Gluten-Free Chocolate Cake With Frosting

This gluten-free, dairy-free chocolate cake (nut-free too) is a family favorite, with a thick, yummy chocolate frosting.

This frosting recipe is one of my all time favorites –I have been known to eat it by the spoonful and like to spread it on crackers.

The chocolate vegan frosting above is a nice complement to my vanilla cupcake recipe (made from almond flour) recently featured in the Denver Post. Go ahead and see for yourself on your next special occasion or for no reason at all!

Chocolate Orange Torte

This is a super yummy, dense, rich, chocolate cake (it is almost like fudge). Although it is awesome just as a slice I think it is perfect with ice cream! It reminds me of the fudge chunks you get in high end ice creams.
There is a very mild orange taste that could easily be changed if it's not your thing. Add your favorite topping (whip cream, coulis, whatever!) -- posted by GlutenFreeKitten

Molten Lava Cakes - Gluten Free

These are super yummy! You can make them with regular flour if your not G/F!
I personally like to bake mine so they are not as soft in the middle but it's a personal choice!
I don't always include the 2nd egg yolk and they turn out fine.

I love that this recipe makes 2 large or 3 medium cakes!

Carrot Cake (Gluten-Free, Casein/Dairy-Free)

A delicious carrot cake that is free of gluten and casein, but also lower in sugar and fat than most recipes. Can be made vegan with egg-replacer instead of eggs. Top with your favourite icing, or a sprinking of icing sugar. I often use more pineapple, and mix it with cinnamon and raisins, and make a warm glaze before serving. Simply double the recipe for a two-tiered version. -- posted by Laurie150

Gluten-Free Pumpkin-Applesauce Bundt Cake

On my hunt to make a lower-fat moist gluten-free cake that cooked all the way through, I experimented with the base recipe for this "Recipe #47421" and converted it to my tastes. It was so moist and tasty that I had to post it! You can probably half it to make muffins, but I haven't officially tried that yet. You can add ginger and allspice to make it a spice cake too. Definitely serve to gluten-eaters guilt free; it's delicious!

Macarons Creme Brulee (Creme Brulee French Almond Macaroons)

From a French cookbook called '30 recettes de macarons'- they're real French macaroons, the little melt-in-the-mouth ones you can get from patisseries rather than the more cakey, cookie-like ones made from coconut. I'm working in France at the moment and took the opportunity to collect French recipes, lol, this one looks amazing and I can't wait to make it for my dad, he loves this sort of thing. My French friend made them when I went round to her flat and they looked so impressive (I haven't tried them because I don't like cream but everyone else loved them). From previous experience of French macaroons, they're quite tricky to make but really worth the effort. The books gives a few tips: separate the white from the yolks a couple of days before use (keep refrigerated), use a fan oven if possible, weigh all the ingredients carefully before starting. Cooking time includes cooling/setting time. Hope you like the recipe! -- posted by Rainbow*Bubbles

Lemony Cheesecake With Berry Sauce (Raw Vegan)

Mmmm, cheesecake! A healthy, guilt-free version with lots of living enzymes. If you use raw ingredients, and virgin, unrefined, coconut oil (preferably organic), this recipe is so good for you! It looks like a lot of coconut oil, but it works out to less than 1 tbsp per slice, and that's less than the recommended daily amount to get all those wonderful fatty acids they're talking about with coconut oil these days. So, well, hey, have a 2nd slice! :-) We love this cheesecake and we're rarely without one in our freezer "just in case". There are lots of raw cheesecake recipes floating around the 'net, and after trying many of them, this is our version, taking little bits of each and doing what we like with it. I also tend to make more than one at a time, and keep them in the freezer, so I don't have to make them as often. :) -- posted by RawFoodNut

Almond Chocolate Cake (No Flour)

A decadent brownie like TOH recipe that does not use flour! Its creator, Peggy Gwillim, says it is gluten free, but I wonder if some of these ingredients might have gluten in them? Serve with ice cream or alone. This is baked in a spring form pan. The next time I make this, I am going to serve it and then freeze the rest. Notice the review from Chef #1236316 who subbed in 2 cups of almond meal for the 2 1/2 cups of almonds which is fine with me. Also notice Chef#1213645 review about subbing in an equivalent amount of raw honey for the sugar which is also fine with me. -- posted by WiGal

Lemon Polenta (Cornmeal) Cake

This cake is surprisingly pleasant, with a bit of a rough texture (not unpleasant) and nice lemon flavour. I ate it plain, but it would be good with fruit, yogurt, ice cream or soy dream. Rice flour can be substituted for the polenta (cornmeal) if needed. This recipe is taken from Barbara Cousins' book Cooking Without Made Easy. It is one of her books of recipes without added dairy, gluten, sugar, or yeast. I've embarked on eating this way and have had wonderful results, but have found some not so wonderful recipes along the way. These books are the big exception! There are so many wonderful recipes, including breakfast, lunch, dinner, snacks, baked goods and desserts. She is British, and some recipes are typically British, but she gives alternate measurements and the choices are diverse. -- posted by Aimee88

Mock Chestnut Torte (Passover Cake)

This recipe is from the wonderful cookbook, "A Treasury of Jewish Holiday Baking", by Marcy Goldman. This pareve Pesach cake tastes like a rich but light chocolate cheesecake. It's wonderful with or without the glaze. If you don't mind a dairy cake, it's also excellent with a regular ganache (with cream, etc...). Kids will LOVE this and won't even know they're eating a vegetable (you cannot taste the sweet potatoes). Enjoy!

You can also serve this in squares, as French-style "petit fours." The glaze slicks this up but is not necessary — a dusting of cocoa is just fine. -- posted by blucoat

Gluten-Free, Low-Carb Chocolate Amaretto Cream Cheese Cupcakes

My husband loves butterscotch and caramel in every form and shape, so I was happy to find a new kind of butterscotch chocolate which I bought him. Unluckily it turned out to be the worst butterscotch chocolate I ever had the misfortune to buy, so I invented this to use it up. You need not buy the worst butterscotch chocolate you can find. You may use any kind you like ;-)
In fact the butterscotch chocolate thing and the amaretto are the only "bad" ingredients. If you have no amaretto liqueur or don't want to use it, you can use almond syrup or almond essence instead. -- posted by Mia in Germany

Hazelnut, Orange and Raspberry Mini-Cakes or Friands

This recipe can be made in friand bakeware/tins, one cup muffin pans or mini bundt/shaped pans.Basically the cooking time is for pans that are one cup size. You can make this recipe with wheat flour or with your favourite gluten-free flour or blended flour. If cooking gluten-free there is no need to add xanthan or guar gums to the flour mix. I've made these gluten-free and nobody can taste the difference! Makes 12 cakes/friands
You can make your own hazelnut meal by processing hazelnuts until a fine texture is obtained
You can try variations by using almond meal and other fruits -just use your imagination! -- posted by **Jubes**

Everyday Simple Chestnut Cake

This simple Italian dessert is a regional specialty of Tuscany. I found this recipe while looking up stevia. Stevia is a sweetening alternative, so you could use a Tablespoon of sugar (or less raw organic cane sugar,) rather than the stevia if you prefer totally natural foods. I suppose you could use the other alternative sweeteners -- I just don't like/use any of them. -- posted by Yum Mum

Angel Food Cake (Gluten-Free)

My sister decided that she wanted Angel Food cake and my mother decided she wanted some Creme Brulee; one uses egg whites and the other uses yolks so I went searching for a recipe. I saw the other GF angel food recipes on Recipezaar but was not satisfied with the list of ingredients; they use a flour mix that is all starch and several of the reviews mention that it deflates from the bottom up. I found this recipe by searching on Google and made it instead. I was a little over zealous when mixing in the flour so my whites lost a little volume, but it did not affect the taste. The end result was a light and fluffy cake. It was the first time I had had angel food cake since going gluten-free and I was not disappointed. I made a strawberry trifle by breaking the cake into little chunks and layering them with lite whipped cream and strawberries. Edit: I have made this recipe 3 times now. To keep the whipped white mixture from deflating, I highly recommend not folding in the flour mixture by hand. The first 2 cakes I made, I folded it in by hand. The 3rd time I stirred it in on the slowest possible setting on my Kitchen Aid which resulted in a cake that was about 2-3" higher. All 3 of them tasted great though. -- posted by Andrew Mollmann

-----------------------------------------------------------------------------------------------------------------
These are very small as is as I used whole walnuts and processed them down. If you used 1 cup of already processed walnuts you'd get much more. I didn't have cupcake holders so I lined shot glasses with plastic wrap to make these. I was able to get enough to fill 4 - 1 oz. shot glasses. -- posted by ThatSouthernBelle

It's easy to make, tastes great, and leftovers store easy (if there are any). It's also so original and unique that it will astonish everyone you serve it to. It's impossible not to be impressed with a cake like this! -- posted by Lieutenant Ducky

Pumpkin Roll (Gluten Free!)

Warning: This is DANGEROUSLY addicting!! :) The mix of cream cheese and pumpkin rolled up together is exquisite, indeed, and even better, it is now gluten free! Actually, this was one of the easiest recipes for me to make a gluten free version of, and I actually truly prefer it to any other pumpkin roll! We've actually given this recipe to non-gluten-sensitive friends as they too agreed it was amazing!

Gluten Free Chocolate Cupcakes

The New York Times blog, Bitten, just did a feature on chocolate cupcakes, which made me realize that a recipe for gluten free chocolate cupcakes is conspicuously lacking from this site. Well, I am happy to say that is no longer the case.

In my quest for the perfect gluten free chocolate cupcake, I made these 5 times. Today. Luckily, my boys and their glutenoid friends happily scarfed the "failures." Here, I share with you my success.

Chocolate Oatmeal Pancakes (Guilt-Free & Gluten Free)

Don't tell your kids and they'll never know these moist chocolaty pancakes are actually healthy for them! Packing over 7 grams of protein and over 3 grams of fiber each, these pancakes are made without oil or sugar, combining egg whites, oats, cocoa powder, and a combination of bean & brown rice flour to make a nutrient packed breakfast that is high in fiber and protein and low in fat. A well mashed banana is used for sweetener, but unexpectedly you will not taste it. Serve w/a bowl of Cool Whip for dipping or simply pour hot soymilk over them (so they're moist like adding syrup w/o the calories!). Have fun experimenting with the way you like to eat them! -- posted by Emily Elizabeth

Gluten and Dairy Free Basic Cake Mix

This is a gluten and dairy free version of my family's 'Jiffy tea cake' which is one of those basic cakes you can add almost anything to! It makes a smallish cake, so I usually double the mixture if making a whole cake, or just use the quantities below to make about 6 muffins.

I've given the quantities in 'cups' and by that I actually mean a tea cup that I've been using as my cooking measuring cup for the last 30 years! It doesn't really matter whether you use a metric or imperial cup as long as you use the same cup - though if you only have small eggs, I would perhaps use two. I also like to have a fairly thick batter, so I add more milk or flour as needed to get it to the right consistency - experiment to see what suits you and your oven best. -- posted by feedingtimeatthezoo

Teff Muffins With Fruit & Nuts

The grains of teff are so small, the bulk of the grain consists of the bran and germ. This makes teff nutrient dense as the bran and germ are the most nutritious parts of any grain. This grain has a very high calcium content. It is considered to have an excellent amino acid composition, with lysine levels higher than wheat or barley. Teff is high in protein, carbohydrates, and fiber. It contains no gluten so it is appropriate for those with gluten intolerance. Teff flour, brown rice flour & arrowroot flour can be purchased at whole food stores. -- posted by lwatkins

Simple Flourless Chocolate and Chestnut Truffle Cake With Fresh

This is absolutely DIVINE! The texture is smooth and somewhere between a chocolate cake a chocolate truffle. If you love chocolate, you'll love this as its just out of this world. A good substitute for those who don't like Christmas pudding, though I bet everyone will go off Christmas pudding once they taste this! Double or Triple the quantities for a larger party, a small slice is usually enough as its very rich. The brandy is optional and comes through more as a subtle flavour than anything else but feel free to add more to the cream if you prefer a stronger flavour (I do). If I make this during the summer I would leave out the brandy. Also this cake needs to be made at least a day in advance and it freezes well too. -- posted by robd16

Plain Spongecake

Light and easy, good for those cake cravings, as cake bases in trifles, or just a simple cake to serve for guests. In my picture - I had accidentally burnt the top, so I had cut it off and just coated the remainder in cream :) .... also, if you want your cake to be a bit sweeter - a teaspoon of vanilla essence when you're adding the sugar to the egg. -- posted by ByNDii

Gluten-Free Date Pecan Muffins

Satisfying and highly nutritious, these lightly sweetened muffins have chunks of date (a good source of potassium, calcium and iron) and pecan (high in protein, fiber, and antioxidants) in every bite, and are sweetened with low-glycemic agave nectar. From the book " The Gluten-Free Almond Flour Cookbook" by Elena Amsterdam, this recipe calls for blanched almond flour (Bob's Red Mill Almond Flour WILL NOT work for this recipe-it is too coarse). Blanched almond flour can be found at www.nutsonline.com, www.honeyvillegrain.com, or www.lucyskitchenshop.com. -- posted by FloridaNative

The Easiest Flourless Chocolate Cake

I found this recipe on the food network's website, and it is the easiest flourless cake I have come across. Especially since you don't have to separate the eggs. The key is in whipping them for a long enough time to make them increase in volume. -- posted by Chef #497345
