			<description>My Grandmother, Lillie Carbeau Blanchard, brought this recipe to our family from her Louisiana home in 1957.  It was an instant favorite and in demand for birthdays each year. It has been a tradition in our home and I hope you enjoy it as much as we have.   When I make the icing, I blend the flour into the milk with the mixer first, then I cook it on a medium heat to begin with, constantly stirring to avoid lumps, increasing the heat along the way.  Make sure you stir the sides and bottom of the pan.  Let the stiff mixture cool to room temperature before you blend in the sugar, butter and vanilla.  I double the icing recipe. as it is not too sweet and our family loves it! Top it with your favourite frosting, or just sprinkle powdered sugar on it to 'finish' it for the table.I love the recipe as I alway seem to be out of milk and eggs, so this recipe suits my house!

For the next 25 years, he delighted the first families and visiting dignitaries with his elaborate desserts and sugar creations. Mesnier says he enjoyed his time with all of the families and appreciated their differences.

She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! 			<description>This is absolutely DIVINE!  The texture is smooth and somewhere between a chocolate cake a chocolate truffle.  If you love chocolate, you'll love this as its just out of this world.  A good substitute for those who don't like Christmas pudding, though I bet everyone will go off Christmas pudding once they taste this!  Double or Triple the quantities for a larger party, a small slice is usually enough as its very rich.  The brandy is optional and comes through more as a subtle flavour than anything else but feel free to add more to the cream if you prefer a stronger flavour (I do).  If I make this during the summer I would leave out the brandy. It's got just the right amount of chocolate so it's not overly sweet.  Additional chocolate chips can be added for serious chocolate lovers.  It's great served warm as the chocolate is gooey but I think it gets even better the next day. I discovered this recipe on a blog (cupcakeproject.com) and made a few adjustments to the directions as the original was a little difficult to follow.
These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!)

Using cake flour is a must.  See Lennie's recipe #87689. Too little flour will produce a callapsed cake and too much will have wet spots with dense layers.  Cake layers freezeable.

Tips:

You can definitely prepare your chocolate lave cake recipe ahead of time, and then bake 10 minutes before serving. I always do it this way!

In terms of buttering the ramekins: butter the bottoms first, and then butter the sides, wiping from the bottom up to the top. It helps the chocolate to rise even more.

In terms of baking time well, it depends on how runny you want it! I like it with a super-liquid-oozing center -- so do my guests! For this, you want the top to be cooked through, but the center to be liquid. You can check with a toothpick after 10 minutes of baking.
If you don't like liquid-center chocolate desserts, just cook for a little longer, and you will have an incredibly moist chocolate cake. So, either way, you can't go wrong!

Serving Ideas:

You can, if you want, serve your chocolate lava cake recipe with a Cr&amp;egrave;me Anglaise (English Cream) or a Coulis aux Framboises (Raspberry Sauce). Personally, I always serve it as is (no sauce). And honestly, everyone FALLS IN LOVE with this dessert!!! And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy!
