Blueberry Snack Cake

When I lived at home with my family, we would make this snack cake a lot. We always had blueberries stored in the freezer from summer berry-picking season. This recipe is very sweet but well worth the carbs! Please note this cake batter spreads out thin and does not rise much at all once baked. It is not meant to do so. Also, please note that the glaze is optional per your sweet tooth preference. It could also be halved for those who prefer less sweetness. -- posted by MarthaStewartWanabe

Stars and Stripes Berry Trifle

Little pound-cake sandwiches make this dish something special, not to mention it's delicious! A glass trifle bowl is needed for this, and straight-sided works best. I usually put the berries in as is and skip the sugar step, although admittedly the berries do look prettier with the glossy sugar. I have also made this with just one pound cake, half the amount of custard and blueberries but double the raspberries, and it was equally good! I have also served it with some chocolate shavings on top or with chocolate sauce on the side - or both! And serving this in individual serving dishes looks nice also. I make recipe#238798 for the custard, but make sure to double it to get the full four cups you'll need for this trifle. This recipe comes from Cook's Country. -- posted by hepcat

Blueberry Cobbler

Uncle Dobo’s Special Banana Blueberry Bread

We had a bunch of bananas that needed making into bread, and we based our recipe on the easy one here at Zaar by Charishma Ramchandani (recipe#9353). Easy and delicious, it makes a nice, light banana bread which is not overly sweet. Thanks for the inspiration, Charishma! You can either mix the batter by hand or with an electric mixer; either will work fine and you only need one large bowl. -- posted by Uncle Dobo

Lemon Berry Sour Cream Cake

I found this recipe on Driscoll's berries site, now that summer is no longer. This looked so beautiful and we had a special meal for visiting dignitaries - so we had a lovely "end of summer" meal and we had a dessert to match. *I read somewhere that you soften butter and possibly cream cheese, by leaving it out overnight. Didn't
allow for cooling time. Don't let the long list frighten you -- it isn't that bad!! -- posted by Manami

Deceptively Delicious Blueberry Cheesecake Cupcakes

These are from Jessica Seinfeld's book. I have not tried these yet, but they are next on my list. They pack a nutritional punch with yellow (winter) squash, blueberries, and spinach. To make the squash and spinach purees, pre-cook the veggies. The key is to puree them (in the food processor) until absolutely smooth and creamy. If you use "sneaky chef", you need 1 cup of "purple puree." When I make this, I will try it with a blend of whole wheat flour and update as appropriate. -- posted by gourmetmomma

Blueberry Angel Food Cake

Inspired by Recipe#3794. I found that the blueberries and juice get more evenly distributed than peaches do, for more fruit flavor in every bite!

Note: This works best if you have the "1-packet" type of angel food cake mix. If you have the "2-packet" kind, you can empty both packets into the bowl together, but you may end up with a slightly denser cake.

Feel free to try this with other kinds of fruit in juice. I'd like to know how it turns out! I've already made it with pineapple, peaches, and blueberries. I might try strawberries next.... -- posted by lucid501

I found this recipe in Southern Living magazine. It sounded so unique, I just had to try it. It's been a hit the 2-3 times I've taken it to a pot luck. It's a lovely presentation and another way to use the fresh basil(yes, basil!) from your garden! Note-the last three ingredients(powdered sugar-lemon juice) are for the glaze. All three berries aren't necessary-just choose a red one and a blue one. Sliced strawberries work fine also.
Blueberry-Swirl Coffee Cake (Healthy)

This coffe cake is amazing!! You have to try it. I found this recipe in a cookbook i recently purchased: Cooking Smart for a Healthy Heart.
This moist and tender cake is bursting with juicy berries. Brown sugar and cinnamon make it so melt-in-your mouth delicious that you won't believe that its lower in calories, fat, and cholesterol than traditional coffee cake. And the aroma from the baking cake is sure to rouse the sleepyheads at your house. Serve it warm from the oven-it's worth waking up for. :)
Traditional coffe cake recipes call for at least 2 egg, but using just one whole egg and an egg white ensure that your cake will have a light, delicate texture. It also makes this even healthier. -- posted by Baking Latina Girl

I am always looking for ways to use blueberries when they're in season, and this one is a special summer treat! It's old-fashioned comfort food, with the candied ginger adding a sophisticated twist. My family was shocked at how good it was with so little sugar and fat (recipe from Cooking Light).
