Banana Lime Cake

Bananas and lime work well together in general evoking tropical flavors. This cake is actually from the UK, from a volume given to me in a cookbook swap. After GEMA's disappointing review, I made this myself and made some minor changes (namely reducing the flour by two tablespoons and adding a tablespoon of yogurt) and clarifying the directions according to preparation in my own kitchen. I found the cake to be a lovely snacking cake perfect as a midday sweet or informal dessert. As a low-fat chef, I was pleased to find the cake had a natural moistness drawn from the bananas, yogurt and raisins. -- posted by justcallmetoni

Banana Muffins or Loaves With Coconut Caramel Crunch Topping

This is a nice banana bread recipe, but with the topping...well now it has the WOW factor. They're sweet, so be warned. :) This makes 2 loaves or 2 x 12 muffin pans, or one of each. If you cook one of each make sure the muffins are baked for approximately 35 minutes and the loaf is baked for approximately 50 minutes. The topping needs 15-20 minutes within those baking times mentioned. Sorry if it's confusing. -- posted by Delicious Bits

Banana Split Shortcakes

I found an old 1999 Woman's Day magazine pull-out and they had many different variations of shortcakes. I made all but 4 of them at some point. Here is another winner in my family's eyes. Allow time before serving to assemble the dessert as these have to be put together just a few minutes before serving or the ice cream will melt. -- posted by HokiesLady

Upside-Down Banana Cake

As with all upside-down cakes, what goes into the pan first ends up on top, so this ready-to-eat banana cake has enticing banana slices on top making it both aesthetically more pleasing to the eye - and even more delicious.
Banana Cupcakes With Honey-Cinnamon Frosting

A wonderful way to use up your over ripe bannas. These are like a cross between a muffin and a cupcake. You could serve them for breakfast plain, or add the frosting for a sweet treat. Or if you don't like your cupcakes too sweet, you might consider using a cream cheese frosting instead. This only makes 12 cupcakes and comes together very quickly. From Martha Stewart. -- posted by cookiedog

A 'quick bread' based on a cake mixture but baked in a loaf pan. I was in the situation where I had 3 over-ripe bananas, a bit too soft for eating but perfect for a cake. Normally I would make a simple banana bread or banana cake for my husband, but as he is away on a trip, I have a brother-in-law to contend with who won't think of eating anything that looks remotely healthy. So I made this wonderful loaf, with the goodness of bananas and the comfort of chocolate. Enjoy. -- posted by Piya.HMO

Carrot-Banana Muffins (Or Bundt Cake)

This recipe is a cross between banana cake and carrot cake! It is a healthier version of a cake recipe from an old Bon Appétit Magazine (Oct. 1993). I replaced the oil with applesauce and it is still exceptionally moist and delicious. You could substitute some oil for the applesauce if you prefer. If making the cake, use a greased and floured 12-cup Bundt pan and bake for about 1 hour. -- posted by blucoat

Chocolate Peanut Butter and Banana Cake

From "Cake Mix Magic." Uses a devil's food cake mix (a nice change from the yellow cake mix seen in other recipes for similar cakes). Basically, a chocolate banana cake with chocolate peanut butter glaze. Yum. The author notes that chunky peanut butter can be used for the glaze if desired but will not produce a smooth satiny glaze.
Banana Bread/Cake

This is a variation of a bunch of recipes I have tried but mostly from one I have lying around on a bit of paper - I have no idea where it came from! If you are after a 'bread' then omit the baking powder, if you want more of a cake, baking powder makes it light and fluffy! If you can, don't make this recipe until the banana skins have gone completely brown - the bananas are much more sweet, moist and flavoursome taking this recipe into a different league. Please note that for this recipe the skewer/knife/toothpick test isn't as reliable as usual because the banana stays moist in the cake! -- posted by dimensionally transcendental

Passover Banana Bread

This year I finally figured out the secret to converting a regular cake recipe to a Passover cake recipe! The secret is that when you replace the flour in the recipe with matzo meal, you sub 40% of it with something else, like shredded coconut or ground nuts. This way you avoid baking a brick (like the ones our ancestors made during the slavery in Egypt!).
The bananas in this recipe also help to moisten the cake. -- posted by GalicioBocharit

This recipe came from my scout leader back in the 1970's and our troop made them to raise money for a long since forgotten reason.
Buckwheat-Yogurt Banana Bread (Guilt-Free)

I came up with this recipe to use up some extra bananas and yogurt, but since I live alone, eating a whole banana bread to myself is... well... pure gluttony. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. If you are used to regular store-bought over-sweetened cakes, I recommend you increase the amount of sugar in the recipe or, you can use these tricks: use over-ripened bananas (they are sweeter), use sweetened applesauce and/or vanilla yogurt instead of plain. -- posted by Génial Génie

Banana Split Cake

This is a fun, eye-pleasing cake that incorporates the classic flavors of a banana split. It can be served on its own but is best served "a la mode" with vanilla, chocolate or strawberry ice cream. It has layers of banana cake with a center layer of chocolate fudge frosting, sliced bananas and sliced strawberries. Then the top of the cake is finished with strawberry frosting and arranged, sliced strawberries. I think the embellishment of fresh fruit gives the cake a homemade appearance. No need to tell anyone you used a cake mix and prepared frosting! (Note: If you can't find banana cake mix, substitute with yellow cake mix, reduce water to 1 cup and add one extra mashed banana). Enjoy! -- posted by MarthaStewartWanabe

Chocolate Banana Cake from Canadian Living

The name "Chocolate Banana Cake" does not do this dessert justice. Not even remotely. Banana-chocolate chip cake is layered with white chocolate whipped cream and banana slices, while the entire thing is covered in white chocolate whipped cream and topped with chocolate ganache. Just incredible. Add nuts for extra flavor. The recipe comes from a Canadian Living cookbook and can be found on the Canadian Living website.
Chocolate Oatmeal Pancakes (Guilt-Free & Gluten Free)

Don't tell your kids and they'll never know these moist chocolaty pancakes are actually healthy for them! Packing over 7 grams of protein and over 3 grams of fiber each, these pancakes are made without oil or sugar, combining egg whites, oats, cocoa powder, and a combination of bean & brown rice flour to make a nutrient packed breakfast that is high in fiber and protein and low in fat. A well mashed banana is used for sweetener, but unexpectedly you will not taste it. Serve w/a bowl of Cool Whip for dipping or simply pour hot soymilk over them (so they're moist like adding syrup w/o the calories!). Have fun experimenting with the way you like to eat them! -- posted by Emily Elizabeth

Banana Apple Bread (From the Sweet Melissa Bakery)

This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding. You can add nuts or currants. Be sure to use super-ripe bananas (the blacker the better). The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature.
