Celine's French Apple Cake

A recipe one of my students did as an assignment. I promised her I would make it when I got home, it was so fast and easy and had really ordinary things in it. It is a nice recipe that makes a kind of apple coffee cake. Would be great for breakfast. She suggests serving it with ice cream or creme anglaise. I like it right out of the pan. -- posted by Kasha

Of course, that's probably because the apples came off the tree in my grandmother's backyard and she always bakes with love but the recipe is still yummy when others try to re-create her magic. -- posted by Kay14

Originally found with a sack of apples in the cellar of a home in Sweden, this recipe proved to be quite popular amongst my family for years.
Sour Cream Apple Square

Another family favorite from the Best of Bridge Collection of Cookbooks. This is a very different cake from any of the others posted in this site, we love the spongy texture of this cake. Somehow, it just hits the spot. It is an excellent cake served warm with whip/ice cream, or served cold and plain! Great for lunch boxes as it holds up when travelling. -- posted by les2saw

Apple Coffee Cake With Crumble Topping

This is an extremely moist and light coffee cake. The apples and brown sugar give it a wonderful melt-in-your-mouth flavour and the crumble topping is amazing! It's also very easy to prepare. It is modified from an Emeril Lagasse recipe. If you like nuts, you can also add some chopped walnuts, almonds, or pecans to the topping. This is great served warm or at room temperature. -- posted by blucoat

This is an almost healthy cake that has loads of veggies (carrots, parsnip, zucchini), some whole wheat flour, no oil, and is still deliciously moist and sweet. Kids will eat this without complaint! You can also make little cupcakes with these.
Apple - Sour Cream Cake

I've been making this cake for more than 40 yrs. It was my mom's recipe, that she found in a newspaper and made often. It's quick to put together, never fails to please, and can be made with/without the apples and still be a winner. Top with ice cream, whip cream, fruit sauce or just eat plain, with a little powdered sugar. There isn't a variety of apple that I haven't used. They all worked well.
I have been looking for a recipe for apple spice cupcakes for a long time, and this one has been the best by far! You can substitute apple pulp for the shredded apple if you have some available. I use a cream cheese frosting with a little bit of apple juice concentrate mixed in, and top with a little bit of ground walnuts.
Tennessee Stack Cake

Recipe by Andrea Hall
Puyallup, Wash. The article reads ... This eight-layer cake, an Appalachian specialty, is known by various names, including apple stack cake, pioneer stack cake, and washday stack cake. The last name refers to how the cookie-like layers were often baked on washday and then layered with apple butter and left to sit for a day or two before being served. As the cake sits, the cookie-like layers soak up moisture from the apple butter and soften, becoming tender and cake-like in the process. -- posted by Charlotte J

My sister gave me this recipe. I added whole wheat flour, protein powder and fiber powder. So now it's pretty healthy! Spice to your own taste. They freeze well!! If you use that weight loss system that counts points it is only 4 points for a regular sized muffin! :-) Also can be a 9 inch cake. -- posted by folkmew

My Mom has been making this for 20 years. Easy to whip up. It's a very heavy cake, more like a molasses pound cake. It's awsome warm or cold. We added the raisins, you could probably add walnuts, oatmeal or coconut too. Everyone passes up all the other desserts when this one is brought for a holiday. -- posted by Mollie #2

Connie”s Apple Cake Recipe

My mom used to make this during the holidays. A very long time family tradition, been around for many generations. This is a very sweet, rich dessert, moist and a bit crumbly because of the chunks of apples and pecans. Not the 'normal' birthday cake-like texture. Great with a big glass of milk or hot cup of coffee. The mix ends up being very thick and a little stiff to mix, but don't worry... it is totally worth it. Warning: This apple cake is addictive! Thanks Mom, we all miss you dearly! -- posted by Chef #549456

Banana Apple Bread (From the Sweet Melissa Bakery)

This is an excellent, moist banana bread by itself but the addition of caramelized brown sugar apples make this truly outstanding. You can add nuts or currants. Be sure to use super-ripe bananas (the blacker the better). The banana bread keeps well wrapped in plastic wrap at room temperature for up to 3 days. For longer storage, freeze well wrapped in plastic wrap and then aluminum foil for up to 3 weeks. Defrost (still wrapped) at room temperature. The recipe was printed in "The Sweet Melissa Baking Book: Recipes from the Beloved Bakery for Everyone's Favorite Treats" by Melissa Murphy. -- posted by blucoat

Gluten-Free Date Pecan Muffins

Satisfying and highly nutritious, these lightly sweetened muffins have chunks of date (a good source of potassium, calcium and iron) and pecan (high in protein, fiber, and antioxidants) in every bite, and are sweetened with low-glycemic agave nectar. From the book " The Gluten-Free Almond Flour Cookbook" by Elena Amsterdam, this recipe calls for blanched almond flour (Bob's Red Mill Almond Flour WILL NOT work for this recipe-it is too coarse).
Slovenian Traditional - Prekmurska Gibanica

The best way to translate the name is “folded cake”. This is one of the most famous and loved Slovenian dishes. It comes from our most eastern region Prekmurje whose cousine is inspired by Hungarian and Austrian traditions. The recipe is very old and varies a little from family to family. I got this one from a Slovenian cookbook to be certain that all the measurements are correct. The preparation takes quite some time but it is all worth it. -- posted by Meme*
