It's easier than it looks. I like using chicken and shrimp in mine but you can use just about any kind of meat(s) you want. 			<description>This is one recipe I NEVER want to lose! Prepared on Eyewitness News Midday by Dave Trombetta of the Bubba Gump Shrimp Co. so it's definitely OK to post &amp;amp; share. This is one of the most delicious Shrimp recipes. I love it because you get plenty of broth to sop up with your bread, and it's SO flavorful. Definitely Cajun, so not for people who don't like spicy food. Enjoy &amp;amp; please post reviews! Cooking time may vary, based on type of rice you choose to serve, so cooking time does not include rice cooking time. Preparation time assumes you have shrimp that has been peeled and deveined for you. Cooks very quickly! I made this recently and doubled it, but I found that the flavor was diluted. If anyone makes this and is able to successfully double/triple the recipe with the same amount of flavor, pls post in your comment/review. I personally would like to have MORE broth than what this makes just like you get at the restaurant. When my Grandpa makes it, he doesn't use butter, but cooks down really fatty bacon and sausage to get the grease out of it, and then discards the remaining chunks of grizzle before adding the onions, etc.  You can use canned chicken and broth if you don't want to mess with the thighs.  Really, jambalaya is supposed to be a cheap meal that stretches meat, so you can use whatever leftover meat that you want to in place of the sausage and thighs.  2 1/4 cups of rice is 1 entire small bag. This recipe was invented out of neccesity. I wanted a quick and easy to prepare jambalaya without having to deal with the time consuming process of doing it the old fashioned way. This makes great leftovers too - perfect for packing in a thermos to take to work/school the next day. I've also served this to guests for dinner and it's always a hit. :)

***note*** If you have time, and want more veggies, feel free to saute some onion and bell peppers before adding the pasta sauce. I had never had Jambalaya, and from the menu it looked a good choice, but I can honestly say, It was the best meal I have ever eaten. I have tried to make this dish many times, and have now (I think) simplified and perfected it. As an Englishman, no-one over here has even heard of Jambalaya, but I have made this dish for lots of friends, who all absolutely love it, and I swear it is the closest I have come to that fabled recipe. 			<description>This is a healthy and tasty alternative to dirty rice. Also a great way to get the kids to try and love eggplant! I usually make this with one pound of ground turkey to reduce the fat and calories. To add even more flavor you can increase the onion and garlic if you like but we find it well seasoned as is. Sometimes we will even add some celery in with the onion mixture. Use what you have and what you like. Any color bell peppers are fine too! Red and yellow peppers add a nice color addition. Likewise, you do not HAVE to peel the eggplant if you want to leave the skin on. Just dice them up small. Another great color addition to a simple meal! I've never run across a gumbo recipe with &amp;quot;parsley meatballs&amp;quot;.  These are optional.  I asked my mom about this and she said that this was probably used to &amp;quot;extend&amp;quot; the gumbo because there were usually so many mouths to feed.  It's a great addition and worthy of the effort.  An observation:  never have I eaten Gumbo until recently that has been deboned and this was always at restaurants.  Oh, using a baking hen results in a more velvety texture and I have to honestly say that I've never used a fryer. Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things.  :)  We tend to like the gorgonzola cheese lately, but feta also works really nicely.  It all depends on what your main dish flavor is and your preference. This is a great way to use leftover rice.  Your choice of oil will make a big difference in the flavor.  The recipe calls for peanut oil, but I prefer it with safflower oil.  It gives it a lighter, more interesting flavor (not too mention being cheaper). 			<description>I could live on this!  Everybody loves this one, and agrees that its better than any Jambalaya they've ever ordered in a restaurant.  Give it a try, you won't be disappointed I promise.  The secret is the roasted red peppers and the butter.  Don't be put off that the dish is finished in the microwave, it just ensures that there are no burnt pans to deal with later!  The only other veg that work in this I find are sweetcorn or butternut squash/pumpkin cut into chunks and added just before it all goes in the microwave.  Even my friends from Louisiana find it hard to accept that its perhaps even better (If not a little different) than they make.
