Honey and Orange Madeleines

Recipe from Australian Better Homes and Gardens magazine. I recently made French Tart's Madeleines and totally enjoyed them. I haven't tried this recipe yet.....but posting for safe keeping. I made FT's gluten-free and they were wonderful. I'm hoping to try this recipe soon. You will need a madeleine mould or two for this recipe
The article stated that madeleines are traditional French cakes that are cooked in shell-shaped moulds. They were named after a French pastrycook, Madeleine Paulmier, in the 19th cetury. They quickly became popular and are still regularly served as morning or afternoon tea in France. Moulds should be greased and then dusted with either with a fine layer of sugar or flour -- posted by **Jubes**

Strudel = Old Fashion

This recipe makes the best flaky crust! You could use any type filling you like instead of the apricot jam, sweetened apple slices could be substituted.

Remember, the crust needs to be mixed the day before.

For ease of preparation you could combine the first 4 ingredients in the work bowl of a food processor - pulse until well combined.

This is such a beautiful and delicious dessert! -- posted by Jb Tyler, TX

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Almond Tahini Date Balls

Very Middle Eastern and very tasty. A somewhat sophisticated brunch treat if you will, and would also make awesome finger food for tea or a dinner party. Especially if it's one of those where the meal is light but hors d'oeuvres are heavy. And can you believe this awesome treat is healthy and vegan? I couldn't! For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's.
Found on the internet somewhere, don't remember where. If this is your recipe or you know where it came from, just drop me a line so I can give credit where it is due. -- posted by the80srule

Banana Chocolate Chip Muffins

This recipe is very versatile because it can be made in the form of muffins, bread or CAKE! If you like, you can add a bit less sugar and leave out the chocolate chips and make it more appropriate for breakfast/brunch. Walnut are are great addition, but are by no means necessary. I think these are amazing just as they are. From: Joy of Vegan Baking! Please note: Cook time for MUFFINS is stated below. If baking as a "bread" or cake it should probably bake for 40-45 minutes -- posted by Kozmic Blues

Teff Muffins With Fruit & Nuts

The grains of teff are so small, the bulk of the grain consists of the bran and germ. This makes teff nutrient dense as the bran and germ are the most nutritious parts of any grain. This grain has a very high calcium content. It is considered to have an excellent amino acid composition, with lysine levels higher than wheat or barley. Teff is high in protein, carbohydrates, and fiber. It contains no gluten so it is appropriate for those with gluten intolerance. Teff flour, brown rice flour & arrowroot flour can be purchased at whole food stores. -- posted by lwatkins

Magnolia Red Velvet Cupcakes W/ Vanilla Buttercream And/Or Cream

The famous Magnolia Red Velvet Cupcakes with the original Vanilla Buttercream Frosting or try Cream Cheese Frosting for a little variation, mix-n-match, or even try swirling the two on top in a sort of ying/yang or marbled pattern...if you add a little bit of food coloring to one of them you can make a very unique treat. I've done it with hues of soft yellow, pink, purple, green, etc depending on the occasion where I was serving it! -- posted by GoldsmithLissa

Sheila's Best Apple Crisp (No Oats)

This is the apple crisp from my childhood (there is no oatmeal in the topping). If I could only pick one dessert to make the rest of my life, this would probably be it. Mom always made this in her beautiful copper au gratin pan. I bought the same pan when I got married, just so I could make this dessert. Originally from the 1966 version of the "Woman's Day Encyclopedia of Cookery", Mom adapted it slightly over the years (with a little help from Cooks Illustrated I think). Cutting the apples into "cubes" (instead of slices) helps the apples keep the apples firm throughout. I have made this with pecans or walnuts. I have also made it without nuts. I like it best with pecans, but all versions are yummy!! I love it warm or cold. You can serve it with ice cream, but I usually only do that for dinner parties. -- posted by Mrs Goodall

Pumpkin Ginger Muffins or Cupcakes

Use white flour if you prefer, but I think the wheat gives it great texture!

I've also used vanilla yogurt and it adds a soft variation more for a dessert type muffin.

Also try topping with cream cheese icing (check my recipe I posted!). Sometimes I even add a little cinnamon, ginger, etc or a mix of holiday spices to the icing.

Use smaller muffin pans to make a nice snack for your meal or a quick breakfast. You can even freeze them! Try making a loaf cake as well. -- posted by GoldsmithLissa
