Brown Rice and Grilled Vegetable Salad

A wonderful light summer salad of nutty brown rice, grilled vegetables and a light lemon dressing. Makes a great BBQ or potluck dish. I like to make a big bowl for lunches during the week. A great way to use up leftovers from dinner! -- posted by healthycook26

Super Nutritional Homemade Baby Cereal

This is from the Super Baby Food book; but I have mixed it up a bit to make it easier to do. It's probably as expensive as refined cereal, but has more jam-packed with nutrition and taste! Use organic ingredients when possible!

Please don't feed this entire recipe to a 6-month old, and not at all to a child under 6 months. Go slowly, adding one extra ingredient each week, to make sure they aren't allergic. There is not enough iron in this cereal to satisfy a breastfed baby, so please talk to your pediatrician about drops. -- posted by Llamatron

Veggie Burger

Like many vegetarians, I'm always searching for a delicious veggie burger. I recently had one at a restaurant, that made me start the search again. My husband and I were pretty sure that it included garbonzo flour, rice, sesame seeds, hickory and broccolli. I've been searching for another burger recipe with some of these ingredients and found this one. I'm not vegan, so I might add eggs for binding and switch ground up broccoli for the tomato paste. I'll probably fry them up in olive oil or grill them instead of baking them. It's from www.all-creatures.org, and below find the description from there.

This recipe will make 12 thick veggie burgers. They are great when eaten fresh out of the oven or after being frozen and reheated. Freezing the veggie burgers is a great way to have quickie meals when the need arises. -- posted by Kendra PeloJoaquin

Easy Diet Feast

Note: I'm trying to tweak this. The calories are coming up WAY higher than they should (should be 400-500 depending on your salsa usage) This is something that I've worked up recently. The beans and rice should already be cooked. If I were to eat all of this at lunchtime, I would still feel full around dinner. You feel like you're stuffing yourself, but it's a modest amount of calories, low fat, low sodium (depends on the salsa), and an insane source of fiber. Very easy to throw together if you make larger batches of the beans and rice.

I do NOT used canned beans because of the sodium. But if you use a pressure cooker, a whole bag of dry beans (not soaked) only takes 35-40 minutes to cook.

I get the frozen pepper & onion mixture from Kroger.

The salsa quantity is up to you, but you would save a few calories by reducing the amount (I like a lot). My preferences are Paul Newman's Pineapple or Sam's Choice Pineapple Peach Chipotle, because it adds a nice sweetness to the mixture -- posted by HRH Mom

Savoury Chickpea Onion Biscuits

Gluten-free, sugar-free, corn-free, soy-free, vegan! I was on a crazy diet and sharing my food with friends who have allergies, so I developed these. The rice and chickpea combination makes a complete balance of essential amino acids, so it's good vegan food too. Oh, and they taste awesome.
I like brown rice flour, but you could easily substitute white rice flour. I love onions, but you could use less or omit this ingredient entirely if you don't share my enthusiasm. Sometimes I also add garlic for good measure.
They are best hot out of the oven, but do okay cooled. I've also tried freezing these with good luck - making a double-batch on the weekend and bagging them 2-3 at a time for use during the week. -- posted by wormwood

Egyptian Lentils Rice and Macaroni

Although a vegetarian dish, this gets eaten with reckless abandon by carnivores.
it sounds way too healthy (and it is) but dang! it is GOOD. try it. give about 45 minutes from start to finish.

Dan's Asian Rice

This delicious rice dish, created by my son, goes great with many Asian inspired dishes. I especially like it with my recipe for Recipe #319003. You can cut the recipe in half for 2 people without any problems. I have made this for 2 people and use 1 tsp. chili paste. It is spicy, but not "Real Hot". This rice has lots of flavor! I served with Sweet Soy Sauce Drizzled over the top of the rice as shown in my picture.
Tofu Zucchini Patties

These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences. -- posted by bluemoon downunder

Spanish Rice

I got this recipe when I was watching the cooking show called "Let's Cook Together" on 3ABN tv channel. It is healthy and very easy to make. Thought some of you out there might llike it too. Even if your aren't a vegetarian (and I am not totally either) it is good recipe and tastes good. I added the green pepper, celery and green chilies to the recipe as my family likes those things in pretty much anything I cook. But if you don't like any or all of them, you can omit them because they weren't in the original recipe. Prep time did not include cooking the brown rice beforehand. -- posted by OceanLuvinGranny

Cauliflower, Rice & Swiss Cheese Casserole

This delicious, vegetarian casserole is only slightly changed from Mollie Katzen's "Cauliflower Maranca" (Moosewood Cookbook).
This is a favorite in our family. It's super easy to make. It's healthy. AND it travels well when you have to fit a meal into a night of sports or other kids' activities. We wrap these in foil, individually. Warm in the oven at 300F, then put into a small cooler (no ice, of course) to keep hot until ready to eat.
Best Brown Rice Meal

When I was a kid my dad came home form work one day and told my mom we weren't going to eat red meat anymore. This coming from a meat and potatoes type of guy was quite surprising to say the least. At that time my mom switched from white rice to brown as she feared we would need an extra nutrient boost. That change didn't make me to happy...brown rice was not at the top of my favorites list. So one day we jazzed it up a bit. Hope you like what we came up with. My family does. (Note: We eat this as a main dish, not a side that is why the serving size is more then a 1/2 cup) -- posted by Chef Buggsy Mate

Rice Stuffed Sunburst / Patty Pan Summer Squash

Recently they have been selling some pretty large patty pan squash at the farmers' market, much larger than the little baby ones you often see roasted or grilled. I didn't want to just cut them up like regular squash so I searched around and found quite a few recipes for stuffed versions, baked in the oven. Didn't find one with rice though. This started as a recipe on about.com, but morphed as I have made it a few times, into what it is now. This only makes 4 squash, but you could easily double. You could make this a very substantial main course for a vegetarian if you added some protein. Note that the amount of rice is actually more than you'll need, by about 1/3 of a cup, we all really like the rice though so it's nice to have extra. In fact we like the rice so much I have doubled up that part of the recipe and used it for another meal. All depending on what you're serving this with, you could easily adjust the flavours, (ie I'm thinking feta, lemon & marjoram to go with greek). This is a small enough side dish that I can cook it in my toaster oven. Next is to try it on the BBQ. Hope you like it! -- posted by magpie diner

Note: My friend recommened you start with 1 tsp sesame oil and add more to taste. Also- don't even think of trying to subsitute any other vinegar for the rice wine vinegar :0) -- posted by kda949
