Rice Balls

This is from Jessica Seinfeld's Deceptively Delicious Cookbook. I have not tried this one, but am posting recipes upon request. The author indicates that the chicken can be left out of the recipe for a vegetarian option. -- posted by gourmetmomma

Nick's Famous Fluffy Rice and Chicken Casserole

It was my fault for not taking the package of chicken out of the freezer in the morning before I went to work and THEN at 4:30 actually thinking, "this will get done in time for supper." Still, dinner would've turned out well (delicious, even) if only a certain "someone" (who shall remain nameless, except for the recipe title!) could've waited another half-hour for the meat to cook through and the rice to get fluffy. Instead, that long-ago dinner was a concoction of bloody-bone chicken and molar-tingling crunchy-hard rice in a soupy mess. Now...if THIS description doesn't inspire you, I don't know WHAT will!? .......Honestly, this is a very wonderful comfort food recipe.....just don't start with completely frozen chicken and think that it will be done in the one-hour baking! -- posted by Debber

Loaded Mexicali Chicken

Subscribed to one of those recipe card subscriptions when we first got married--back in 1978. This recipe has been a family favorite for years now. We whip up a batch of long-grain brown rice and use the sauce from the chicken for a "gravy" (Mexican rice!). Leftovers are even BETTER than the first-runs! -- posted by Debber

Chicken & Rice for the Slow Cooker

A easy to throw together in the morning, ready when you get home meal. I use chicken thighs instead of breasts because they tend to stay moist and do not get overcooked & dry if you come home later than planned. I call for brown rice, but am planning to try wild rice. I would not use white rice, as it may get too mushy. -- posted by Chandra M

Curried Chicken With Rice

This one comes from my newlywed days when I received a whole set of illustrated recipe cards. I tweaked it to suit our tastes into a very flavorsome and aromatic meal! The rice cooks in the microwave while the chicken works in the frying pan; why--dinner will be ready before you know it--altho' you WILL have to listen to LOTS of begging (as in, "What are you making that smells so good?" and "Are we ever going to eat?"). -- posted by Debber

Tulum-Style Hand Held Burritos

A Mexican restaurant called Tulum near us fills its hungry college clientele with hearty, inexpensive and portable concoctions. My home-based version can be adapted to mood and handy ingredients. There's a wonderful variety of fully-cooked link sausages these days, from screamin' chorizo to spinach and feta to pedestrian old Cheddarwurst.
Amy's Chicken Divan Casserole

I love putting chicken divan together in one, simple and delicious casserole. The flavors are mildly distinct, yet maintain a fresh, light flavor. My mother always made this from scratch, and there's no other way to get that rich, full flavor. I make this more fiber/calorie-friendly by substituting white whole-wheat flour, fat-free and low sodium chicken broth, and fat-free half-and-half. Feel free to adjust the lemon juice, sherry or parmesan cheese to your liking. Serve with caesar or tossed salad. Enjoy! -- posted by Amy Dyke

Jamaican Beans and Rice

The idea for this recipe came from the book Nourishing Traditions by Sally Fallon and Mary Enig. The way I make it these days, however, is not much like the recipe in the book :)

This is a really tasty, very filling, "meal in a bowl" type recipe. It has all the creamy, starchy goodness of macaroni and cheese but with no dairy!

Coconut milk provides vital medium chain fatty acids and beneficial saturated fats to your diet, as well as tasting absolutely delicious.

3 cups of liquid to 1 1/2 cups of rice will make a risotto like consistency. If you want a bit more sauce increase the liquid to 3 1/2 cups total. -- posted by Alyss05

Mango Chutney Chicken Salad

There are a few of these up, but this one is a little bit different - and there is no curry in it. It's actually a little bit healthy - and of course you can make alterations to make it even more so. I'm curious to know what this would taste like with chickpeas instead of chicken...DO use the brown rice. It will NOT be the same with white.I'm kind of guessing about the yield. It makes a lot, I know that! It's great with crackers or on a nice bed of greens.

Cooking time does NOT include chilling (although I just ate some while it was still warm...still tastes great) -- posted by Georgiapea

Chicken Creole - Canadian Style

An tasty meal, with a slight bit of heat, that's easy to prepare. Perfect for company or just the family. Serve over brown or wild rice.
**Tip - when cooking with wine, always use one you'd be happy to drink. For this recipe, I like to use a Pinot Grigio. I prefer the Italian Pinots but if you want to use a Canadian one, Sonora Ranch from British Columbia makes a good one. -- posted by Beautiful BC

Turkey Stew

Excellent use of leftover Thanksgiving turkey meat. Like many people, I have spent countless hours searching for unique and appealing ways to serve left-over turkey for the several days that followed our huge Thanskgiving feast. After trying several different soups and stews, my husband and I combined all the things we liked best about our favorite recipes and came up with this wonderful turkey stew recipe. It's our favorite, and the only turkey stew that we even eat anymore. -- posted by NorthwestGal

Rice and Honey Pork Chops

A fabulous dish I made one night. I am helping to take care of my grandmother and she has mentioned that she feels like she gets the same meals all the time so I decided to try something new. I reached for one of her old cookbooks (Pillsbury Kitchens' Cookbook, Copy. 1979) and found something to make with what I had available in the house, tweaking it a bit.
The rice is divine with a tart but sweet flavor and the pork chops come out practically falling apart, I used boneless chops from the loin. I ommited the raisins and sherry but would welcome any feedback from those of you that decide to use them. -- posted by Sweets Princess

Yes, I have been in the kitchen making fried rice again! Fried rice is one of my favorites.
This recipe is out of a cookbook called eating well, healthy in a hurry. I love how simple this recipe is to make. It is great on a cold night and so healthy! I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce. I do not know the proper name for it since it is in another language. -- posted by cali~jenn

Sweet & Sour Chicken With Brown Rice

From Eating Well.Com. I got a wok for Christmas and can't wait to try some healthy stir frys.
TIP: Ingredient note: Chicken tenders, virtually fat-free, are a strip of rib meat typically found attached to the underside of the chicken breast, but they can also be purchased separately. Four 1-ounce tenders will yield a 3-ounce cooked portion. Tenders are perfect for quick stir-fries, chicken satay or kid-friendly breaded “chicken fingers.”

A serving is equal to 1 1/2 cups stir fry and 1/2 cup brown rice. A serving is about 450 calories. -- posted by seesko

Bento -- Teriyaki Chicken in a Hurry

This is a quick work night dinner we throw together when we are busy. Tasty and healthy, but best of all, my family will eat it! :) I usually grab a mixed fresh bag of broccoli, cauliflower and carrots when time is short and steam it 3/4 of the way through the rice ( times depend on your individual steamer - mine takes 50 minutes for long grain brown rice so I time the rest of mel accordingly). Brown rice is definitely a heathy choice, a little nutty or firmer in texture, but give them this flavorful dish and they will gulp down the rice and those dreaded veggies! **Kikkoman Teriyaki Baste and Glaze with Honey and Pineapple** is what gives this recipe the ease and flavor. -- posted by Mommy Diva

Mushroom Chicken over Rice

I first saw this recipe in a Good House Keeping Cooking Book years ago. And it has turned into one of my families favorite.

This is a great recipe as you can use just the number of breast you need or add more without having to add more other ingredients.

Follow Rice package instructions for prep on rice. Is good over white or brown.

I usually use milk, at least 1/4 cup as I don't often have cream on hand but the cream does make it scrumptious. We usually use more mushrooms because we love the mushrooms. You can sub canned mushrooms but they don't add as nice a flavor to the finished dish. Try Beef Broth for a heartier taste as well.

If you follow the recipe exactly in preparation it will come out perfect everytime. Even if the gravy starts out lumpy! -- posted by LyndaV

I think this could easily be made into a OAMC meal either cooked and frozen, or made as a "dump" meal. -- posted by Amy in Kansas

Brown Rice With Andouille, Corn, and Red Peppers

Raised in a Filipino household, I never knew there was such a thing as brown rice - brown? REALLY? - until I was married and on my own. I still love jasmine rice - but I really like that chewy, nutty thing going on with brown rice, too. This recipe is from Cook's Illustrated. -- posted by Sweet Jezebel

Chicken Casserole for Dogs

This is a simple, yet nutritious meal for dogs and puppies that is easily digested and provides an excellent and natural source of antioxidants, essential vitamins and oils, fiber, proteins and carbohydrates. All the ingredients are recommended by vets as natural sources of nutrition, if prepared correctly, and can serve as one of many recipes in replacing store bought dog foods all-out.

NOTE: For puppies, you should take extra care to steam the vegetables longer to make them as soft as possible and easier to digest. If you can see pieces of vegetables in your puppies stool then you should consider steaming your vegetables longer. I would recommend taking this precaution regardless of the dog's size or age. -- posted by Chef #1331983

Fee's Special Kitty Cat Renal/Kidney/Diabetes Diet

My cat, Fee, is 22 years old(!), blind and has kidney disease, but his quality of life is still great thanks to daily subcutaneous fluids, a special diet, and daily supplements that lower his BUN and creatinine. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him.

Diabetics need fiber and kidney kitties need to limit protein. The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy! Time estimate includes the mixing of all ingredients, cooked and otherwise, and the final quick cook of the mixture that includes the eggs. -- posted by Sandi (From CA)

Curried Rice With Turkey and Edamame

A good fusion home for leftover turkey, dried fruit & water chestnuts that is healthy & tastes great. Adapted from A Taste of Thai. They called for a package of their Yellow Curry Rice and I changed to use what we have on hand (big tub o' Mae Ploy yellow curry paste & brown rice LOL). That also includes substituting a handful of sultanas or fresh cranberries for the dried cranberries as needed. We have also added chopped lightly blanched bok choy to really make it a one dish meal. -- posted by Buster's friend

I combined a few recipes into one. I first made this after Thanksgiving just to use up the turkey bones. -- posted by RochelleS

Mommom Faiella's Italian Sausage Scallopini

The aroma of the herbs and mushrooms cooking on the stove will be very pleasant to your senses. This is almost straight out of my grandmother's recipe book. The only changes my mother made to this recipe were to substitute canned mushrooms with fresh mushrooms and to add a bit more seasonings. -- posted by The Foodgitive
