Creamy Low Fat Chicken and Brown Rice

I find this recipe to be very flavorful and easy to prepare. My Littles always like it. I use a low sodium chicken broth and low fat cream of mushroom soup. The rice comes out very creamy and the chicken is always tender and delicious. Great hearty meal for fall, or anytime. -- posted by Jcooks4HisLittles

Low-Fat Japanese Chicken-Scallion Rice Bowl

This recipe is out of a cookbook called eating well, healthy in a hurry. I love how simple this recipe is to make. It is great on a cold night and so healthy! I double the sauce to make it more like a soup since I love egg flower soup and this reminds me of it. I also omit the sugar, it is good without. I have only made this with white wine since i have no reason to buy mirin aside from this recipe and it turns out great. for a spicy kick, my husband likes to top this off with that hot rooster sauce. I do not know the proper name for it since it is in another language. -- posted by cali~jenn

Sweet & Sour Chicken With Brown Rice

From Eating Well.Com. I got a wok for Christmas and can't wait to try some healthy stir frys.
TIP: Ingredient note: Chicken tenders, virtually fat-free, are a strip of rib meat typically found attached to the underside of the chicken breast, but they can also be purchased separately. Four 1-ounce tenders will yield a 3-ounce cooked portion. Tenders are perfect for quick stir-fries, chicken satay or kid-friendly breaded “chicken fingers.”

A serving is equal to 1 1/2 cups stir fry and 1/2 cup brown rice. A serving is about 450 calories. -- posted by seesko

Bento -- Teriyaki Chicken in a Hurry

This is a quick work night dinner we throw together when we are busy. Tasty and healthy, but best of all, my family will eat it! :) I usually grab a mixed fresh bag of broccoli, cauliflower and carrots when time is short and steam it 3/4 of the way through the rice ( times depend on your individual steamer - mine takes 50 minutes for long grain brown rice so I time the rest of mel accordingly). Brown rice is definitely a heathy choice, a little nutty or firmer in texture, but give them this flavorful dish and they will gulp down the rice and those dreaded veggies! **Kikkoman Teriyaki Baste and Glaze with Honey and Pineapple** is what gives this recipe the ease and flavor. -- posted by Mommy Diva

Tofu Zucchini Patties

These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences. -- posted by bluemoon downunder

Spanish Rice

I got this recipe when I was watching the cooking show called "Let's Cook Together" on 3ABN tv channel. It is healthy and very easy to make. Thought some of you out there might llike it too. Even if your aren't a vegetarian (and I am not totally either) it is good recipe and tastes good. I added the green pepper, celery and green chilies to the recipe as my family likes those things in pretty much anything I cook. But if you don't like any or all of them, you can omit them because they weren't in the original recipe. Prep time did not include cooking the brown rice beforehand. -- posted by OceanLuvinGranny

Black Beans and Rice

This spicy recipe tastes so good, it's hard to believe it's healthy. It's convenient as a one-pot meal, but a cooling side dish such as fresh sliced mango or a cucumber salad would be good too. I use red pepper flakes because I don't like the acidity of fresh; instructions are included for fresh red pepper if you prefer. You can also replace the chicken broth with vegetable broth for a vegetarian meal. -- posted by Danya01

Brown Fried Rice - Five Treasure

The sky is the limit when it comes to preparing fried rice. With this recipe we use brown rice and a little canola oil to make it healthier and 5 different types of vegetables. It's important the brown rice is well chilled so the starch hardens and makes it fry-able. If you use fresh rice you will have a gummy mess. Using ginger, scallions and garlic helps boost the flavour or you could even add some sesame oil or chile peppers. You could substitute the canola for sesame oil to add more flavour. Change any of the vegetables to asparagus; zucchini, peas, mushrooms, bok choy, bean spouts, jicama and even fruit such as mandarin oranges or pineapple.. To make it more of a meal I would add protein like chicken, shrimp, ham or even tofu...but then it wouldn't be Five Treasure now. Cooking time includes cooking the rice and chilling it. To speed the process up at dinner time, prepare the rice and chopped veggies the day before. This recipe came from Fine Cooking. -- posted by heather in Ont,

Laura's Easy Kitchen-Sink Rice Salad

This salad works for main meals, especially with the addition of cold chopped chicken and/or cheese. It's a fantastic potluck dish. Lastly, it's a diabetic friendly salad because the whole grain brown rice and other vegetables are very high in fiber.

How it came about: I love salads, but I noticed a while ago that what I really loved was the stuff that dressed the salad. I also get very bored with lettuce, even my favorite, bronze or red leaf lettuce. I also wanted to make something that was a one-pot meal, not necessarily hot, reasonably high in protein, sustaining, and tasty. Lastly, I had been invited to a potluck dinner, had signed up to bring a salad, and had no lettuce available -- but I did have brown rice. Maybe that would work -- and it did! This is the one recipe I bring to potlucks that is always, always gone before I can go back for seconds, so I usually save a small bowl at home for myself. I hope you like it, too!

I have made this successfully using regular brown rice, instant brown rice, quick brown rice, and brown rice blends that included wild rice and other grains. The great thing about the recipe is that it is completely forgiving -- you can adjust amounts, add and delete items, and change seasoning to your taste and whatever you have one hand -- as long as you always use brown rice as the base. -- posted by ohbother

Best Brown Rice Meal

When I was a kid my dad came home form work one day and told my mom we weren't going to eat red meat anymore. This coming from a meat and potatoes type of guy was quite surprising to say the least. At that time my mom switched from white rice to brown as she feared we would need an extra nutrient boost. That change didn't make me to happy...brown rice was not at the top of my favorites list. So one day we jazzed it up a bit. Hope you like what we came up with. My family does. (Note: We eat this as a main dish, not a side that is why the serving size is more then a 1/2 cup) -- posted by Chef Buggsy Mate

Chicken Casserole for Dogs

This is a simple, yet nutritious meal for dogs and puppies that is easily digested and provides an excellent and natural source of antioxidants, essential vitamins and oils, fiber, proteins and carbohydrates. All the ingredients are recommended by vets as natural sources of nutrition, if prepared correctly, and can serve as one of many recipes in replacing store bought dog foods all-out.

NOTE: For puppies, you should take extra care to steam the vegetables longer to make them as soft as possible and easier to digest. If you can see pieces of vegetables in your puppies stool then you should consider steaming your vegetables longer. I would recommend taking this precaution regardless of the dog's size or age. -- posted by Chef #1331983

Is also a good vegetarian dish; almost any steam-able veggie can be added.
Pineapple with juice can be added for sweetness.

This was in the latest Kraft Foods recipe magazine. I am looking for gluten free, dairy free, garlic and onion free recipes and this was pretty close. I just added salt and left out the garlic powder. I also used precooked brown rice. I had cooked 2 dry cups of rice and added it all in with the broth. Turned out pretty good.
Asian Peanuts and Rice

This recipe is something I made up when I accidentally purchased raw peanuts. It's quite healthy, and can be vegetarian/vegan if you skip the oyster sauce. You can change the vegetables if you like, or use any type of rice or even grain like quinoa. I prefer short grain brown rice for this dish. If you want to increase protein, add some firm tofu, or maybe even lentils. -- posted by Chef #1387539

Fee's Special Kitty Cat Renal/Kidney/Diabetes Diet

My cat, Fee, is 22 years old(!), blind and has kidney disease, but his quality of life is still great thanks to daily subcutaneous fluids, a special diet, and daily supplements that lower his BUN and creatinine. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him.

Diabetics need fiber and kidney kitties need to limit protein. The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy! Time estimate includes the mixing of all ingredients, cooked and otherwise, and the final quick cook of the mixture that includes the eggs. -- posted by Sandi (From CA)

Vegetarian Brown Rice Casserole

Vegetarian main dishes often require hours of chopping and cooking, and a laundry list of ingredients – but not in this dish. This easy casserole turns a can of vegetarian lentil soup into a hearty casserole with the help of nutritious, ready-to-serve whole-grain brown rice, canned vegetables, and cheddar cheese. Because all of the ingredients go into the casserole already cooked (canned vegetables are simply cooked vegetables in a can), all they need is a few minutes in a microwave before they are delightfully done and ready to serve. -- posted by Chef #1365024

Mommom Faiella's Italian Sausage Scallopini

The aroma of the herbs and mushrooms cooking on the stove will be very pleasant to your senses. This is almost straight out of my grandmother's recipe book.
Mother's Always Right Stuffed Peppers

I had to use the broken peppers and cut them in half, laying the filling on the top. -- posted by The Foodgitive
