Lunchbox Peanut Butter Brownies

Peanut butter + chocolate = delicious! From America's Test Kitchen, these are a variation on their basic "lunchbox brownie." Dense and rich and peanut-buttery. This makes a small pan (8x8) so it will be gone quickly. :) -- posted by appleydapply

Vegan Cherry-Chocolate-Oat Chippers

These cookies have come a long way. From my mom's stained old copy of Company's Coming "Kids Cooking", now they're an ubiquitous, veganized family favorite.
Swag Bars (Chocolate & Peanut Butter Bars)

This recipe was in the Jan/Feb 2009 issue of Cooking Light magazine. It was in their "Lighten Up" section - where a reader can submit a favorite recipe and COoking Light will make it healthier. This was very tasty and the kids LOVED them. Next time I might try and sub honey or brown rice syrup for the HFCS. I also increased the chocolate a teeny bit and spread it over the bars instead of drizzling it. -- posted by dukeswalker

Chocolate and Cherry Brownies

These heavenly brownies are quick, easy and totally indulgent. They are perfect at tea-time or equally delicious served with crème fraîche as a treat after lunch or dinner with friends. Make sure you use the correct size baking or roasting tin and take care not to overcook them. As a rule, when you start to smell them they are usually close to being done: you are better off removing them too soon and putting them back, which does them no harm at all! Try adding nuts or other dried fruits as an alternative to the cherries, or make plain chocolate brownies without any extras at all. -- posted by English_Rose

Chocolate Peanut Butter Blondies

Chocolate-y peanut-buttery goodness! These bar cookies will definitely satisfy your sweet tooth! I found this recipe in America's Test Kitchen's Family Baking Book. I wanted to make their Recipe #343983 but didn't have unsweetened chocolate on hand, so I decided to try something else for my chocolate-peanut butter fix. The Test Kitchen suggests letting the blondies cool for 2 hours before removing from the pan. Ha ha - as if anybody could wait that long! They are also most delicious when slightly warm. So I wait only 1 hour, just enough time for them to cool and firm up a bit before removing from the pan. -- posted by appleydapply

Banana Brownies

These came from the Golden Book of Chocolate, published by apple.
Unlike other brownie recipes these aren't extremely sweet, but still have a strong flavour of banana and cocoa. They have a good consistency, not too heavy so are very easy to snack on. I make them in bite-sized muffin cases because they're great for packed lunches. -- posted by Giggling

Grandma Georgia’s Molasses Cookies

Passover Almond Thumbprint Cookies

These delicate little almond cookies, from "Gourmet" (April 2006), are really delicious. They don't taste like Passover cookies and are good enough to eat year-round. The contrast between the crisp cookie and gooey-sweet jam is pretty addictive; you may want to double the recipe. You can substitute a whole almond for the jam, if you prefer. If you like marzipan, you'll love these! And they are quick to whip up.
Black Forest Chocolate Chip & Cherry Cookies

An excellent cookie for chocolate and cherry lovers alike. As you may know, the appellation 'Black Forest' does in fact refer to a forest of that name found in Germany, where the Black Forest Gateau was believed to have originated. Since then chefs have used their imagination to apply the combination of chocolate and tart cherries, customarily soaked in Kirschwasser (also credited to that region, where tart morello cherries grow) to a number of different desserts and delicacies. That being said, this delicious cookie is very adaptable to suit different tastes. It can be made without the chocolate (just add an extra 1/2 cup or so of cherries), extra chocolatey (add 2/3 cup unsw cocoa powder to the batter with the flour), kid friendly (soak the cherries in juice or a simply syrup), or easily halved. These cookies are very moist and chewy, which I love, but if you prefer crunchier cookies you may want to use a different batter base. This recipe is adapted from Dede Wilson's "Chocolate Chip Cookies". Cook time includes chill time.
Greeny's Chewy Chocolate Chip Cookies

I will admit, this is similar to both the Hershey's and the Ghirardelli cookie recipes - the back of the chip bags are my best sources of inspiration. :) However, I live at high altitude, so I have changed it up a bit for that and for my family/our friends' tastes. I find that they never flatten (once out of the oven) and they stay chewy for several days. They also freeze well. My store-bought chocolate chip cookie-loving nephew even asked if I could make more of these once they had all been eaten. That was awesome. I have substituted Splenda for half of the granulated sugar portion, and it works well, but I think any more than that would compromise the texture too much. -- posted by Greeny4444

I found this recipe in a magazine i got in a pharmacy in Örebro, Sweden called "Apoteket". I reminds me of our great holiday me and DH had in summer 2009.
Note: You can use 1 cup chopped walnuts only or use a mixture of other nuts and/or seeds. I also like pumpkin seeds or sunflourseeds or a combination.
Note#2: You can substitute butter and eggs by 1 cup of whey and a dash of milk for a super healthy but though delightful version. -- posted by Iceland

Bake Sale Time: Rice Krispies W/ Malted Milk Ball Bars

Here's one to add to your bake sale repertoire--and they'll be just enough different [but still the same thing] to get the kids curious, and good enough that they'll sell like "hot cakes!" Save a couple for the home-folks, because you won't be bringing any home when you take these to the potluck or family reunion picnic! I use two bowls (recycle the first one) so I have everything ready to pour and mix--goes much quicker and no wasting time to measure when the stuff is hot!
Yum Yum Yo Yo Biscuits

Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes. -- posted by bluemoon downunder

NOT for those who don't like lemons but for the rest of the world, great for lunch boxes, picnics or potlucks! Another recipe I've adapted from one I found on the Simply Great Meals website. The conversions you may need: 125g = 4oz; 400g = just under 13oz; 250g = 8oz. Marie biscuits are a plain sweet biscuit. You could also use Granita biscuits or shortbreads.
Dark Chocolate and Sangiovese Pear Brownies

This yummy and super-rich chocolate brownie recipe has been adapted from a recipe by Maggie Beer, a revered Australian chef and author of many cookbooks. If Sangiovese Verjuice is not available use any Verjuice; and you could use glacé cumquat, ginger - or whatever glacé fruit you like instead of the pear - and you could use a mixture of fruit and nuts. I'd recommend macadamia nuts. Some conversions: 300g = approximately 91/2 ounces; 250g = 8 ounces; 60g = 2 ounces; 40g = 11/3 ounces. For the BEST results, do use top quality chocolate, such as Lindt 70% cocoa. Recently, I tried some German chocolate that was 85% cocoa... that was probably too rich and too bitter for most tastes, so rich in fact that you'd find that much as they enjoyed it people wouldn't be coming back for a second and third brownie - so your brownies would last longer! -- posted by bluemoon downunder

London's Borough Market Chocolate Brownies

Borough market brownie-maker Matt Jones shared his infamous dense chocolate brownie recipe on BBC Good Food, and I am posting it here for safe-keeping! For anyone who has tasted one of these brownies, the experience is sublime.......deep, intense and chewy brownies that are packed full of lucious chocolate! Borough Market is London's oldest food market, its origins date back from the time when the Romans built the original London Bridge. And, although it has moved from where it was originally established, Borough Market has occupied its current site for the last 250 years. You can find both food and non-food items in this market, but locals regularly go here to get fresh produce from various parts of the British Isles. One of the most popular foodie treats in the market, is the ostrich burger, as well as these delicious brownies. Makes 12 LARGE squidgy brownies. -- posted by French Tart

This is my favorite chocolate chip cookie recipe. The New York Times did a big article on the perfect chocolate chip cookie, interviewing and sampling several famous chocolate chip cookies at various bakeries. Several tests were done; larger cookies (such as six-inch affairs) scored better, as did letting the dough age for 24 or even 36 hours (up to 72 hours). A small sprinkle of sea salt was also recommended. I usually make 3 huge cookies and divide the rest of the dough in half, wrapping it in saran wrap. Also, I've cheated a bit at this recipe and used plain flour instead of the two types of flour, as well as neglected sifting the flour. I don't have a paddle attachment on my mixer. I also usually use chocolate chips. You still achieve the very special taste, but the presentation is nicer when you follow the recipe exactly.
Caramel Crumb Bars

This is an easy and delicious bar recipe with a light and flaky shortbread crust, a creamy caramel filling, and a crumb topping. The recipe is from the wonderful cookbook, "The Modern Baker," by Nick Malgieri and was chosen Top Cookie Recipe of 2008 by the Washington Post. It's Malgieri's favourite recipe in the book and it might just become yours too! Save the wrappers from the softened butter sticks to grease the parchment. Note that the flour measurement calls for it to be spooned into the cup and leveled off--this will give you a different amount of flour in the cup than the dip and sweep method and noticeably effect the texture of the crust.
MAKE AHEAD: Store in an airtight container at room temperature if you are serving them within a day. Or wrap and freeze for up to 2 months, making sure to bring the bars to room temperature before serving. -- posted by blucoat

Light & Flaky Cinnamon Rugelach

The ingredients might look the same as other recipes, but the technique is unique and the "secret" ingredient won Tina Wasserman's reputation as a baker and is now one of her most sought-after recipes. (Tina is a well-known Dallas cookbook author, chef, food columnist, and cooking instructor.)
The mixing technique of the mixer allows the cream cheese and butter to really combine and become light and airy. This results in a flaky, crisp, but tender, finished product.
The vigorous beating of the butter and cream cheese before adding the flour creates a light, layered dough similar to puff pastry. Rolling the dough in confectioners' sugar to give a slight glaze to the finished pastry and helps balance the richness of the dough with the sweet filling. Make sure the dough is well chilled or it will not roll out properly.
*NOTE: In general, it is not a good idea to use salted butter in baked goods. However, because of the lack of liquid in rugelach dough, salted butter is the only way to get the salt evenly distributed. (The addition of a little salt is important to the flavor.) -- posted by blucoat

Whole Wheat Applesauce Cookies

My favorite cookie recipe! These are moist, chewy and delicious. Because most of the sweetness and the moisture comes from the applesauce rather than fat or sugar, not to mention the whole-wheat flour, I don't feel guilty about sneaking one or two of these for breakfast! -- posted by CorianneW

Coconut, Cranberry, White Chocolate Oatmeal Cookies

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard. -- posted by Linh #2
