Oxford Sausage

These are succulent and meaty, well-flavoured with herbs and lemon. They are shaped by hands before cooking and do not have skins. They remind me of the sausage my mother bought from the local butcher when I was a kid. These keep very well in the fridge or freezer and can be reheated quickly. -- posted by Mille® ™

Sinus-Clearing Sausage

No doctor's prescription needed! Chef’s Incredible Tip: After you thoroughly wash and rinse the sausage casings, soak them in pineapple juice for 24-36 hours (in the fridge) and then rinse them again prior to stuffing them. This process softens the casings and makes them much more tender and palatable! To stuff the casings, you will need a meat grinder with a sausage horn attachment. If you don't have such a device, use the mixture to make fried patties by shaping 1/4 cup of filling into a 1/2 inch thick patty and frying in hot oil until golden brown on both sides. -- posted by Mille® ™

Apple Turkey Fingers (For Older Infants & Toddlers)

Inspired by the classic (and kid-friendly) combo of apples & turkey, I concocted these tonight for my 9 month old and liked them so much I might end up eating them myself! Perfect for older babies and toddlers (serve with a fun dipping sauce), these make cute little "fingers" in perfect take-one-out-of-the-freezer-at-a-time portions. I used half an egg (if your child is over 12 mos. you can use more - I limited the egg white for infants) and unprocessed bran (for a nutritional boost) for binding. Enjoy, babies and grown-ups alike! -- posted by Kishka

Drunken French Country Chicken Au Gratin

An easy and delicious chicken dish with a few elegant touches here and there! The chicken is jointed (cut into pieces), sauteed and then grilled like a potato gratin in a sauce of cognac, wine, mustard and cheese. Serve this with a crisp fresh salad and pasta, or with seasonal steamed vegetables and rice. You can omit the cognac and wine and use apple juice if you wish - the taste will not be as sophisticated, deep or intense, but the chicken could be served to children this way! An ideal dinner party recipe or Valentine's day meal for two - just reduce the ingredients, or make the full amount and freeze the remaining portions. Recommended wine: Saumur Champigny. -- posted by French Tart

Gnocchi & Tomato Bake (With Freezing Instructions)

This sounds good for anybody looking for a quick and tasty meal. It is vegetarian too which is always great in my books. I originally found this recipe in the September 2008 copy of the BBC Good Food Magazine. The recipe states that the dish can be frozen for up to a month. It says to just defrost and bake in a medium oven for 20 - 30 minutes until piping hot. -- posted by Sarah_Jayne

Healthy Low-Fat Blueberry (Or Chocolate) Oatmeal Muffins

These are delicious, chewy muffins that burst with blueberries! Very wholesome, healthy, and low-fat! Mmmm! Note: cutting out the small amount of oil in the recipe will alter the texture. -- posted by I Can't Believe It's Healthy
